MOM'S CREAM CHEESE PIE

1 1/2 cups graham cracker crumbs
6 tablespoons unsalted butter, melted
1/4 cup confectioners' sugar
1 teaspoon ground cinnamon
12 ounces cream cheese, at room temperature
3/4 cups granulated sugar
2 teaspoons vanilla extract
2 large eggs, at room temperature
1 cup sour cream
3 1/2 tablespoons granulated sugar
1 teaspoon vanilla extract

Steps:

  • For the graham cracker crust: Preheat the oven to 350 degrees F.
  • Combine the graham cracker crumbs, melted butter, confectioners' sugar and cinnamon in a small bowl. Press into a 9-inch pie pan. Bake for 10 minutes. Cool completely before filling. Leave the oven on.
  • For the cream cheese filling: Put the cream cheese, granulated sugar, vanilla and eggs in a medium bowl and beat with a hand mixer on medium speed until smooth. Pour the filling into the cooled crust and bake until set, 15 to 20 minutes. Cool 5 minutes before topping; leave the oven on.
  • For the sour cream topping: Combine the sour cream, granulated sugar and vanilla in a small bowl and mix until smooth. Spread onto the pie and bake 10 minutes. Cool to room temperature, then refrigerate until cold, about 4 hours. Slice and serve.

48 vanilla wafers, finely crushed (about 1-1/2 cups)
1/4 cup butter, melted
1-1/4 cups BAKER'S ANGEL FLAKE Coconut, divided
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese
2 pkg. (3.4 oz. each) JELL-O Vanilla Flavor Instant Pudding
2 cups plus 1 Tbsp. cold milk, divided
2 cups thawed COOL WHIP LITE Whipped Topping, divided
1 Tbsp. sugar

Steps:

  • Heat oven to 350ºF.
  • Combine wafer crumbs, butter and 1/4 cup coconut; press onto bottom and up side of 9-inch pie plate. Bake 10 min. Cool.
  • Microwave cream cheese in microwaveable bowl on HIGH 10 sec. or just until softened; stir until creamy. Beat pudding mixes and 2 cups milk in large bowl with whisk 2 min. Add half the cream cheese; mix well. Stir in 3/4 cup of the remaining coconut and 1 cup COOL WHIP. Pour into crust.
  • Add sugar and remaining milk to remaining cream cheese; mix well. Stir in remaining COOL WHIP; spread over pie. Refrigerate 3 hours. Meanwhile, toast remaining coconut.
  • Sprinkle toasted coconut over pie just before serving.

2 (8 ounce) packages cream cheese, softened
2 eggs
1 cup white sugar
1 teaspoon vanilla extract
1 cup sour cream
2 tablespoons white sugar
¼ teaspoon vanilla extract
1 (9 inch) prepared graham cracker crust

Steps:

  • Combine cream cheese, eggs, 1 cup sugar, and 1 teaspoon vanilla in the bowl of an electric mixer. Mix on low speed until smooth. Pour filling into graham cracker crust.
  • Bake at 350 degrees F (175 degrees C) for 35 minutes. Remove pie from oven. Raise oven temperature to 450 degrees F (230 degrees C).
  • In a small bowl, blend sour cream, 2 tablespoons sugar, and 1/4 teaspoon vanilla together. Gently spread mixture over pie.
  • Bake for five minutes before serving.

6 tablespoons butter
8 tablespoons all-purpose flour
2 cups milk
1 teaspoon salt
Pinch ground nutmeg
1 pound feta cheese
1 cup grated Kefalotiri Cheese or Parmesan
4 eggs, beaten
2 tablespoons chopped parsley leaves
3/4 pound phyllo dough (pastry sheets)
3/4 cup melted butter

Steps:

  • Preheat the oven to 350 degrees F.
  • Melt butter in small saucepan over low heat. Blend in flour until smooth. Gradually add milk, stirring constantly with wire whisk or wooden spoon. Add salt and nutmeg, stirring occasionally, simmer for 5 minutes, or until white sauce is thick. Mash feta cheese with a fork and combine with the grated cheese, well beaten eggs, parsley and white sauce.
  • Butter a 9 by 13-inch baking pan. Line with half the pastry sheets, brushing each sheet with butter, and letting them come up the sides of the pan. Pour in the cheese filling and cover with the remaining pastry sheets brushing each sheet with butter. Brush top with remaining butter and, with a sharp knife, score the top sheets into strips about 3 inches wide from 1 end of the pan to the other.
  • Bake until golden, about 45 minutes. Cut into squares and serve hot.

2 1/2 cups self rising flour
8 ounces nonfat sour cream or 8 ounces yogurt
1/4 cup chopped green onion
2 tablespoons butter
1/2 lb crumbled feta or 1/2 lb bulgarian cheese
1/4 cup grated romano cheese
1/2 cup grated edam cheese (any other cheese you have inn the house) or 1/2 cup another hard cheese (any other cheese you have inn the house)
4 ounces fat free cream cheese
1/2 cup fat free sour cream
2 -3 eggs
1/2 cup half-and-half or 1/2 cup heavy cream
salt (optional)
black pepper
2 tablespoons parmesan cheese
2 tablespoons sesame seeds
black pepper

Steps:

  • prepare dough by mixing ingredients together by hand until well blended.
  • refrigerate until filling is ready.
  • Cook the green onion in the butter/margarine over low heat until just cooked, and let cool at room temperature.
  • place the cheeses, cream cheese, sour cream and milk in a food processor.
  • pulse until blended.
  • The mixture does not need to reach a totally creamy consistency.
  • Mix in 2- 3 eggs depending on how thick you want the filling to be.
  • Season to taste with salt and pepper.
  • flatten out 2/3 of the dough in a 9X13 inch pan, and preheat oven to 350.
  • Pour filling into pan over crust.
  • roll the remaining dough between your palms into strips and lay over the filling back and forth (make a lattice pattern).

2 large eggs
1 sheet refrigerated pie pastry
1 teaspoon ground cinnamon, divided
1-3/4 cups ricotta cheese
4 ounces cream cheese, softened
3 tablespoons confectioners' sugar
1-1/2 teaspoons cornstarch
1/2 teaspoon vanilla extract
1/2 teaspoon salt

Steps:

  • Separate one egg. In a small bowl, lightly beat egg white; set aside. In another small bowl, combine egg and egg yolk; set aside., On a lightly floured surface, unroll pastry; cut in half. Roll out one half of pastry into an 8-in. circle. Transfer to a 7-in. pie plate; trim pastry even with edge.
