BANANA CORNBREAD
Having vegan friends in college forced me to find some recipes that are friendly to their choice if I wanted to entertain. This recipe is delicious whether or not you are vegan. I've made it with almond, rice, soy, and regular milk and they are all very similar to identical in flavor and consistency.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Combine flour, cornmeal, milk, bananas, sugar, vegetable oil, baking powder, and salt together in a bowl until batter is smooth; pour into the prepared baking dish.
- Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 30 minutes.

FAT-FREE BANANA CORNBREAD!!
I was looking through banana bread and cornbread recipes and I was thought "why not combine them to make a really healthy bread?!" My bread came out to 1055 calories only 115 calories per piece. You could probably indulge a little bit since this is so healthy. I am definitely not an experienced cook, this is the first bread I've made, but this bread came out very moist and delicious. It's so simple to make! cooking time includes baking and mixing

- Combine Splenda, eggbeaters, vanilla extract.
- Add dry ingredients: wheat flour, cornmeal, baking soda, salt.
- Add bananas and sour cream.
- Bake at 350° until the top is lightly browned -for about 45 minutes if you bake this in an 8X8 pan.

FAT FREE (ALMOST!) BANANA BREAD
I know, I know, this site certainly doesn't need another banana bread recipe...but this is truly a wonderful, moist, nearly fat-free loaf. There's just the fat in the eggs, and you could probably substitute Egg-Beaters (although I've never tried it). Even my "why do we have to eat healthy" family love it....and they all swear to hate any baked goods made with whole wheat flour!

- Preheat oven to 350 degrees.
- Spray loaf pan with non-stick cooking spray.
- Mix applesauce, sugar, eggs and vanilla.
- Add flour and baking soda, mix well.
- Add bananas and sour cream till blended.
- Pour into loaf pan and bake for 70 minutes.
- Note: If you don't have enough banana to measure 1 cup, use additional applesauce for the balance.
FAT FREE CORNBREAD
This is my own variation of a great healthy recipe published by Dr. Dean Ornish. I love this with bean soups. The 7x9 pan fits perfectly in the toaster oven. A jar of applesauce goes bad quickly in my home, so I started buying the 6 packed individuals.

- Preheat oven to 425 degrees.
- Spray a 7 x 9 nonstick pan lightly with nonstick spray.
- In a medium bowl, stir flour, cornmeal and baking powder together.
- In a large bowl, whisk together milk, applesauce and egg whites.
- Preheat the pan 1 minute, not to burn the spray.
- Lightly stir all ingredients to a lumpy blend in the large bowl and pour into preheated pan.
- Bake 20 minutes or until top is lightly browned.
ALMOST FAT FREE, SUGAR FREE CORNBREAD
Being a southern girl, of course I LOOOOVE cornbread! I played with the basic recipe for southern-style cornbread, and altered it to fit my family's diet. The result...absolutely delicious and low cal cornbread!

- In a medium-sized bowl, mix all ingredients together. Batter may have a few lumps left.
- Spray a cast iron pan with cooking oil and blot with paper towel so it is smeared well all over.
- Bake at 400 for 15-20 minutes, or until lightly browned on top.

Steps:
- In a large bowl mash bananas with sugar and vanilla until combined and creamy. Then mix in the water. (I just put these ingredients in my VitaMix Blender and it's much easier).
- In a smaller bowl, sift together the flour, baking soda, baking powder and cinnamon.
- Add the dry to wet and stir until just mixed . You don't want to over mix or the bread will be dry. (So important to stir just until mixed.).
- Pour batter into sprayed loaf pan and bake in preheated 350 degree F oven for one hour. Your house will smell so good you will be temped to take it out a few minutes earlier but don't or it won't be done on the inside.
