AMISH FARMERS CHEESE

Amish Farmers Cheese image

Farmer's cheese is a simple, very mild cheese with a crumbly texture. It is really easy to make at home with this simple farmer's cheese recipe. To add more flavor, mix fresh herbs in with the curds or sprinkle herbs on top of the farmer's cheese with olive oil and red pepper flakes. Farmer's cheese can be eaten with bread or...

Provided by Linda Kauppinen

Categories     Other Sauces

Number Of Ingredients 3

1/2 gal fresh whole milk, raw
1/4 c white vinegar
1 tsp salt

Steps:

  • 1. Bring milk to a slow boil. Keep the heat at medium or medium low, otherwise you risk burning the milk to the bottom of the pot.
  • 2. When small, foamy bubbles begin to form on the surface of the milk, but it is not yet at a rolling boil, turn off the heat. If you have a thermometer, which is helpful, the temperature will read about 190 degrees.
  • 3. Add the vinegar and stir the milk. You will notice curds immediately beginning to form. Let the milk sit for 15 minutes. After this time, add any additional flavors (like fresh herbs).
  • 4. Place a colander over a large bowl or pot. Drape either cheesecloth or a thin dish towel over the colander. Pour the curds into the cheese cloth. The whey (liquid) will drain and be collected in the bowl below and the solids curds will be caught in the cheese cloth.
  • 5. Lift the cheese cloth up and wrap it around the curds, twisting and squeezing to expel moisture. After squeezing out the moisture, the curds for farmer's cheese will be dry and crumbly. If you want a creamier texture, mix a little of the reserved whey back in with the curds.
  • 6. To shape the cheese, keep it wrapped in cheese cloth and form it into a mound on a plate. Set another plate on top and press the curds into a flat disc that is 1-2 inches tall. Cover and refrigerate for an hour or so before removing cheese cloth.
  • 7. NOTE: suggest you go easy on the salt and use a fine granualted salt, not kosher salt--the salt tends to stick to the outside. You can always adjust salt in any recipe you use this in. This makes a very great and tasty fresh cheese. It's quite delicate in flavor and not very strong,

NORTH CROATIAN FARMERS CHEESE DUMPLINGS

North Croatian Farmers Cheese Dumplings image

This is very old recipe, mostly forgotten. Today, everyone makes potato dumplings or gnocchi, but believe me, this one are much better. Even more, you can eat them as a side dish to meat and sauces, also you can eat as a full lunch and even as a dessert - you just have to put sugar and cinnamon over. You can add whatever you want, poppy seeds, and raisins, chocolate or vanilla sauce. Perfect dessert. It is also very simple with just few ingredients. Note: for vegetarians, skip lard you can use oil as well.

Provided by nitko

Categories     Dessert

Time 15m

Yield 8 portions, 8 serving(s)

Number Of Ingredients 5

500 g farmer cheese (fresh)
60 g lard (must be pork, but oil can do)
3 eggs
250 g semolina
5 g salt

Steps:

  • Mix well whole eggs and lard. Drain the cheese and add into eggs. Add whole semolina, mix well and leave at least two hours in refrigerator. Longer it stays in refrigerator, better dumplings.
  • Heat large pot with water until it boils. Keep boiling.
  • Soak your hands in cold water and make balls; Golf-ball size. Put them one after another into boiling water and cook until they start to float on the surface and than 3-5 more minutes. It really depends how hard are your dumplings (that means you have to stick to the recipe).
  • To serve as a side dish to meat and sauce, fry some breadcrumbs on butter and put the dumplings into the pan, and fry with breadcrumbs just to stick it to the dumplings. Serve warm.

FARMERS' MARKET SALAD WITH BUTTERMILK-CHIVE DRESSING

Farmers' Market Salad with Buttermilk-Chive Dressing image

During the summer when the local farmers' markets are in full swing, our chefs reach out to area farmers to take advantage of the natural bounty of the season. We have a brief but amazing growing season here in the Northeast, with irresistible produce making an appearance for just a few short months. Chef Corey created this delightfully fresh and simple salad from a mismatched box of produce that arrived with our regular vegetable order one day. He wanted to highlight the crispy, crunchy vegetables with a light, tangy classic dressing. This makes a terrific salad for a light lunch or brunch; it is beautiful and simple to put together. Feel free to vary the vegetables to suit what is in season near you and what appeals to your taste. To turn this salad into a heartier meal, crumble some blue cheese and/or some crispy bacon slices over the top and serve with crusty bread.

Categories     main-dish

Yield Serves 4 as a main course or 6 to 8 as a first course

Number Of Ingredients 15

1/2 cup/120 ml nonfat buttermilk
1/4 cup/60 ml sour cream or creme fraiche
2 tablespoons good-quality mayonnaise
1 tablespoon freshly squeezed lemon juice
1/4 cup/15 g minced fresh chives
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
4 large eggs
8 ounces/225 g baby carrots, peeled and trimmed to leave 1 inch/2.5 cm of stem
1 pound/455 g English peas, shucked
8 ounces/225 g green beans, trimmed and halved crosswise
8 ounces/225 g small Red Bliss potatoes, unpeeled and quartered
8 cups/170 g loosely packed mixed organic lettuces
One 6-ounce/170-g bag radishes, trimmed and quartered lengthwise
1 pint/300 g cherry tomatoes

Steps:

  • 1. To make the dressing: In a small bowl, mix together the buttermilk, sour cream, mayonnaise, lemon juice, chives, salt, and pepper until well blended. The dressing can be made up to 3 days in advance and stored in an airtight container in the fridge.
  • 2. Place the eggs in a small saucepan, add cold water to cover, and bring to a boil over high heat. As soon as the water begins to boil, turn off the heat, cover the pan, and let the eggs sit for 15 minutes, or until cool enough to handle. Remove the eggs from the water. Working with one egg at a time, softly and gently crack each eggshell all around and carefully peel it off while holding the egg under running cool water. Pat the eggs dry, halve lengthwise, and set aside.
  • 3. In a large saucepan, bring 3 quarts/2.8 L lightly salted water to a boil over high heat. While waiting for the water to boil, fill a large bowl about half full with ice and then add cold water just to cover the ice. Line the baking sheet with paper towels.
  • 4. Drop the carrots into the boiling water and boil for 3 to 4 minutes. Using the sieve, remove the carrots from the water and plunge them, sieve and all, into the ice bath. Remove the carrots from the ice water, drain, and dump them out onto the prepared baking sheet. This process, called "shocking," will halt the cooking so the vegetables retain their bright color and fresh crunch.
  • 5. Bring the water back to a boil and repeat with the peas, leaving them in the boiling water for about 30 seconds, and then with the green beans, leaving them in the boiling water for 2 to 3 minutes, before shocking each of them, in turn, in the ice water and transferring them to the baking sheet. Replenish the ice bath as needed with more ice to keep it ice-cold.
  • 6. Bring the water back to a boil and add the potatoes. Reduce the heat to medium and simmer for 10 to 12 minutes, or until you can pierce them easily with a fork. Shock the potatoes in the ice water, scoop them out, and then dump them onto the baking sheet with the other vegetables.
  • 7. Decoratively arrange the lettuce, radishes, tomatoes, eggs, potatoes, carrots, peas, and green beans in four shallow salad bowls. Serve the dressing on the side.
