1-1/2 pounds lean ground turkey
1 can (14-1/2 ounces) diced tomatoes, undrained
2 teaspoons dried minced onion
2 teaspoons chili powder
1 teaspoon garlic powder
1 teaspoon seasoned salt
1/2 teaspoon ground cumin
1/4 teaspoon pepper
6 cups shredded lettuce
1/2 cup shredded reduced-fat Mexican cheese blend
6 tablespoons fat-free sour cream, optional

Steps:

  • In a large nonstick skillet, cook turkey over medium heat until no longer pink; drain. Stir in tomatoes and seasonings; heat through., Divide lettuce among six plates; top each with 2/3 cup turkey mixture, 4 teaspoons cheese and 1 tablespoon sour cream if desired.

I got this recipe from a friend who takes this to friends needing a meal. It's soooo good, and the best of all the taco salads out there!

Number Of Ingredients 8

1 lb lean ground beef
16 ounces mixed salad greens (or more to taste)
2 tomatoes, chopped
6 green onions, sliced
1 (15 ounce) can kidney beans, drained
1 (16 ounce) bottle Catalina dressing
4 cups grated cheddar cheese
1 (16 ounce) bag cool ranch Doritos (the large size)

Steps:

  • Brown ground beef and drain off any grease.
  • Meanwhile, in very large salad bowl combine salad, tomatoes, green onions and kidney beans. Toss well.
  • Add slightly cooled beef and Catalina dressing. Mix well.
  • Add cheese and toss again.
  • Lightly smash chips and add to salad.
  • Toss and serve immediately.
