Since our family went gluten-free I am constantly looking for ways to modify our favorite meals. This one happened by chance but tasted a lot like Kentucky Fried Chicken™ coating. Yum!

½ cup coconut flour
¼ cup cornstarch
1 tablespoon granulated garlic
1 tablespoon ground paprika
1 tablespoon flaxseed meal
1 tablespoon dried parsley
1 ½ teaspoons baking powder
1 ½ teaspoons white sugar
1 ½ teaspoons onion powder
salt and ground black pepper to taste
2 ½ pounds bone-in center-cut pork chops
2 tablespoons coconut oil, or as needed

Steps:

  • Mix coconut flour, cornstarch, granulated garlic, paprika, flaxseed meal, parsley, baking powder, sugar, onion powder, salt, and pepper together in a shallow bowl.
  • Dredge pork chops in the coconut flour mixture until coated on both sides.
  • Heat coconut oil in a large skillet over medium-high heat until melted. Cook pork chops, covered, until browned, about 5 minutes. Flip and continue cooking until browned on the second side, about 3 minutes more.

4 pork chops
Old Bay Seasoning
paprika
salt or pepper
garlic powder
extra virgin olive oil

Steps:

  • Completely coat pork chops w/ old bay seasoning and paprika. Sprinkle with garlic powder and a little salt & pepper.
  • Start by covering & saute in skillet w/ extra virgin olive oil until browned or cooked through, turning occasionally. Can uncover part way through.
  • Variation: Instead of salt, you can use Mexican Adobo and Sazon seasoning. Wonderful!

I love this pork chop recipe. This is my families favourite way to eat pork chops. These pork chops are so easy to make and the clean up is very easy as well. Although they do cook in the oven for alittle over an hour, its well worth the wait. These pork chops are great served with rice and a salad.

6 pork chops (I prefer boneless)
3 tablespoons cooking oil
1 chopped onion
1 cup ketchup
1 cup water
1/2 cup vinegar
1/2 cup packed brown sugar
1 teaspoon soya sauce (Gluten free)
1 teaspoon salt

Steps:

  • Brown chops in 3 tablespoons oil in frying pan.
  • Put chops in casserole dish.
  • In medium sized bowl combine chopped onion, ketchup, water, vinegar, sugar, worcestershire sauce and salt.Stir.
  • Pour over chops in casserole dish. Cover and bake in 350 degree oven for 1 1/2 - 2 hours.

Number Of Ingredients 10

2 tablespoons plus 1-1/2 teaspoons Gluten-Free Flour Mixture, divided (recipe also on this page)
1/4 teaspoon salt
1/4 teaspoon pepper
2 boneless pork loin chops (4 ounces each)
2 tablespoons butter
1/4 teaspoon rubbed sage
1/8 teaspoon dried rosemary, crushed
1/2 cup sliced onion
1/2 cup unsweetened apple juice
2 tablespoons chopped walnuts

Steps:

  • In a large resealable plastic bag, combine 2 tablespoons flour mixture, salt and pepper. Add pork chops, one at a time, and shake to coat., In a large skillet, cook chops in butter over medium heat for 4-5 minutes on each side or until a thermometer reads 160° and juices run clear. Sprinkle with sage and rosemary; remove and keep warm., In the same skillet, saute onion in pan drippings. Combine remaining flour mixture and juice until smooth. Stir into skillet; add nuts. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with pork chops.
