A friend gave me this recipe a couple years ago and it is simply delicious! A quick, no-fuss cobbler that is sure to please your taste buds!

½ cup butter
1 cup all-purpose flour
¾ cup white sugar
¾ cup milk
2 teaspoons baking powder
4 cups fresh blackberries
½ cup seedless blackberry jam

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place butter into the bottom of a 9x13-inch baking dish and place in the oven until butter is melted, about 5 minutes. Whisk flour, sugar, milk, and baking powder into a smooth batter in a bowl. Pour batter over melted butter without stirring.
  • Mix blackberries with blackberry jam in a separate bowl and spoon blackberries and any accumulated juice evenly over the batter.
  • Bake in the preheated oven until blackberries are bubbling and cobbler is set, about 1 hour.

Strawberry-flavor gelatin, frozen strawberries and creamy whipped topping team up to make this fast and fruity dessert.

3/4 cup boiling water
1 pkg. (3 oz.) JELL-O Strawberry Flavor Gelatin
2 cups frozen strawberries
3/4 cup thawed COOL WHIP Whipped Topping

Steps:

  • Add boiling water to gelatin mix in medium bowl; stir 2 min. until completely dissolved. Add strawberries; stir until gelatin starts to thicken.
  • Pour 1/2 cup gelatin mixture into separate medium bowl. Add COOL WHIP; whisk just until blended. Spoon into dessert cups; top with remaining gelatin mixture.
  • Refrigerate 15 min. or until firm.

Tangy, sweet, tart, sour, Yummy !!!

2 c frozen blackberries, rounded cups
1/2 c yogurt, plain and non-fat
1/2 tsp liquid stevia extract
2 heaping Tbsp yogurt, plain and non-fat, for garnishing

Steps:

  • 1. Place frozen blackberries in a food processor and process until very fine
  • 2. Add 1/2 cup yogurt and Stevia. Blend until thick and smooth like ice cream.
  • 3. Divide into serving dishes and top with a heaping spoonful of plain non-fat yogurt.
  • 4. I use the "NOW" brand of liquid Stevia extract. Of the brands I have tried I found this one does not have a bitter after taste for me.
