I've tried many recipes, this is the best. I once 'dec-tupled' (10x) this recipe to sell sandwiches at a craft fair at my church. People were waiting in line to buy leftovers. Freezes well, goes up to the lake or camping well and is a hit on Halloween...it's no-fail. Easy to double, triple, etc. I've been making Joes this way for over 20 years. ***03-08-09, I just reinvented this recipe tonight when I went to make it for dinner and found I didn't have an 8-oz. can of tomato sauce (shame on me). The family was upset with me when I subbed an 8-oz. can of pizza sauce and told them to suck it up and call them 'Pizza Joes' and then served them up with shredded mozzarella cheese on the toasted buns, top and bottom. They loved it. I left out the BBQ sauce in this preparation and just used a 1/2 cup ketchup. Pizza Joes are good to go!

1 lb ground beef
2 -3 stalks celery, chopped
1 small onion, chopped
1 (8 ounce) can tomato sauce
1/4 cup ketchup
1/4 cup barbecue sauce (your favorite, we use Open Pit)
1 tablespoon firmly packed brown sugar
1 teaspoon dry mustard
salt and pepper
1 tablespoon Worcestershire sauce
1 tablespoon vinegar

Steps:

  • In a large skillet, brown ground beef, celery and onion.
  • Drain the fat, who needs it?.
  • Stir in remaining ingredients, simmer covered, 15-20 minutes, stirring occasionally.
  • If Joes appear too'loose', leave cover off and let moisture evaporate.
  • Cook until it's the consistency you like for serving on toasted buns, with french fries and cole slaw.

1 teaspoon white sugar
1 cup warm water
¼ cup olive oil
3 cups hard white whole wheat flour, or more as needed

Steps:

  • Stir yeast and sugar into warm water in a large bowl; set aside until liquid starts to bubble and foam, 5 to 10 minutes. Mix in oil. Add flour and salt, stirring until dough is smooth; stir in more flour as needed.
  • Knead dough on a lightly floured surface for about 5 minutes and place in a large bowl; cover bowl with a damp towel. Allow dough to rise for 20 to 30 minutes. Place dough on a pizza stone and roll out with a rolling pin.

3/4 cup water at 105 to 110 degrees F
One 1/4-ounce package dry instant yeast (about 2 1/4 teaspoons)
1 teaspoon sugar
2 1/2 cups all-purpose flour, plus extra for dusting
1/2 teaspoon kosher salt
2 tablespoons corn oil
8 slices bacon
1 1/2 cups pizza sauce (store-bought or homemade)
1 pound whole milk low-moisture mozzarella slices, from the deli (see Cook's Note)
1 cup pineapple, fresh or canned, 1/2-inch dice

Steps:

  • For the dough: Combine the water, yeast and sugar in a stand mixer fitted with the dough hook and let it bloom until bubbly, about 5 minutes. Add the flour, salt and 1 tablespoon corn oil and mix on medium-low for 5 minutes. Add the remaining tablespoon oil to a 12-inch cast-iron or heavy oven-safe skillet and paint it with a brush all over and up the sides. Place the dough in the center of the skillet and cover in plastic wrap. Let rise until doubled in size, for up to 2 hours.
  • For the pizza: Preheat the oven to 400 degrees F. Line a sheet tray with parchment paper.
  • Arrange the bacon slices on the lined sheet tray and bake until slightly crisp but still soft in the middle, 5 to 8 minutes. Let cool, then cut into 1-inch strips. Set aside until ready to use.
  • Turn the oven up to 500 degrees F.
  • Press the dough down lightly in the skillet until it reaches the edge. (If the dough is being temperamental and not stretching, cover with plastic wrap and let it chill out for 10 minutes to let the dough relax, then press it to the edge.) Ladle a layer of sauce on the dough and evenly spread to the edge. Now it's cheese-shingling time! Start around the edge, letting the cheese go up the inside wall of the skillet and then covering the middle so there is one even layer of cheese on the pizza. Top with an even sprinkling of pineapple and bacon.
  • Bake the pizza until both the cheese crust around the edge is golden brown and the toppings are nicely charred and bubbling, 20 to 30 minutes. I like using a fish spatula to gently and carefully lift a portion of the crust to peek underneath and see if it is getting super golden brown. You may need to move the skillet to the top rack or bottom rack depending on whether the top or bottom crust chars first. Let the pizza cool for 10 minutes. Slice and serve!

The Batali family pizza recipe is highly practical: small rounds cooked on a stove, no pizza oven or grill required. Yes, there are a number of steps to making the dough, but the plain parbaked crusts last for days, and need only be topped and broiled when it's time to eat.

1 1/4 ounce package active dry yeast
1 1/2 teaspoons sugar
3 1/2 cups (15 ounces) "00" fine Italian bread flour or all-purpose flour, plus extra for dusting
Scant 2 tablespoons coarse or kosher salt
1/4 cup extra-virgin olive oil
Semolina flour, for dusting
6 tablespoons basil pesto
1/2 cup grated fresh mozzarella

Steps:

  • Make the dough: Whisk 1 1/4 cups warm water (95 degrees), yeast and sugar together in a bowl. Let stand in a warm place for 10 minutes, or until yeast is foamy.
  • In a large bowl, whisk together bread flour and salt. Make a well in the center and add yeast mixture and oil. Using a wooden spoon, stir wet ingredients into dry ingredients until mixture is too stiff to stir, then mix with your hands until dough comes together and pulls away from sides of bowl. Turn dough out onto a lightly floured work surface and knead, adding only as much flour as necessary to prevent sticking, until smooth, elastic and only slightly sticky. Transfer dough to a large oiled bowl, turning to coat. Cover with a kitchen towel or plastic wrap, and let rise in a warm place for 1 to 1 1/2 hours or overnight, until doubled in size.
  • Punch down dough and turn it out onto a well-floured work surface. Divide into 8 pieces (about 4 ounces each) and shape each one into a ball. Cover with a tea towel and let stand for 15 minutes.
  • Heat griddle pan over medium heat until very hot, about 5 minutes. Dust a large work surface with a mixture of flour and semolina. Pick up one of the dough balls and begin to pull and stretch dough into a circle, then lay on work surface and press into a thin round (about 8 inches), adding only enough flour and semolina to keep dough from sticking. Using one hand as a guide, slope a slightly thicker rim all around dough circle. Work quickly, and be careful not to overwork dough; if it resists or shrinks back, let it rest briefly before proceeding. (If you prefer, you can roll out dough with a rolling pin; lightly flour work surface and pin.) For larger pizzas, use 2 dough balls.
  • Carefully place dough round on griddle pan and cook until barely tan on first side and browned in a few spots, 2 to 3 minutes. Flip crust over and cook until second side is completely dry, about 1 minute.
  • Transfer crust to a wire rack or a baking sheet, brushing off any excess flour, and allow to cool. Repeat with remaining dough. (Parbaked crusts can be refrigerated overnight or frozen, well wrapped, for up to 2 weeks.
  • Top and broil each pizza: Heat broiler and place a pizza stone or baking sheet inside to heat. Spread a very light coating of pesto evenly on crust, leaving a 1/2-inch border. Scatter mozzarella over pesto. (Don't put toppings on crust until ready to broil, to avoid sogginess.)
  • Place pizzas on hot stone or pan; slide under broiler, about 4 inches from heat source; and broil for 7 or 8 minutes (or as long as needed), until toppings are heated or cooked through, or both, and crust is charred and blistered in spots. Watch closely so that ingredients don't burn, and move pizza around or lower broiler rack if necessary. (Depending on topping, bottom of crust may start to become soggy; you can slip pizza back onto griddle momentarily to recrisp.) Cut into slices and serve hot.

1 cup warm water
1 tsp. sugar
1 1/4-oz. packet active dry yeast
3 tbsp. olive oil, plus extra for coating
2 1/2 cups all-purpose flour, plus extra for dusting

Steps:

  • Place 1/4 cup warm water in a small bowl. Stir in the sugar until dissolved, then sprinkle the yeast onto the surface of the water. Let the yeast float there for 1 minute, then stir it into the water. Let the yeast "proof" for 10 minutes. It should bubble a bit; if it doesn't, the yeast is outdated and inactive. Pour the yeast mixture into a large bowl, then stir in the remaining water, and add the olive oil, flour and salt. With a wooden spoon, mix the dough until it forms a ball. On a lightly floured surface, knead the dough for 10 minutes, or until it is smooth and elastic. Coat the inside of a large glass or ceramic bowl with olive oil. Press the ball of dough into the bottom of the bowl, then flip the dough over so the oiled side is on top. Cover the bowl with plastic wrap, then let the dough rise in a warm place until it has doubled in bulk, about 1 1/2 hours. Makes 1 1/2 pounds of dough. BAKING SHEETS VS. THE PIZZA STONE What you cook your pizza on affects its color, crispness and baking time. Generally, the darker the baking sheet, the darker and crisper your crust (and the shorter your cooking time). For the crispiest crust and shortest cooking time, use a pizza stone (about $30), which must preheat for 45 minutes. While it heats, assemble your pizza directly on a wooden "peel," or pizza paddle, sprinkled with cornmeal. Use the peel to transfer the pizza to the heated stone. FREEZING DOUGH To freeze pizza dough, punch it down once it has risen, place it in a zip-top bag and freeze it. When you need it, thaw it early in the day, then shape it once it is no longer cold. To freeze individual crusts, roll the dough and freeze the rounds on baking sheets, then remove and place them in plastic bags. When it is time to assemble the pizzas, simply apply the toppings to the frozen disks.

My family enjoys good take-out pizza but would gladly pass it up in favor of this, their favorite pizza! You may choose to make either an extra-large thick-crust pizza or two 13" thin and crispy pizzas using this recipe - I'm sharing my methods for making both styles of pizza here. Thanks to Chef Letty Flatt, long-time executive pastry chef for Deer Valley Resorts of Park City, Utah, for the pizza crust ingredients list which I've adjusted only minimally. Allow up to one hour extra time for the dough to rise.

1 (2 1/4 teaspoon) packet dry yeast
1 teaspoon honey
1 cup water
1/4 cup olive oil
1 teaspoon sea salt
3 3/4 cups flour
cornmeal (for sprinkling)
1 (8 ounce) can tomato sauce
0.5 (6 ounce) can tomato paste (other half may be frozen for another pizza later)
1/2 tablespoon olive oil
3/4 teaspoon sugar
1/4 teaspoon dried basil
1/4 teaspoon dried marjoram or 1/4 teaspoon dried oregano
1 dash garlic powder
low-moisture part-skim mozzarella cheese, grated
cheddar cheese, grated
pepperoni (also your choice of Canadian bacon, cooked sausage, sliced black olives, mushrooms, etc)

Steps:

  • Combine warm water, yeast, and honey; let sit 5 minutes to dissolve and activate yeast.
  • Stir together yeast mixture, water, olive oil, salt, and 1 cup flour; gradually add remaining flour, stirring, until dough comes together; knead (I use a KitchenAid stand mixer) for 10 minutes until soft, smooth, and elastic.
  • Turn dough into a large oiled bowl; cover and allow to rise at room temperature for about 1 hour until doubled.
  • Preheat oven to 450°; (to make an extra-large thick-crust pizza) spray a 12x17" baking sheet with no-stick cooking spray then sprinkle the sheet lightly with cornmeal; set aside.
  • Punch down dough; turn out on a lightly floured surface and press dough out thinly into a fairly large rectangular shape; lift and transfer dough onto prepared baking sheet; press dough outward until it covers the baking sheet; form a ridge around the outer edge.
  • Parbake pizza crust for 3-4 minutes (This is a good time to make your pizza sauce - Just stir the sauce ingredients together and it's done!).
  • Remove parbaked pizza crust from oven and pat down any overly-puffed-up spots using with the palm of your hand or a clean kitchen towel; spread sauce evenly over surface of pizza crust; top pizza with layers of low-moisture part-skim Mozzarella cheese and your choice of pepperoni, canadian bacon, cooked sausage, sliced black olives, mushrooms, chopped green peppers, etc; lastly sprinkle a small amount of Cheddar cheese (for a bit of extra color) over the very top.
  • Return pizza to oven and bake and additional 15 minutes until crust is golden-brown and cheese is melted, bubbly, and just beginning to brown.
  • VARIATION: To make two 13" thin and crispy pizzas, decrease rising time of dough by about half and (here's the secret to a really good thin and crispy crust) place pizza stone into oven; preheat oven AND pizza stone to 450°.
  • Punch down dough; divide into 2 equal portions; turn portions, one at a time, out on a lightly floured surface and press dough as thinly as possible into about about a 10" circular shape.
  • Remove the hot pizza stone from the oven (place it onto the stove-top or onto a double-folded bath-towel set on the kitchen counter) and sprinkle it with cornmeal; carefully move dough (circle) onto the preheated pizza stone; continue pressing dough circle outward to cover pizza stone and form an outer ridge; and don't worry if you hear a faint sizzling sound or see bubbles forming in the uncooked dough during this step, that's what seems to always happens here!
  • Parbake pizza crust for 3-4 minutes; remove from oven, pat down, and top as instructed above; return pizza to oven for 12-13 minutes until done. Enjoy!

1 can (13.8 ounce) Pillsbury® refrigerated classic pizza crust
2 teaspoons olive oil
1/2 cup shredded Cheddar cheese (2 ounce)
1 1/2 cups shredded mozzarella cheese (6 ounce)
1tablespoon chopped red onion
1/2 cup refrigerated honey hickory barbecue sauce with shredded chicken, large pieces cut up
1 tablespoon shredded fresh Parmesan cheese
4 to 5 (1/4-inch-thick) slices plum (Roma) tomato (about 1 large tomato)
1 tablespoon thin fresh basil strips
2 tablespoons pizza sauce
2 slices Canadian bacon, quartered
1/4 cup pineapple tidbits, well drained (from 8 ounce can)
2 tablespoons pizza sauce
8 to 10 slices pepperoni (from 3 ounce package)

Steps:

  • Heat oven to 425 degrees F. Spray cookie sheet with cooking spray; sprinkle with cornmeal. Unroll dough; place on cookie sheet. Starting at center, press out dough into 14x12-inch rectangle. Brush dough with olive oil.
  • Bake 6 to 8 minutes. Sprinkle Cheddar cheese in the shape of a "plus sign" on crust, dividing the crust into four squares. Top each square with 1 of the 4 variations listed above to make 4 different squares; if desired, on the Pepperoni Pizza Square, arrange the pepperoni to make a happy face. Top entire pizza with mozzarella cheese.
  • Bake 10 to 13 minutes longer or until crust is deep golden brown and cheese is melted and bubbly. Cut pizza into 4 squares; cut each square into 4 squares to make a total of 16 squares.
  • This recipe lends itself well to other variations. Get creative and add your family's favorite toppings!
  • For a perfect party pizza, follow Steps 1 and 2, dividing the crust into four squares with lines of shredded Cheddar cheese as described. Then provide toppings (meats, cheeses, sauces, fruits, etc.), allowing guests to complete a square with the ingredients of their choice.
  • Wonderful for a teen sleepover party!

1 envelope italian-style spaghetti sauce mix
1 can(s) tomato paste (8 ounces)
3/4 c water
1 tube refrigerated buttermilk biscuits (12 ounces)
1/4 cup plus 1 tablespoon grated parmesan cheese, divided
2 c shredded part-skim mozzarella cheese (8 ounces)

Steps:

  • 1. In a large skillet, cook and stir beef and pepper over medium heat until meat is no longer pink; drain. Stir in the sauce mix, tomato paste, and the water; bring to a boil. Reduce heat; simmer for 7-10 minutes or until thickened, stirring occasionally.
  • 2. Separate biscuits; press onto the bottom and up the sides of a greased 9-inch deep-dish pie plate to form a crust. Sprinkle with 1/4 cup Parmesan cheese; fill with meat mixture.

· ¾ cup water
· 1 tube flaky biscuits
· ¼ cup plus 1 tablespoon grated Parmesan cheese
· 2 cups mozzarella cheese

Steps:

  • 1. Preheat oven to 400 degrees F. 2. In a large skillet, cook and stir beef and pepper over medium heat until met is no longer pink; drain. 3. Stir in the sauce mix, tomato paste and water; bring to a boil. Reduce heat; simmer for 7 to 10 minutes or until thickened, stirring occasionally. 4. Separate biscuits from each other, and then separate each biscuit into two layers (half it!) Press biscuits onto the bottom and sides of a greased deep-dish 9″ pie plate to form a crust. Smush biscuits to seal any gaps. Sprinkle with ¼ cup Parmesan cheese; fill with meat mixture. 5. Sprinkle with mozzarella cheese and 1 tablespoon Parmesan cheese. Bake for 15 to 18 minutes or until golden brown and cheese is melted.

12 ounces uncooked totini or fusilli pasta
1 pound mild Italian sausage
30+ Pepperoni slices
24 ounce jar of Marinara or Pomodoro sauce
16 ounce jar of Pizza Sauce
1/4 cup grated Parmesan cheese
8+ ounces of shredded Mozzarella cheese

Steps:

  • Grease a 9 x 13-inch baking dish and set it aside. Preheat the oven to 350°.
  • Cook the pasta in well-salted water according to the directions on the package for al dente, then drain and add to the bottom of the baking dish.
  • Brown the sausage, breaking it into small pieces, then drain off excess grease. Top the pasta with the sausage.
  • Wipe the pan to remove excess grease, then cook the pepperoni until slightly crisp.
  • Pour the sauces over the sausage.
  • Top the sauce with half the pepperoni.
  • Sprinkle the top with both kinds of cheese, then the rest of the pepperoni.
  • Bake for 30 minutes, then remove the foil and bake for 10 more minutes or until the cheese is melted and starts to brown.
