AMAZING LOW CAL, FAT FREE, SUGAR FREE CHEESECAKE
After trying ENDLESS cheesecake recipes that promised to be healthy and yummy, but ended up tasting like health food, I decided to take this project into my own hands! I've experimented with several combination and finally found the perfect recipe for a healthy cheesecake that taste EXACTLY (if not better) like the real thing. I like to make my own fiber one pie crust, but feel free to use your own recipe or buy one from the store! Enjoy!

Steps:
- 24 hours in advance, you are going to need to make the yogurt into yocheese. Do this by placing a large strainer in a bowl. Line the strainer with a few layers of paper towels, and pour in the yogurt. Cover with plastic wrap and place in refrigerator. This will allow the whey to drain from the yogurt, making the consistency much more firm.
- After 24 hours has passed, you can begin by whipping the cream cheese in a large bowl.
- Stir in the sugar substitute.
- Add in the instant pudding, and mix well.
- Stir out the lumps either by hand or place in blender. It is important that all lump are out and batter is smooth.
- Pour in pie crust and refrigerate for an hour or until firm.

SUGAR-FREE/FAT-FREE HOLIDAY EGGNOG
A wonderful thick rich eggnog without the sugar and fat, adjust the sugar substitute to taste, this may easily be doubled

- In a bowl combine the pudding mix with 2 cups fat-free milk, tiny pinch nutmeg (if using) vanilla or rum extract and sugar substitute (to taste) mix on low speed using an electric mixture until thickened (adjust the sugar substitute to taste if needed).
- Pour into a large container with a tight-fitting lid; add in 3 cups milk, cover with lid and shake vigorously.
- Add in evaporated milk with remaining 2 cups milk and shake well again.
- Chill and shake again before using.
- Delicious!

FAT FREE SUGAR COOKIES THAT WORK!
I HAVE BEEN LOOKING FOR A GOD FAT FREE COOKIE RECIPE AND I FOUND IT!! LOOK NO MORE!these don't necessarily have to be sugar cookies that you are making, these would probably work with molasses, cinnamon, cloves and ginger for a gingersnap or cocoa for a chocolate fudge cookie.

- Preheat oven to 450°F.
- combine the flour, baking soda, cream of tartar, and salt in a large bowl. mix throughly with a fork, slightly fluffing the flour to create mild pockets of air in the mixture.
- Add Splenda and mix again.
- Add buttermilk (1 tbs at a time), fat free plain yogurt, vanilla and butter flavoring. SOFTLY AND GENTLY mix with a spoon and incorporating all the ingredients together until everything is mixed.
- bake for about 15-20 minutes until the bottoms are browned (but not burnt) and they look done. (I have a convection oven so times may vary).
- Note: DO NOT OVER MIX, however do not undermix. I do not know the outcome that this may have, but I have a feeling that it isn't very good!
