2 cups prepared vegetable broth
1/2 cup ketchup
2 tablespoons tamari or 2 tablespoons soy sauce
2 cups dry textured vegetable protein, granules
1 cup quick oats or 1 cup breadcrumbs
1/4 cup ground flax seeds or 1/4 cup chia seeds
1 tablespoon nutritional yeast
1 teaspoon garlic granules
1 teaspoon onion powder
1 teaspoon oregano
1 teaspoon basil

Steps:

  • 1.) Preheat oven to 375 degrees.
  • 2.) In medium bowl, combine prepared broth, ketchup, tamari and TVP. Mix to combine and let stand 10 minutes until the liquid is absorbed.
  • 3.) Add remaining ingredients, except topping. Mix well.
  • 4.) Pack mixture into a 9 x 5 loaf pan or a glass casserole. (Many people making this suggest just forming into a loaf on a baking sheet.) Bake 40-45 minutes.
  • 5.) If using topping, spread on loaf during the last 10 minutes of baking.

PEAR-CRANBERRY PIE WITH FAUX LATTICE

Unbleached all-purpose flour, for dusting
Pate Brisee for Spiced Apple Pie
5 ripe Bartlett pears (2 1/2 pounds; Bosc or Anjou can be substituted)
6 2/3 cups (24 ounces) fresh or frozen cranberries
1 cup packed dark-brown sugar
3 tablespoons cornstarch
1 1/2 teaspoons kosher salt
1 vanilla bean, halved lengthwise
3 tablespoons cold unsalted butter, cut into small pieces
1 large egg yolk
1 tablespoon heavy cream
1/2 cup apricot preserves

Steps:

  • On a lightly floured work surface, roll 1 disk of dough to 1/8 inch thick. Fit into a 9-inch deep-dish pie plate. Trim edges flush with rim. Refrigerate for 1 hour.
  • On a piece of lightly floured parchment paper, roll out remaining disk of dough to 1/8 inch thick. Top with an inverted 9-inch pie plate or a cake ring, and gently press to make a light indentation (this will be your guide for cutting the lattice to fit the pie). Using a 3/4-inch square cutter, cut a lattice pattern out of the round, leaving at least 1/2 inch between cutouts and edge of round. Transfer squares to a parchment-lined baking sheet. To make partial squares where the lattice meets the rounded edge, make a very light indentation with the cutter, then cut out the portion of the square that is inside the round with a knife. Using a paring knife or a pizza cutter, cut out the round, leaving an additional 1/2 inch of dough beyond the marked circle. Reroll scraps, and cut out as many additional squares as possible. Transfer parchment with the lattice top to a baking sheet. Refrigerate lattice top and squares for 1 hour.
  • Preheat oven to 375 degrees, with racks in middle and lower positions. Peel, halve, and core pears. Very thinly slice 3 pears lengthwise, and cut remaining 2 pears into 8 wedges each.
  • Toss together pears, cranberries, sugar, cornstarch, and salt in a large bowl. Using the tip of a paring knife, scrape vanilla seeds over pear mixture, and toss until seeds have been evenly incorporated. Pour filling into piecrust, gently pressing to make it as level as possible. Dot filling with butter.
  • To make egg wash, whisk together egg yolk and cream in a small bowl. Lightly brush edge of piecrust with egg wash. Remove lattice crust and squares from refrigerator. Gently place another baking sheet on top of lattice, and carefully invert. Slide lattice on top of filling, and remove parchment. Gently press edges of crust to seal, trimming edges of lattice if necessary.
  • Lightly brush lattice with egg wash. Arrange dough squares around edge of pie, overlapping them slightly. Lightly brush top of each square with egg wash as you work to help them adhere.
  • Place a foil-lined baking sheet on lower oven rack to catch any juices. Place pie on middle rack, and bake until crust is golden brown and juices are bubbling gently, 90 to 100 minutes. Tent with foil if crust browns too quickly. Let pie cool on a wire rack for 5 minutes.
  • Meanwhile, heat preserves in a saucepan over medium heat until warm. Puree in a food processor until smooth. Press through a fine sieve into a bowl or another saucepan, and reheat if necessary. Brush warm pie with a generous amount of warm apricot glaze. Let cool completely on rack.

1 1/2 lbs thick white fish such as haddock or 1 1/2 lbs halibut
1/2 cup dry white wine
1/2 teaspoon parsley
1/2 teaspoon salt
2 tablespoons grated onions
1/4 lb mushroom, sliced very thinly
6 tablespoons butter
1/4 lemon
2 cups milk
3 tablespoons flour
3/4 cup fine breadcrumbs
1/3 cup grated cheese, american,cheddar,jack,mozzarella most types will work

Steps:

  • Cut the fish into 1" chunks being careful to remove all bones.
  • Put the mushrooms in a small nonstick pan with 1 tbsp butter and the juice of 1/4 lemon.
  • Cover and simmer at low heat until tender.
  • Melt 3 tbsp butter in a pot and mix in the flour until smooth.
  • Add the milk and cream gradually, stirring each bit until smooth.
  • Cook until thickened.
  • Remove from heat.
  • Simmer the fish in the wine, parsley, onion and salt, until barely done.
  • Be careful not to break up or overcook.
  • Arrange the fish either in individual baking dishes, or a casserole.
  • Top with the mushrooms, and then the sauce.
  • Toss the breadcrumbs with 2 tbsp melted butter and mix with grated cheese.
  • Sprinkle evenly on top of sauce.
  • Heat 15 minutes in a 350F oven.
  • Brown under broiler for several minutes (if required) to brown.

FAUX PHO BO (VIETNAMESE BEEF NOODLE SOUP)

This is an easy version that starts with canned beef broth. Some of the ingredients may be hard for people in some parts of the world to find--I live in an area with a large Asian population so I've never had any trouble myself. Be careful when using the sriracha or sambal oelek, as they are very hot. Fish sauce, to the uninitiated, smells really awful--but it doesn't taste like it smells. Once you've added it to your soup, you won't smell it nearly so strongly and it adds a pleasant, salty, seafood-y flavor to your food.

4 quarts fat free low-sodium beef broth
1 large onion, sliced into paper-thin rings
6 slices peeled fresh gingerroot (about the size of quarters)
1 stalk lemongrass, cleaned, leaves removed (do not substitute lemon zest or juice(the flavor is not at all the same)
1 small piece cinnamon stick (I use broken pieces of stick cinnamon, about 1 tsp total)
1 teaspoon whole black peppercorn
1 lb beef sirloin tip, cut into very thin slices (ask the butcher to slice it paper thin(I like to buy beef for sukiyaki at the Oriental market)
1/2 lb fresh bean sprout, rinsed and drained
1 cup fresh Thai basil, rinsed and dried
1 cup fresh cilantro leaves, rinsed and dried (coriander)
2 limes, cut into wedges
1/2-1 lb flat rice noodles (I prefer noodles about 1/4 inch wide)
sambal oelek (optional) or sriracha sauce (optional)
thinly sliced serrano peppers (optional) or jalapeno chile (optional)
fish sauce (nam pla) (optional)
hoisin sauce (optional)

Steps:

  • In a 6 quart stockpot, combine broth, onion, ginger, lemongrass, cinnamon, and peppercorns (tie the seasonings loosely in cheesecloth for easier removal). Bring to a boil, reduce heat, cover, and simmer for 1 hour.
  • Meanwhile, prepare rice noodles and garnishes.
  • Arrange bean sprouts, basil, cilantro, chilies, and limes on a large platter.
  • To prepare rice noodles, bring 4-6 quarts of water to a boil. Add rice noodles and stir to separate. Cook until just barely tender, about 2-3 minutes. Drain well. If not quite ready to serve, rinse noodles and drain again.
  • To serve, remove seasonings (except onions) from broth; keep broth hot.
  • Place ½ cup rice noodles in each of 6 large, deep bowls.
  • Arrange thinly sliced beef over noodles, fanning out to increase surface area. Ladle very hot broth over beef and stir to cook.
  • Serve immediately. Pass garnish platter, hoisin sauce, fish sauce, and sambal oelek or sriracha sauce for people to add as desired.

FAUX CRAB CAKES (ZUCCHINI FRITTERS)

These are a vegetarian dream come true! It is remarkable how much these taste like crab cakes, particularly if patties are small and thin. Recipe is adapted from John Shields, chef/owner of Gertrude's, Baltimore, Md. and appears in the cookbook, "Cooking Fresh From the Mid-Atlantic", edited by Fran McManus & Wendy Rickard. Allow 30 minutes for the zucchini to drain.

2 cups coarsely grated zucchini
salt
1 cup breadcrumbs
1 egg, beaten
1 1/2 teaspoons Old Bay Seasoning
1 teaspoon Dijon mustard

1/2 lemon, juice of
1/4 cup chopped fresh parsley
vegetable oil, for frying

Steps:

  • Place grated zucchini in a colander; sprinkle lightly with salt. Let zucchini sit for about 30 minutes, allowing it to drain. Squeeze to remove additional liquid - zucchini should be fairly dry.
  • Place zucchini and bread crumbs in a large bowl and mix together.
  • Place egg, Old Bay, Dijon, mayo, lemon juice and parsley in a small bowl. Mix well.
  • Pour egg mixture into zucchini-bread crumb mixture, and mix gently and thoroughly. Form into 8 patties the size of crab cakes. Heat a small amount of oil in a saute pan, and cook patties on both sides, browning well.
  • Serve with tartar sauce, chopped capers, fresh basil and/or lemon wedges. Goes really well with halved sun gold or cherry tomatoes.

1 c whipping cream

  • 1. In a large bowl, combine all but the whipping cream. Stir well.
  • 2. Add unwhipped whipping cream.
  • 3. Beat with a mixer until it's stiff. It should have the texture of bowl margarine or softened butter. Store in refrigerator. (But there won't be any left to store!) I've never used anything but whipping cream for this recipe and also always use brand name of Philadelphia Cream Cheese. I tried the store brand once and it didn't taste as rich. I don't think cool whip would work with this recipe, either.

3 tablespoons minced garlic
2 tablespoons minced ginger

2 (14 ounce) cans low-sodium chicken stock
5 tablespoons fish sauce

1 (16 ounce) package rice noodles

Steps:

  • Soak rice noodles in very, hot tap water.
  • Heat oil in a large, deep skillet on medium hot.
  • Saute garlic, ginger, and red pepper flakes, with the beef until the beef is 85% cooked through. .
  • Add broth, fish sauce, spices and sugar.
  • Bring to a boil, then simmer for 10 minutes.
  • Rinse rice noodles and chop into 4-5 inch pieces.
  • Place noodles in bowls, pour broth and meat over noodles.
  • Add any or all garnish desired.
  • Personal Note: I like mine with super spicy so I add tons of jalapeno and siracha sauce, along with all the veggies and herbs. You can also do this with pork, fish, shrimp, or chicken, or use veggie stock and tofu if you want to keep it vegetarian.

Steps:

  • Mix all the sauce ingredients in a non-reactive sauce pan and simmer for 20~30min. Let cool and into your fridge for at least a day.
  • Mix all the ingredients together and store in an air tight container until needed. **If you are going to use this on ribs, chicken, pork, etc. try seasoning the meat with the actual dry rub before cooking then slather on the sauce.

SWEET BABY RAYS FAUX BBQ SAUCE

I had originally gotten the bases from a guy on here, but did a little research and as well some science in my kitchen and after a couple explosions I've finally critiqued and finalized what is told to be the best BBQ sauce!

1 cup(s) dark brown sugar
1/4 cup(s) molasses
1/8 cup(s) pineapple juice
1 teaspoon(s) hickory liquid smoke
2 1/2 teaspoon(s) ground mustard
2 teaspoon(s) paprika
1/2 teaspoon(s) garlic powder
1 pinch(es) cayenne pepper
1 1/2 teaspoon(s) salt
1 teaspoon(s) black pepper
TO THICKEN SAUCE
1 tablespoon(s) corn starch
1/8 cup(s) cold water

Steps:

  • Whisk all the ingredients in a medium sauce pan over medium heat. Once everything is mixed bring that pan to a boil. Once you have reached a consistent boil reduce heat & simmer for 5 mins or until the sugar is dissolved.
  • For a thicker sauce add the corn starch & water. Now from my experience with testing this out I've noticed the longer you boil after adding the corn starch and water the thicker it will get! You don't have to keep adding more cornstarch and water unless you fancy that! Once added bring to a boil and after a consistent boil simmer up to 15 mins or until desired thickness. Note while cooling the sauce thickens as well.
  • Serve Immediately, or cover and store in fridge. Note that there aren't any preservatives to help prolong the sauce so you can bottle it package it and put in the freezer, and when you want to use it at a latter time or day just simply remove and thaw in your fridge!

FAUX CHICKEN AND SHRIMP PHO

This is my quick version of chicken pho, which is a fragrant, hearty Vietnamese inspired soup that can be eaten any time of the year. The broth is made fragrant with spices, ginger, garlic and veggies, which you can choose to keep, or toss. The spices/ginger/garlic can be contained in cheesecloth, or a tea infuser. This can be made low carb by omitting the noodles.

10 cups chicken broth
1 onion, thinly sliced
1 1/4 ounces fresh ginger, 4 1/2 inch thick slices
2 tablespoons nam pla (fish sauce)
3 cloves garlic, halved
2 star anise
10 whole cloves
1 large boneless chicken breast, trimmed
8 ounces fresh bean sprouts
12 baby carrots, sliced in thirds
8 ounces cellophane noodles or 8 ounces bean thread noodles, pre cut
3 green onions, sliced
1/2 lb shrimp, cleaned and shelled
lime wedge
1/2 cup cilantro leaf
1/2 cup fresh mint leaves

Steps:

  • Bring large pot of water to boil, then remove from heat.
  • Add noodles to the pot; let stand until tender, about 15 minutes, then drain and set aside in a large serving bowl.
  • Combine chicken broth, onion slices, fish sauce, sliced baby carrots and chicken in a soup pot; bring to a simmer.
  • In a cheesecloth or tea infuser, add the whole cloves, sliced ginger, garlic, star anise and place in the soup pot with the chicken.
  • Simmer the chicken, vegetables and spice mixture for about 30 minutes, until chicken is tender and cooked through.
  • Remove chicken and cool it until you can cut into cubes; place back into the simmering soup pot.
  • Remove the cheesecloth or tea infuser, discard ingredients inside.
  • Add bean sprouts and shrimp and simmer for about 5 more minutes.
  • Ladle the soup into the large serving bowl with the noodles.
  • Add the green onions, cilantro and mint leaves to the serving bowl.
  • Serve with fresh lime wedges.

  • Bring to a full boil.
  • Boil gently for 1 minute; stirring constantly.
  • Remove from heat.
  • Quickly blend in sugar; add nuts.

Ok, on Low Carb diets we use cauliflower as a substitute for potatoes. This particular recipe is a re-write of my Garlic mashed potato recipe. I just removed the exact same amount of potato and replaced it with the same exact amount of frozen cauliflower. Not only did I find THIS recipe much easier than using real potatoes, it tastes 10 times better and is LOADED with Vitamins! I'm forever giving this recipe out. 2 lbs frozen cauliflower (2 one pound bags, you can even mix it up a bit for fun and get 1 bag just cauliflower and the other )
1 head garlic
1 tablespoon olive oil
1 (14 ounce) box of classic Philadelphia Cream Cheese (you can use 1/2 as much if you want to cut back on fat, but it will impact the recipe)
1/4 cup sour cream
4 tablespoons butter
milk or cream, if needed
salt
white pepper
chives (fresh or dried)
onion powder
garlic powder (totally optional, this is for garlic-holics)

Steps:

  • Steam the frozen cauliflower (all 2 pounds of it) until it's ready.
  • Separate head of garlic into individual cloves.
  • Toss in olive oil and wrap tightly in small piece of aluminum foil.
  • Bake in 350°F (180°C) oven for 45 minutes.
  • When the garlic has cooled to the touch you should be able to squeeze it out of the 'paper' shell of the individual cloves.
  • Mash the roasted garlic with a fork.
  • .
  • Place the cooked cauliflower into a food processor/Cuisinart along with the garlic, sour cream, cream cheese, butter, and salt and white pepper in a mixer bowl, and whip at medium speed until smooth and all the spices are blended.
  • OPTIONAL: Add cream or milk to adjust consistency. Note: If you are going to be using this as a topping for the Shepherd's Pie, you will want to keep it thick. If it's a side dish and you want it a bit thinner - go for it.

SLOW-COOKER FAUX PRIME RIB ROAST

This is my first original recipe, inspired by a great holiday dinner with friends. I wanted to see if I could do something similar with a less expensive cut of meat. The Faux Prime Rib Roast can also be baked in a covered Dutch oven at 350° for about 1-1/2 hours or until 165°. 2 pounds small Yukon Gold or medium red potatoes, quartered
3 tablespoons water, divided
1 pound fresh baby carrots
8 tablespoons butter, softened, divided
6 tablespoons prepared horseradish
5 to 6 garlic cloves, minced
2 teaspoons dried rosemary, crushed
2 teaspoons dried thyme
2 teaspoons pepper
3/4 teaspoon salt
1 boneless beef chuck roast (4 to 5 pounds)
2 cups beef broth
1/2 cup white wine or additional beef broth
1 tablespoon all-purpose flour

Steps:

  • Microwave potatoes with 2 tablespoons water, covered, on high until potatoes just begin to soften, 7-10 minutes, stirring occasionally. Transfer to a 6-qt. slow cooker; add carrots. Meanwhile, mix 6 tablespoons softened butter with horseradish, garlic and seasonings; refrigerate half of butter mixture., In a Dutch oven, heat remaining 2 tablespoons plain butter over medium heat. Brown roast on all sides; transfer to slow cooker. Add broth and wine to Dutch oven; cook 2-3 minutes, stirring to loosen browned bits from pan. Pour over meat. Spread butter mixture over roast; cook, covered, on low until beef is tender, 8-10 hours., Remove roast and vegetables to a serving platter; tent with foil. Mix flour and remaining water until smooth; gradually stir into cooking juices. Cook, covered, on high until thickened, 15-20 minutes., Cut roast into thick slices. Top with remaining butter mixture; drizzle with 1 cup gravy. Serve with potatoes, carrots and remaining gravy.

4 beef shanks - about three pounds total
Salt
Pepper
Flour for dredging
1 tbsp butter
1bsp good olive oil
1 cup each onion, celery and carrot - All chopped finely
2 bacon slices uncooked and diced
3 cloves garlic, minced
1 cup dry white wine
1 cup beef stock
1 14.5 oz can of diced tomatoes - drained as much as possible
1 cup flat leaf parsley, chopped
1 tsp lemon zest
1 large garlic clove, minced

Steps:

  • Season the beef with salt and pepper and dredge in the flour. Working is batches, brown the beef in the oil and butter until the shanks are golden. Medium high heat in a large deep skillet. Remove shanks from the oil and butter and set aside. In the same pan, add the onion, carrot, celery, bacon and garlic. Saute over medium high heat until veggies are tender - about 7 minutes. Add the wine and turn up the heat slightly to reduce the liquids. Another 6 minutes or so. Add broth, tomatoes and salt and pepper to taste - about a tsp of each. At this point you can transfer the vegetables to a dutch oven and add the beef. Coover and simmer 2 hours or until meat is tender OR Add the veggies and beef in layers to a slow cooker and cook on low for four hours or until tender. In a small bowl combine the chopped parsley, garlic and lemon zest. Add either the pot or the slow cooker for the final 10 minutes of cooking. Serve over polenta, rice or mashed potatos.

Steps:

  • Soak onion in water 10 minutes; drain and pat dry. In a large bowl, whisk together vinegar, lemon juice, and mustard with oil; season with salt and pepper. Stir in onion, celery stalks and leaves.
  • Cut 1 pound cauliflower into bite-size florets (3 cups). Steam in a pot of salted simmering water fitted with a steamer basket until tender, 7 to 8 minutes. 1 scallion, thinly sliced

2 packages instant ramen (preferably not fried; noodles only)

Bean sprouts, basil leaves, and thinly sliced serrano chiles

Steps:

  • Heat oil in a medium pot over medium heat. Add onion, cut side down, garlic, and ginger. Cook, stirring occasionally, until garlic is golden, 3-4 minutes.
