FILLING:
5 lb tart apples-pared, cored, sliced
3/4 c brown sugar, firmly packed
1 Tbsp lemon juice
1 Tbsp ground cinnamon
1/4 tsp salt
1/2 tsp nutmeg
PASTRY:
5 c all purpose flour
1 Tbsp granulated sugar
1/2 tsp salt
cold water
1 1/2 c buttery crisco (i changed it instead of regular shortening)
2 large egg yolks

Steps:

  • 1. Pastry: Combine dry ingredients; cut in Crisco. Place egg yolks in measuringg cup and stir with fork until blended. Stir in enough very cold water to make just a cupful. Sprinkle gradually over dry ingredients; toss with fork to make soft dough. Roll out as usual. Makes pastry for three 9-inch 2-crust pies or one jelly roll pan (15x10-inch what I use) For this pie roll out 1/2 the pastry and line the jelly roll pan. Put in filling. Roll remaining pastry and place on top., sealing and crimping edges, Brush with milk, sprinkle with a little granulated sugar and cut a few vents here and there or prick with a fork. --- Filling: When cutting up the apple - cut them into a pan with cold water that has about 1 teaspoon of salt and stir to dissolve salt. This will keep the apples from turning brown and keep them crisp. Drain apples and place in a large bowl or put back into the previous pan. Sprinkle lemon juice on apples. Combine remaining dry ingredients and mix with the apples. Spread apples evenly in pastry lined pan. Dot with butter pats. Top with remaining crust. After crimping and venting top of crust, brush with milk and sprinkle on the sugar and a little cinnamon , if desired. Bake in a 400^ degree oven for 10 minutes. Then turn down the oven to 350^ and continue baking for 30-35 minutes or until apples become juicy. When cool: drizzle with: --- Icing: 1 cup powdered sugar and 2 Tablespoons of milk mixed well. Cut into squares to serve with whipped cream or ice cream if desired.. This is the best darn pie crust ever. Very old.

Yield Pastry for double-crust pie (9 inches).

2-1/2 cups all-purpose flour
2 teaspoons sugar
1/4 teaspoon baking powder
1/4 teaspoon salt
3/4 cup shortening
1 egg yolk, lightly beaten
5 to 6 tablespoons cold water

Steps:

  • In a small bowl, combine the flour, sugar, baking powder and salt; cut in shortening until mixture is crumbly. Combine the egg yolk and water; gradually add to flour mixture, tossing with a fork until a ball forms. Cover and refrigerate for 30 minutes or until easy to handle., For a double crust, divide pastry in half so that one ball is slightly larger than the other. Roll out larger ball to fit a 9-in. pie plate. Transfer pastry to pie plate. Trim pastry even with edge of plate. Add filling. , Roll out remaining pastry to fit top of pie; place over filling. Trim, seal and flute edges. Cut slits in top. Bake according to recipe directions., For two single crust, divide pastry in half. Roll out each portion to fit a 9-in. pie plate. Transfer pastry to pie plate. Trim pastry to 1/2 in. beyond edge of plate; flute edges. Fill or bake shell according to recipe directions.

Number Of Ingredients 12

5 tablespoons unbleached all-purpose flour, plus more for dusting
Flaky Pate Brisee
1 large egg yolk
1 tablespoon heavy cream
4 pounds assorted cooking apples, peeled, cored, and cut into 1/4- to 1/2-inch-thick slices
3 tablespoons fresh lemon juice
1/2 cup granulated sugar
1 1/4 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon kosher salt
1/4 cup cold (1/2 stick) unsalted butter, cut into 1/2-inch pieces
Sanding sugar, for sprinkling

Steps:

  • Turn out 1 piece of dough onto a lightly floured work surface. Roll into a 13-inch round, about 1/8 inch thick. Fit into 9-inch pie plate. Trim edges flush with rim. Freeze until firm, about 30 minutes.
  • Roll out remaining dough on parchment paper to a 13-inch round, about 1/8 inch thick. Transfer to a baking sheet; refrigerate until firm, about 30 minutes.
  • Preheat oven to 400 degrees. Whisk egg yolk and cream in a small bowl; set egg wash aside. Put apples, lemon juice, granulated sugar, flour, cinnamon, nutmeg, and salt in a large bowl; toss to combine. Fill pie shell with apple mixture, and dot with butter. Both me & me late mother love fresh apple pie. We made this together every Thanksgiving.

1 pkg pie crust mix
1/3 c water, cold
1/2 c sugar
1/2 c all purpose flour
1/2 tsp cinnamon, ground
1/4 tsp freshly grated nutmeg
5 c apples, granny smith, thinly sliced
1 Tbsp butter
milk
sugar

Steps:

  • 1. heat oven to 425F. Make pie crust mix as directed to 9-inch tow pie crust. Using 1/3 cup water.
  • 2. Stir together the flour,sugar, cinnamon & nutmeg in large bowl. Add in the apples, toss to mix well. Place into pastry line pie pan. Dot with the butter.
  • 3. Roll the remaining pie crust. Cut into about 10 strips about 1/2 inch wide. Then place five strips 1 way & wave the other 5 in between the first 5. Fold Trim over the bottom of pie & make high edges with your fingers. Seal & flute. Brush lightly with milk & sprinkle with additional sugar.
  • 4. Bake 30to 35 minutes or until crust is golden brown & juice is all bubbly.

1 teaspoon salt
1 cup shortening
1 egg yolk
½ cup milk
10 apples - peeled, cored and thinly sliced
½ cup light brown sugar
¼ cup white sugar
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 egg white

Steps:

  • Preheat oven to 375 degrees F (190 degrees C.)
  • In a large bowl, combine flour and salt. Cut in shortening until mixture resembles coarse crumbs. Beat egg yolk in measuring cup and add enough milk to make 2/3 cup total liquid. Stir into flour mixture until all flour is damp. Divide the dough in half. On floured surface, roll half the dough into a rectangle and fit into a 9x13 inch pan.
  • In large bowl, combine apples, brown sugar, white sugar, cinnamon and nutmeg. Put apple mixture in pan. Roll out remaining dough and place over apples. Seal edges and cut slits in top dough. Beat egg white till frothy and brush on crust.
  • Bake in the preheated oven for 50 minutes, or until golden brown.

3 tablespoons all-purpose flour, plus more for dusting
Vegan Piecrust
3 pounds assorted apples (about 6), such as Granny Smith, Gala, Empire, and Macoun, peeled, cored, and cut into 1/4-inch slices
1 tablespoon fresh lemon juice
1/4 cup fine-grained natural cane sugar or granulated sugar
1 teaspoon ground cinnamon
1/8 teaspoon coarse salt
Turbinado sugar, for sprinkling

Steps:

  • Preheat oven to 400 degrees. On a lightly floured surface, roll out one disk of dough into a 13-inch round, about 1/8 inch thick. Fit into a 9-inch pie dish. Trim edge flush with rim. Roll out second disk to a 13-inch round.
  • In a large bowl, toss together apples, lemon juice, cane sugar, cinnamon, salt, and flour. Transfer apple mixture to pie shell, brush edge with water, and place second dough round on top. Tuck edge of top dough under bottom dough to seal; crimp as desired. Cut a few steam vents in top dough. Lightly brush top with water and sprinkle with turbinado sugar.
  • Place pie dish on a rimmed baking sheet and bake until crust begins to turn golden brown, about 20 minutes. Reduce temperature to 350 degrees and bake until browned on top and juices are bubbling in center, 60 to 70 minutes. Let cool completely on a wire rack before slicing and serving.
