CURLY ENDIVE AND APPLE SMOKED BACON SALAD



Curly Endive and Apple Smoked Bacon Salad image

1 pound thick cut slab bacon, cut into 1/4- inch pieces, lardons
2 tablespoons chopped shallots
1 tablespoon Dijon mustard
1/4 cup white wine vinegar
Salt
Freshly ground black pepper
1/2 cup olive oil
1 head chicory, cut into bite-size pieces, well washed and dried
1 cup fresh croutons

Steps:

  • Place bacon in a hot skillet over low heat. Cook completely to render fat. Remove lardons from skillet and reserve on paper towels. From the skillet remove 2 tablespoons of rendered fat to a bowl. Add shallots to fat. Stir in mustard and vinegar. Season with salt and pepper. Whisk in oil until dressing is emulsified.
  • Toss chicory pieces with bacon, vinaigrette and croutons.

2 tablespoons finely chopped green onion

1 bunch curly endive, torn
4 slices bread, cubed and toasted

Steps:

2 tablespoons white-wine vinegar
1 tablespoon red-wine vinegar
1/2 teaspoon Dijon mustard
1/4 teaspoon sugar
2 tablespoons extra-virgin olive oil
1 small shallot, minced
1/8 teaspoon salt
freshly ground black pepper to taste
2 tablespoons unsalted butter
1 cup walnuts, chopped coarse
1/2 teaspoon sugar
2 large Belgian endives
2 Granny Smith apples
1/2 cup Stilton cheese, crumbled
2 tablespoons chopped fresh tarragon leaves
freshly ground white pepper to taste

Steps:

  • Make vinaigrette:
  • In a small bowl whisk together vinegars, mustard, and sugar. Add oil in a stream, whisking, and whisk vinaigrette until emulsified. Stir in shallot, salt and black pepper.
  • In a small saucepan melt butter over moderate heat and add walnuts and sugar. Cook walnuts, stirring, until golden, about 2 minutes, and transfer to a bowl.
  • Cut endives lengthwise into julienne strips. Halve and core apples and cut into julienne strips.
  • In a large bowl combine endives, apples, walnuts, Stilton, tarragon, and vinaigrette, tossing gently, and season with salt and white pepper.

12 slices smoked bacon, cut into bite size pieces
2 ounces butter
2 garlic cloves, crushed
4 thick slices bread, crusts removed, cut into 1/2 inch cubes
2 ounces Stilton cheese, crumbled
4 tablespoons mayonnaise
4 1/2 tablespoons light cream
black pepper
mixed salad green

Steps:

  • Cook the bacon in a pan for 7-8 minutes or until crisp. Remove with a slotted spoon and drain on absorbent paper.
  • Add the butter to the pan and melt. Add the garlic and bread and cook for 3-4 minutes until crisp and golden. Drain on absorbent paper.
  • Mix the cheese and mayonnaise together. Stir in the cream and black pepper. Beat well to blend.
  • Mix the salad leaves, bacon and croutons together. Place on serving plates, top with the dressing and serve.

1/2 pound bacon strips, diced
1 medium onion, chopped
2 tablespoons sugar
1-1/2 teaspoons cornstarch
1/2 teaspoon salt
2 tablespoons cider vinegar
1 cup milk
1 egg, lightly beaten
3 bunches curly endive, torn (about 12 cups)
3 hard-boiled large eggs, sliced

Steps:

  • In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels; drain, reserving 1 tablespoon drippings. Set bacon aside. Saute the onion in the drippings until tender. Add the sugar, cornstarch, salt and vinegar; stir until smooth. Gradually stir in the milk until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. , Stir a small amount of hot mixture into egg; return all to the pan; stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat., In a large salad bowl, combine the endive, hard-boiled eggs and reserved bacon. Add desired amount of warm dressing; toss to coat. Refrigerate leftover dressing.

3 tablespoon sugar
1 tablespoon all purpose flour
3 tablespoons plus 1 teaspoon apple cider vinegar
1 large egg
1 cup canned vegetable broth, low-salt chicken broth or water
6 bacon slices, cut into 1-inch piece
1 large head curly endive or other bitter lettuce (such as escarole), torn into bite-size pieces

Steps:

  • Combine sugar and flour in small bowl. Gradually whisk in vinegar, then egg. Whisk in broth.
  • Cook bacon in heavy large skillet over medium heat until crisp and brown. Whisk in vinegar mixture. Stir until dressing comes to simmer and thickens. Season dressing to taste with salt and pepper. (Can be prepared 1 hour ahead. Let stand at room temperature. Rewarm over low heat before continuing.)
  • Place endive in large bowl. Toss with enough dressing to coat. Serve, passing remaining dressing separately.

1 whole star anise*
1/3 cup vegetable oil
3 tablespoons fresh orange juice
1 teaspoon Port

2 firm-ripe pears (preferably Bosc)
4 Belgian endives
5 ounces Stilton cheese, crumbled (about 1 cup)
Garnish: chopped fresh parsley leaves or fresh chervil sprigs
*available at specialty foods shops and some supermarkets

Steps:

  • Make dressing:
  • Chop shallot and crush star anise. In a blender blend shallot, oil, orange juice, and Port until emulsified. Transfer mixture to a small bowl or jar and add star anise and salt and pepper to taste. Chill dressing, covered, at least 4 hours and up to 1 day. Pour dressing through a sieve into a bowl and discard solids. Whisk dressing until combined well.
  • Make salad:
  • Preheat oven to 400°F. and line a baking sheet with parchment paper.
  • Halve and core pears. Cut pears lengthwise into 1/4-inch-thick slices and arrange in one layer on baking sheet. Roast pears in middle of oven until pale golden, about 10 minutes, and cool on baking sheet.
  • Separate endive leaves, and, if desired, cut leaves crosswise into 1 1/2-inch-thick pieces.
  • On a platter or 4 salad plates arrange pears, endive leaves, and Stilton and drizzle dressing on top. Garnish salad with parsley or chervil.

1 large shallot, chopped

3 bacon slices
16 cups bite-size pieces curly endive (from 1 large head)
1 bunch radishes, trimmed, thinly sliced

Steps:

  • Place coriander seeds in heavy small skillet. Heat over medium-high heat until fragrant and dark in color, about 4 minutes. Remove from heat and cool. Place in blender. Add chopped shallot and red wine vinegar. Blend until coriander seeds are chopped, about 1 minute. Add olive oil and blend well. (Can be prepared 1 day ahead. Cover with plastic wrap and refrigerate. Bring mixture to room temperature before using.)
  • Cook bacon in large nonstick skillet over medium heat until crisp. Transfer bacon to paper towels; reserve bacon drippings. Whisk bacon drippings into dressing. Season dressing with salt and pepper. Crumble bacon.
  • Combine curly endive, radishes and bacon in large bowl. Add enough dressing to coat salad; toss to blend.
