SIMPLY FANTASTIC RHUBARB CUSTARD PIE

Simply Fantastic Rhubarb Custard Pie image

There are several rhubarb custard pies on Zaar but I didn't find any quite like this one. It came from a friend at work and was tried and approved by another co-worker before I finally tried it last night. I think the topping really finishes it off. NOTE: I substituted Splenda for the sugar in the filling and it absolutely could not be detected. (I would have done the same with the topping but DH made the topping for me while I was making the filling.)

FANTASTIC FROZEN LIME PIE DESSERT

A co-worker shared his mother's recipe. The sky is the limit because all the employees made this recipe using different flavored concentrates. I also made this recipe, using orange concentrate and grated orange zest on top, it was also fantastic. Although, you will need to freeze this overnight, it is the fastest dessert you will ever make. It makes two pies and you will be glad you have two because the first one will be gone in no time.

MOM'S FANTASTIC CHERRY PIE

Mom's Fantastic Cherry Pie image

Mom's well known for her cherry pie. Years ago, she told me not to tell the secret... but I know the secret's out, so here it is! The beautiful thing is that it has only four ingredients - plus the pastry, of course. Mom's cherry pie puts any boughten cherry pie to shame - you won't be able to even look at one again! For a vegan version, use soy or almond milk to brush pie. Oh, and the secret? Almond extract!

Provided by Katzen

Categories     Fruit

Time 1h15m

Yield 1 Pie, 8-12 serving(s)

Number Of Ingredients 10

4 cups sour cherries, with juice
1 cup sugar
1 teaspoon almond extract
5 tablespoons cornstarch, heaping
2 cups flour
1 teaspoon salt
3/4 cup vegetable shortening, well-chilled
4 -8 tablespoons water, ice cold
2 tablespoons milk
1 tablespoon sugar

Steps:

  • Preheat oven to 425.
  • Mix cherries, sugar, and almond extract in saucepan, and bring to a simmer. Pour or scoop out 1/2 cup cherry juice, and add cornsarch. Mix well until a paste forms. You may wish to add 1/4 to 1/2 cup of water to turn it into a liquid rather than a paste. Slowly add to the simmering cherries, mixing well while adding. Allow to simmer until thickened. Set aside.
  • For pie crust, mix flour and salt; cut in shortening, using pastry blender or two knives. You want to stop when you have large pea size clumps of shortening - any smaller, and you'll lose out on some flakiness! Add in ice water (I actually add ice to my water to ensure it's super cold), and mix, drawing a fork up from the bottom of the bowl, adding water until the dough is moist enough that it sticks together when pressed. TIP: Don't touch the pastry dough any more than absolutely necessary! Separate into two balls, one slightly larger than the other. Roll out larger ball on a floured board, and place into pie pan; it should overlap. Roughly cut edge even with edges. Roll out smaller ball of dough, and set aside.
  • Pour filling into pie crust; top with remaining pastry dough, allowing it to overhang edges. Again, roughly cut crust, slightly larger than edge of pie pan. Tuck top crust under bottom crust (to prevent leaks), and crimp. Cut vents into top crust, and if you have any scraps left over, shape into a few flat cherries with stems, and place on top of pie.
  • Lightly brush top of pie with milk, and sprinkle with sugar.
  • Bake at 425 for 15 minutes, then reduce heat to 350 and bake for 30 minutes more.
  • Enjoy!

Provided by Chef Punchin

Categories     One Dish Meal

Time 1h5m

Yield 6 serving(s)

Number Of Ingredients 21

80 ml olive oil
2 large onions, grated
4 garlic cloves, grated
3 carrots, peeled and grated
1 kg ground lamb
100 g mushrooms, thinly sliced
2 tablespoons tomato puree
250 ml chicken stock
100 ml red wine
1 dash Worcestershire sauce
1 tablespoon thyme, chopped
1 sprig fresh rosemary, leaves stripped and finely chopped
1 1/4 kg maris piper potatoes, peeled
150 g butter
salt
fresh ground black pepper
3 egg yolks
50 g parmesan cheese, grated
olive oil
sea salt
fresh ground black pepper

Steps:

  • Pre- heat the oven to 200°C.
  • Heat the olive oil in a saucepan and fry the onions, garlic carrots until golden. Season then add the rosemary, cook for approx 5 minutes. In a separate pan cook the minced meat until browned, add the thyme leaves, stirring constantly to break up the meat and ensure it cooks evenly. When the mince is browned, remove from the pan and place on a lined plate to remove excess fat, add the mushrooms to this pan and sauté for approx 5 minutes or until lightly golden.
  • Add the tomato puree and the cooked mince to the carrots and onions pour over the red wine and reduce by approx half. Season with a little salt and pepper then add the stock and a good dash of Worcestershire sauce. Gently simmer for 20 minutes or so, until the meat is cooked and the mixture has thickened. Spoon the mixture into an ovenproof serving dish.
  • Boil the potatoes and cook for about 20 minutes until softened. Drain and cover with a lid to steam 'dry' and reduce any excess moisture. Add the butter and egg yolks and mash thoroughly, grate half the parmesan into the potato and mix well. Don't allow the potato to become too wet or they won't crisp up nicely in the oven. Season.
  • Spoon the potato mixture over the meat, sprinkle with the remaining parmesan and finish with a drizzle of olive oil.
  • Bake for 25-30 minutes or until the top is golden.

salt & freshly ground black pepper
2 free range eggs
200 g fresh spinach
1 onion, finely chopped
1 carrot, halved and finely chopped
extra virgin olive oil
600 ml cream
200 g cheddar cheese

  • Put the spinach, fish and eggs into an appropriately sized earthenware dish and mix together, pouring over the creamy vegetable sauce.
  • The cooked potatoes should be drained and mashed - add a bit of olive oil, salt, pepper and a touch of nutmeg if you like. Spread on top of the fish. Don't bother piping it to make it look pretty - it's a homely hearty thing.
  • Place in the oven for about 25-30 minutes until the potatoes are golden.
