ENGLISH MUSTARD

English Mustard image

This is a modification of English Mustard #70193. When I had originally tried that, it was still quite watery, so I changed the amounts of mustard seeds and powder. I also added some other spices and such, to give it a bit more flavor. Use any color (brown, yellow, black) mustard seeds you wish. I end up making a batch about every three weeks or so because it doesn't last long in my house! Be warned that this is VERY HOT AND SPICY. Tastes great on ham or pork.

Categories     European

Time 30m

Yield 1 Cup, 16 serving(s)

Number Of Ingredients 9

2 tablespoons mustard seeds
4 tablespoons mustard powder (Coleman's)
1/4 cup water
1/2 teaspoon cayenne pepper
1/2 teaspoon turmeric powder
1 teaspoon salt
1/2 teaspoon honey
1/2 teaspoon vinegar
1/4 cup cold beer (Your preference)

Steps:

  • Toast the mustard seeds in a small dry pan (I use a cast iron pan) over medium heat, shaking occasionally, until the seeds start to pop. Remove from heat and tip the seeds into a mortar and pestle and crush them a few times. (If you don't have a mortar and pestle, tip them into a bowl and use the back of a spoon to crush them).
  • In a glass or pottery bowl, blend the crushed mustard seeds, mustard powder and water thoroughly and let stand for 20 minutes. (You can drink the remaining beer while you're waiting!).
  • Add the cayenne pepper, tumeric powder and salt. Stir to combine, then add the honey, vinegar and beer.
  • If the mixture seems too thin, add up to one more tablespoon of mustard powder to help thicken it.
  • Pour mustard into a small jar, cover and refrigerate for 2 to 3 days before using to let the flavors combine.
  • Enjoy!

ENGLISH MUSTARD FROM SCRATCH

English Mustard From Scratch image

This recipe calls for brown and yellow mustard seed; however, it also requires some mustard powder. I would think that you can grind enough mustard seed to give you 1 cup of powder, using it as directed. Maybe a mix of brown and yellow depending on how sharp you prefer the mustard.

Provided by Anne Edgell

Categories     European

Yield 3 cups

Number Of Ingredients 10

1 cup brown mustard seeds (brown seeds will produce sharp mustard)
1/4 cup yellow mustard seeds (yellow produces mild mustard)
1 cup dark beer
1 1/4 cups white wine vinegar
1 cup mustard powder, combined with 1 cup water (let sit 20 minutes)
1 teaspoon sugar
1 teaspoon salt
1 teaspoon allspice, ground
1/4 teaspoon turmeric, ground
1/4 teaspoon mace, ground

Steps:

  • In a non-reactive container, combine mustard seeds with beer and vinegar. Let sit 48 hours. Check periodically to make sure seeds are covered by liquid; add more if necessary.
  • Transfer seeds and liquid to a food processor. Add remaining ingredients. Process until creamy, four to six minutes.
  • Transfer to jars. Allow mustard to mature, 3 to 4 weeks, before serving.
  • Note: You can vary the mustards flavor by substituting your favorite ingredients, the basic technique remains the same.

WILD SALMON WITH ENGLISH PEAS AND MUSTARD BEURRE BLANC

Wild Salmon with English Peas and Mustard Beurre Blanc image

Blanched English peas are scattered around a simple roasted side of wild salmon. Beurre blanc, served on the side, is essentially a warm vinaigrette made with butter instead of oil. Finish this dinner dish with a sprinkling of chives and-if you have them-a few flowering pea shoots.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Seafood Recipes     Salmon Recipes

Time 40m

Number Of Ingredients 11

1 cup shelled green peas (from 1 pound in pods), or 1 cup frozen peas, thawed
Coarse salt and freshly ground pepper
1 side wild sockeye salmon (1 1/4 pounds)
1 tablespoon extra-virgin olive oil
1 shallot, minced
3/4 cup dry white wine, such as Sauvignon Blanc
1/4 cup champagne vinegar
1 tablespoon whole-grain mustard
1 stick cold unsalted butter, cut into tablespoons
2 tablespoons finely sliced chives, for serving
Flowering pea shoots, for serving (optional)

Steps:

  • Blanch fresh peas in a medium pot of salted boiling water until bright green and just tender, 3 to 4 minutes. Transfer to an ice-water bath and let cool completely. Drain. (If using frozen peas, skip this step.)
  • Preheat oven to 400 degrees. Rub salmon on both sides with oil and season with salt and pepper. Transfer to a parchment-lined baking sheet, skin-side down. Roast until medium-rare, 10 to 12 minutes.
  • Meanwhile, in a small saucepan, combine shallot, wine, and vinegar. Bring to a boil, then reduce to a simmer and cook until liquid is reduced to about 2 tablespoons.
  • Reduce heat to low. Whisk in mustard to combine, then whisk in butter, 1 tablespoon at a time, adding each piece as soon as previous one melts. Season with salt and pepper. (If not serving right away, keep beurre blanc warm over a pan of simmering water; do not let sauce simmer.)
  • Arrange salmon on a platter and top with peas. Sprinkle with chives, top with pea shoots, and serve, with warm beurre blanc alongside.

DRIED ENGLISH MUSTARD

Dried English Mustard image

For those of us across the pond (and in other parts of the world too) who can't easily find this neat condiment, and/or only need a little bit and don't want a huge bottle, for making traditional English dishes. The flour gives it substance and turmeric heats it up-- it's a fab substitute for plain ground mustard when making macaroni and cheese sauce! Feel free to adjust upward or downward depending on how much you need-- this is to make a "spice rack" sized bottle. In a fancy spice bottle, it makes a nice gift for the Anglophile in your life! 1 SERVING = 1 TSP, 12 TSP IN 4 OZ

POACHED CHICKEN WITH HOT ENGLISH MUSTARD

Poached Chicken with Hot English Mustard image

The British traditionally serve freshly prepared hot English mustard with mild-flavored cold meats, such as ham or boiled tongue. We've paired this mustard's piquancy with poached chicken.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Chicken

Number Of Ingredients 11

2 carrots, peeled and cut in half
1 stalk celery, cut in half
2 onions, cut in half
3 stems fresh flat-leaf parsley
10 whole black peppercorns
1 four-pound whole chicken
Coarse salt
4 slices French bread, about 1/3 inch thick
1 tablespoon extra-virgin olive oil
1 small bunch watercress
1/4 cup hot English mustard, or to taste

Steps:

  • Place carrots, celery, onions, parsley and peppercorns in a stockpot. Rinse chicken with cold water, and pat dry. Add chicken. Fill stockpot with enough cold water to cover chicken by 1 inch.
  • Set over medium-high heat, and bring water to a boil. Reduce heat, and allow to simmer, skimming off any foam that rises to the surface, for 1 hour.
  • Remove chicken from stock; set aside. Strain stock through a very fine sieve or chinois. Discard solids. Transfer stock to a metal bowl. Set bowl in another bowl, full of ice water. Let stand until stock is completely chilled, replacing ice if necessary, and fat can be skimmed off surface of stock.
  • Meanwhile, when chicken is cool enough to handle, remove skin from chicken and discard. Carefully pull meat off chicken bones; it should fall away quite easily, keeping the meat in large chunks when possible.
  • Return 5 cups stock to stockpot or large saucepan. Bring to a boil; adjust seasoning with salt. Reduce heat to a simmer; simmer until stock has become very flavorful and reduced by 1 cup, about 15 minutes. Add pieces of chicken; cook just until chicken is heated through, about 5 minutes.
  • Toast bread until golden, and brush with olive oil. Serve chicken in a wide bowl with a ladle of hot broth. Add a handful of watercress to each bowl. Place a spoonful of mustard on toast, sprinkle with salt, and serve on the side.
