1 1/2 cups flour, divided
1 1/2 cups sugar, divided
1/2 cup unsweetened applesauce, divided
1/2 teaspoon baking powder
2 tablespoons butter
1/2 cup peeled chopped apple
1/2 cup chopped dried apricot
1/2 cup chopped cranberries
1 whole egg
1 egg white
1 teaspoon lemon juice
1/2 teaspoon vanilla
1 teaspoon cinnamon

Steps:

  • Combine 1 ¼ cup flour, ½ cup sugar, 1/3 cup applesauce, and baking powder.
  • Cut in butter with pastry blender until mixture resembles coarse crumbs.
  • In separate bowl combine fruit, remaining applesauce, whole egg, egg white, lemon juice, and vanilla.
  • In separate bowl combine remaining sugar, remaining flour, and cinnamon; add to fruit mixture and stir lightly.
  • Press half of crumb mixture into bottom of sprayed 9x13 inch baking pan; top with fruit mixture and sprinkle with remaining crumb mixture.
  • Bake 40 minutes at 350 degrees or until lightly browned; broil, 4 inches from heat, 1 to 2 minutes or until golden brown.
  • Cool on wire rack 15 minutes.

2 pouches (1 lb 1.5 oz each) Betty Crocker™ sugar cookie mix
1 cup butter or margarine, softened
1/2 teaspoon almond extract
2 eggs
1 can (21 oz) cherry pie filling
1 cup powdered sugar
1 tablespoon milk
1/4 teaspoon almond extract

Steps:

  • Heat oven to 350°F. Spray bottom and sides of 13x9-inch pan with cooking spray.
  • In large bowl, stir base ingredients until soft dough forms. Press half of dough in bottom of pan.
  • Spread pie filling over dough. Drop remaining dough by teaspoonfuls over filling.
  • Bake 45 to 50 minutes or until golden brown. Cool 10 minutes.
  • In small bowl, stir glaze ingredients until smooth. If necessary, add additional milk, 1 teaspoon at a time, until thin enough to drizzle. Drizzle glaze over warm bars. For bars, cut into 6 rows by 4 rows. Store covered at room temperature.

No time to make a fruitcake for the holidays? This quick bar cookie will satisfy your cravings. This recipe combines the best of several recipes I've tried over the years.

2 eggs
1 cup sifted powdered sugar
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup chopped walnuts or 1/2 cup pecans
1 cup candied fruit
1/3 cup currants
1 cup powdered sugar
2 tablespoons rum

Steps:

  • Beat eggs with a mixer until they are golden yellow and doubled in volume - 2 or 3 minutes.
  • Add in 1 cup sifted powdered sugar and vanilla.
  • Mix together flour, baking powder and salt.
  • Take 2 tablespoons of flour mixture and stir in with candied fruit, nuts and currants, to keep fruit from clumping in the batter.
  • Add the rest of the flour mix to the eggs and sugar.
  • Fold fruit and nuts into batter.
  • Spoon batter into a well greased 11" by 7" pan.
  • Some years I use parchment paper instead.
  • Bake at 350 degrees for 30 minutes.
  • Mix together rum and second cup of powdered sugar to make a glaze.
  • Spread the icing onto the bars about 5 minutes after they've come out of the oven.
  • Let bars cool and cut into bars.

1 (11 ounce) can mandarin oranges, drained
1 1/2 teaspoons ground cinnamon
1 banana
1/2 cup margarine or 1/2 cup butter, softened
1/4 cup unsweetened applesauce
1 cup apple, peeled, diced 1/2 inch
1 cup brown sugar, firmly packed
1/2 cup raisins or 1/2 cup currants
1 3/4 cups all-purpose flour
1/4 cup orange juice
1 1/2 cups oatmeal, any variety, uncooked

Steps:

  • Heat oven to 375 degrees.
  • In a medium bowl, combine oranges, banana, apples, raisins, orange juice, and 1 tsp of the ground cinnamon; set aside.
  • Beat together margarine, applesauce and brown sugar until creamy. Add flour, oatmeal and remaining 1/2 teaspoon of ground cinnamon, to the sugar mixture; mix well.
  • Measure out 1 1/4 cups of the batter and reserve for topping. Lightly press the remaining oat mixture onto bottom of ungreased 9" x 13" baking pan. Bake 15 minutes.
  • Remove from oven; spread fruit mixture evenly over crust to within 1/4" of the edges. Sprinkle oat mixture evenly over fruit, patting gently. Bake 16-20 minutes or until golden brown.
  • Cool completely; cut into bars.
  • Store loosely covered.
