Number Of Ingredients 9

1 lb hamburger
1 small onion
2 small cans pork & beans
1 small can chili beans
1/3 c sugar
1 c catsup (8 oz.)
1 tsp worcestershire sauce
add some tomato juice ...for liquid
added tomatoes, cukes, cheese, catsup, mustard, hot sauce

Steps:

  • 1. ********DAY 1. Fix cucumbers..(see note at bottom) Put in refrigerator overnight. Day 2. Brown hamburger and onion, then add Pork & Beans, chili beans,sugar,catsup, Worcestershire sauce, and some tomato juice.. Place in oven and heat. Keep warm. On a large serving platter, stack extra ingredients, in order as given below.
  • 2. 1. Corn Chips ..crushed (the straw) 2. warm beans and hamburger mixture 3. Lettuce 4. Tomatoes....cubed 5. Cucumbers...*NOTE: see below 6. Cheese....grated 7. Catsup 8. Mustard 9. Hot sauce
  • 3. * NOTE: Slice and peel cucumbers. Add equal amounts of water, sugar,and vinegar. Add a pinch of salt. *****Let stand overnight. PIctures from the internet.

Steps:

  • If you are new to visiting a farmers market, my advice is to keep it simple. Don't overbuy! it is really easy to do, especially if you go without a plan. The saddest thing is seeing what you've purchased go to waste because you couldn't go through it all. Start conservatively.
  • with "eat-immediately" items- things that will not last very long - like sprouts, lettuce, berries, some fruits. Opt for 1-2.
  • with produce that keeps for longer (potatoes, apples, cabbages, winter squashes, leeks, kale, etc) that give you more time to consume them. Buy more of these.
  • . Just one. ( I like to go with a plan in mind of what I need for the week, and then just surprise myself at the market with one more beautiful thing- just one!)
  • The best tip here! I often buy specialty items like Thai basil, garlic chives, purple basil- thing's I can't readily find at the grocery store.

1 preserved lemon, chopped
1/4 cup olive oil
2 tablespoons chopped fresh parsley
1 tablespoon honey
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
1 bunch fresh salad greens
3 mini bell peppers, sliced
1 cup goat's milk feta, crumbled
1 cup hazelnuts, toasted and chopped

Steps:

  • Whisk together the preserved lemon, olive oil, parsley, honey and some salt and pepper in a large bowl. Add the salad greens, bell peppers, feta and hazelnuts, toss together and serve.

My boys used to eat this in the school cafeteria and just loved it! They described it to me so I could make it for them at home. This is my version.

1 lb lean ground beef
2 (6 ounce) cans tomato paste
1 cup water
1 1/2 tablespoons taco seasoning mix
corn chips
2 -3 cups shredded cheddar cheese
salsa
1 cup onion, chopped (optional)
2 cups lettuce, shredded (optional)
2 cups diced tomatoes (optional)
sour cream (optional)
black olives (optional)

Steps:

  • Brown the ground beef in a skillet. Add the tomato paste, water and taco seasoning and simmer for 10-15 minutes Put a nice pile of corn chips on your plate. Add the ground beef mixture, cheese and salsa. Then, pile on whatever optional toppings you prefer and enjoy!
