1 teaspoon crushed red pepper flakes
1 tablespoon fresh ginger, peeled and grated
2 tablespoons fresh lime juice
2 tablespoons hoisin sauce
1 tablespoon low sodium soy sauce
3 garlic cloves, minced
4 boneless skinless chicken breast halves (4 oz. each)
cooking spray

Steps:

  • Prepare grill. Combine first 6 ingredients in a large zip-top plastic bag; add chicken to bag. Seal and marinate in refrigerator for 30 minutes. Remove chicken from bag; discard marinade.
  • Place the chicken on grill rack coated with cooking spray, and grill for 5 minutes on each side or until the chicken is done.

Don't get on my case if this isn't authentically Indonesian, okay? When I found the recipe, it was called Indonesian Chicken, and, not being Indonesian or knowing anyone from Indonesia, I can neither confirm nor deny that this is, indeed, Indonesian Chicken. It is, however, definitely a recipe for chicken, and a mighty tasty one at that. The peanut sauce is also useful to put on things that you don't want to serve naked, such as noodles, rice, or steamed veggies.

2 tablespoons soy sauce
1 tablespoon sugar
1 tablespoon lemon juice
1/4 teaspoon garlic powder
1/8 teaspoon black pepper
4 chicken breasts, skinned,boned and cut into 1-inch pieces
2 tablespoons olive oil
1/4 cup chopped green onion (including tops)
2 tablespoons olive oil
1/2 cup peanut butter (preferably creamy type)
2 cups water
1 tablespoon soy sauce
1 tablespoon lemon juice
1 teaspoon sugar
1/4 teaspoon ground ginger
1/4 teaspoon garlic powder
1/8 teaspoon dried cayenne pepper

Steps:

  • Combine soy sauce, sugar, lemon juice, garlic powder and pepper.
  • Add chicken and marinate 30 minutes.
  • Skewer pieces on wooden skewers if desired, and brush with oil.
  • Broil 3 inches from heat for 5 minutes.
  • Can also be cooked on preheated grill pan or stir fried, if you prefer.
  • Meanwhile, prepare spicy peanut sauce.
  • Saute green onion in the oil until limp.
  • Remove from heat and add peanut butter.
  • Gradually stir in water, then add remaining ingredients.
  • Cook over medium heat, stirring constantly, until it comes to a boil.
  • Reduce heat and simmer, uncovered, for 5 minutes, until the sauce is thickened enough to coat a spoon.
  • Stir occasionally while simmering.
  • Serve chicken with the spicy peanut sauce for dipping.
  • May also be served over hot cooked rice or noodles.

5 cloves garlic, peeled, divided
3 shallots, divided
1 ½ inch piece fresh ginger root, peeled and chopped
1 ½ inch piece galangal, thinly sliced
½ teaspoon ground coriander
2 teaspoons salt, divided
4 chicken thighs
1 ¼ cups water
2 salam leaves (substitute with curry leaves)
3 teaspoons oil, divided, or as needed
½ tomato
11 fresh red chile pepper, finely chopped
4 tablespoons key lime juice, or to taste
1 teaspoon shrimp paste
½ teaspoon white sugar
1 bunch lemon basil (kemangi)

Steps:

  • Combine garlic, 1 shallot, ginger, galangal, coriander, and 1 1/2 teaspoon salt in a mortar and pestle; pound into a paste.
  • Combine chicken with the garlic paste, water, and salam leaves in a pot. Bring to a boil, reduce heat, and simmer until chicken is cooked through, about 20 minutes.
  • Meanwhile, heat 2 teaspoons oil in a skillet. Once the chicken is fully boiled, fry the chicken in the skillet until it's golden brown, 5 to 10 minutes.
  • For the sambal (chili sauce) heat 1 teaspoon oil in a skillet over medium heat and cook remaining 2 shallots, tomato, and red chiles for 2 minutes. Move to a mortar and pestle and add lime juice, shrimp paste, 1/2 teaspoon salt, sugar, and lemon basil. Pound everything into a paste.
  • Place the sambal (chile sauce) at the bottom of a serving plate and place the chicken on top of the dish.

1 (3 pound) whole chicken, cut into 8 pieces
1 teaspoon ground turmeric
salt to taste
¼ cup dried red chile peppers
3 fresh red chile pepper, finely chopped
4 cloves garlic, minced
1 red onion, chopped
1 (3/4 inch thick) slice fresh ginger root
2 tablespoons sunflower seed oil
1 cinnamon stick
2 whole star anise pods
5 whole cloves
5 cardamom seeds
2 tomatoes, sliced
2 tablespoons ketchup
1 teaspoon white sugar, or to taste
½ cup water

Steps:

  • Rub the chicken with turmeric powder and salt. Set aside. Soak the dried red chile peppers in hot water until softened. Blend the softened dried chile, fresh red chile pepper, garlic, onion, and ginger in a blender to a paste.
  • Heat the oil in a large skillet over medium-high heat. Brown the chicken in the hot oil until golden on all sides. Remove the chicken from the skillet and set aside. Remove excess oil from the skillet, leaving about 1 tablespoon. Cook and stir the chile paste with the cinnamon, star anise, cloves and cardamom seeds until fragrant. Return the chicken to the skillet. Stir in the water, adding more if needed. Toss in the tomatoes and stir in the ketchup and sugar. Bring to a boil then reduce heat to medium-low and simmer until no the chicken longer pink at the bone and the juices run clear, about 15 minutes. Serve hot.

1 pound chicken thighs, cut into 1/2-inch pieces
¾ teaspoon salt
1 pinch ground white pepper
1 tablespoon sunflower seed oil
24 wooden skewers
1 cup water
5 tablespoons peanut butter
2 tablespoons kecap manis (sweet soy sauce)
1 tablespoon brown sugar
2 cloves garlic, minced
½ teaspoon salt
1 tablespoon lime juice

Steps:

  • Combine chicken thighs, 3/4 teaspoon salt, white pepper, and sunflower seed oil in a bowl. Cover and refrigerate for 1 to 2 hours.
  • Soak wooden skewers in water to prevent burning during cooking.
  • Bring water, peanut butter, kecap manis, brown sugar, garlic, and 1/2 teaspoon salt to a boil in a small saucepan; stir to combine. Remove from heat and add lime juice.
  • Thread marinated chicken onto skewers. Set about 2 tablespoons peanut sauce aside in a small bowl and brush the sauce in the bowl over chicken.
  • Heat a grill pan or large skillet over medium-high heat. Arrange chicken skewers in batches on grill pan and cook until chicken is no longer pink in the center, 1 to 2 minutes per side. Serve skewers with remaining peanut sauce from the saucepan.

1 cup honey
3/4 cup soy sauce
1/4 cup minced garlic (8 to 12 cloves)
1/2 cup peeled and grated fresh ginger root
2 (3 1/2 pound) chickens, quartered, with backs removed

Steps:

  • Cook the honey, soy sauce, garlic, and ginger root in a small saucepan over low heat until the honey is melted. Arrange the chicken in 1 layer in a shallow baking pan, skin side down, and pour on the sauce. Cover the pan tightly with aluminum foil. Marinate overnight in the refrigerator.
  • Preheat the oven to 350 degrees F.
  • Place the baking pan in the oven and bake for 30 minutes. Uncover the pan, turn the chicken skin side up, and raise the temperature to 375 degrees F. Continue baking for 30 minutes or until the juices run clear when you cut between a leg and thigh and the sauce is a rich, dark brown.

2 ½ cups white sugar
3 cups dark soy sauce
½ cup water
½ star anise pod
2 fresh curry leaves
1 (1 inch) piece fresh ginger root, sliced
4 cloves garlic, minced

Steps:

  • Heat sugar in a heavy saucepan over medium-low heat until sugar becomes lightly brown. Slowly stir in soy sauce. Once the sugar and soy sauce are combined, stir in the water, star anise, curry leaves, ginger, and garlic. Increase heat and bring to a boil. Simmer until the sugar is dissolved, about 15 minutes. Remove from heat and cool. Strain sauce and pour into a lidded bottle or jar. Store in the refrigerator.
