2 cups all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup cold unsalted butter, cut into pieces
1 cup mashed cooked sweet potato, cooled
2 tablespoons packed light brown sugar
5 slices cooked bacon, drained and crumbled
3/4 cup buttermilk (or up to 1 cup if needed)

Steps:

  • Preheat oven to 425 degrees F.
  • Lightly grease a large baking sheet and set aside.
  • In a bowl; stir together the flour, baking powder, baking soda, and salt.
  • Add the butter and work in with a pastry blender or your fingers until the mixture resembles coarse crumbs.
  • In a bowl; whip the sweet potatoes with the brown sugar until very smooth. Add to the flour mixture and mix in lightly but thorougly with your fingers.
  • Add 3/4 cup of the buttermilk and the bacon and gently work to make a smooth dough, slightly sticky, being careful not to overwork and adding more buttermilk as needed, 1 tsp at a time.
  • Turn out onto a lightly floured surface and pat out into a large rectangle about 1/2-inch thick. Cut into 10 large biscuits and place on the prepared baking sheet.
  • Bake until golden brown and risen, 15 to 18 minutes.
  • Remove from the oven and serve hot with butter.

2 1/2 cups all-purpose flour
2 tablespoons baking powder
1/8 teaspoon allspice
1/8 teaspoon ground cloves
1/2 teaspoon salt
1/4 cup light brown sugar, packed
1/4 cup unsalted butter, chilled
1/4 cup shortening, chilled
1 1/2 cups sweet potatoes, mashed (from fresh cooked not canned)
2 tablespoons milk

Steps:

  • Heat oven to 425 degrees.
  • Sift the flour, baking powder, allspice, cloves, and salt in a large bowl. Use the tips of your fingers to blend in the brown sugar.
  • Cut in the chilled butter and shortening with a pastry cutter or pulse in a food processor until the mixture resembles coarse, crumbly meal. Next, stir in the mashed sweet potatoes and knead until the dough just holds together.
  • Turn the dough onto a lightly floured surface. Knead gently for 1 minute, adding a little flour as necessary to incorporate all the ingredients. Do not overwork.
  • Pat the dough in a 1/2-inch thick circle and let it rest, covered with a clean towel, for 10 to 15 minutes.
  • Cut out the biscuits with a 2-inch round cutter dipped in flour. Do not twist the cutter; press down then lift. Gather the scraps, pat out again, and cut into biscuits. Arrange them about 3/4-inch apart on an ungreased baking sheet and brush the tops with milk. Bake until golden brown, about 10 to 12 minutes. Cool the biscuits on a rack.

These are some of the best candied sweet potatoes I have ever eaten! Kicked up with bourbon, real vanilla bean, brown sugar, butter, orange, and cinnamon. YUM!

8 large sweet potatoes, peeled and cut into 1/8ths
3 cups brown sugar
1 cup water
1 cup fresh orange juice
2 vanilla beans, split in half lengthwise (or 1 tablespoon vanilla bean paste)
2 teaspoons orange zest
2 teaspoons ground cinnamon
1/2 teaspoon salt
1/2 cup Bourbon (I use Jack Daniels)
1/2 cup butter, cut into pieces

Steps:

  • Preheat the oven to 375 degrees F.
  • In a large heavy pot, combine the potatoes, sugar, water, orange juice, vanilla beans, orange zest, cinnamon, and salt. Bring to a simmer over high heat.
  • Lower the heat, cover and simmer, stirring occasionally, until the potatoes are tender, about 20 minutes. Strain the potatoes out of the sauce and place in a casserole dish. Return the sauce to the pan.
  • Add the bourbon to the sauce and cook (stirring often) on medium-high heat until syrup is thickened, about another 15-30 minutes.
  • Pour the syrup over the potatoes and place in the oven. Bake until the potatoes are browned, about 10-15 minutes. Remove from the heat and add the butter, stirring gently to incorporate.
  • Serve immediately.

2 slices bacon
2 ounces butter
1 egg yolk
2 ounces cheddar cheese, grated
2/3 cup flour
1 pinch salt
2 ounces cheese, grated, extra

Steps:

  • Remove rind from bacon, fry until golden on both sides, chop finely.
  • Beat butter until creamy, add egg yolk, mix well.
  • Add grated cheese, mix well.
  • Add sifted flour and salt, mix to a firm dough; wrap in plastic wrap and refrigerate 30 minutes.
  • Roll dough out on a lightly floured surface to 1/8 inch thick.
  • Cut into rounds with a 1 1/2 inch fluted cutter.
  • Put rounds on greased oven trays, sprinkle with bacon and extra cheese. Bake in moderate oven 10 - 12 minutes or until golden.
  • Allow to cool on a wire rack.

2 cups all-purpose flour
4 teaspoons sugar
3 teaspoons baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 cup shortening
1 cup mashed sweet potatoes
1/2 cup half-and-half cream
HONEY BUTTER:
1/2 cup butter, softened
2 tablespoons honey
1 teaspoon ground cinnamon

Steps:

  • In a small bowl, combine the first 6 ingredients. Cut in shortening until mixture resembles coarse crumbs. Combine sweet potatoes and cream; stir into crumb mixture just until moistened. Turn onto a lightly floured surface; gently knead 8-10 times., Pat or roll out to 1/2-in. thickness; cut with a floured 2-1/2-in. biscuit cutter. Reroll and repeat once. Place 1 in. apart on a greased baking sheet., Bake at 400° for 9-11 minutes or until golden brown. Meanwhile, in a small bowl, beat the butter, honey and cinnamon until blended. Serve with warm biscuits.

1 1/4 cups self-rising flour
3/4 cup cake flour
3/4 teaspoon baking soda
1 tablespoon sugar
1/2 teaspoon salt
4 tablespoons unsalted butter, very cold
4 slices bacon, rendered and small diced
1/3 cup shredded cheddar cheese
2 tablespoons chopped green onions
1 1/4 cups heavy cream
1/4 cup all-purpose flour
3 tablespoons unsalted butter, melted

Steps:

  • Preheat oven to 475°F Sift the self-rising flour, cake flour, baking powder, baking soda, sugar and salt into a large bowl. Using your fingers or a pastry cutter, work the 4 tablespoons cold butter into the flour until the pieces are pea size.
  • Add the bacon, cheddar and green onions to the flour mixture. Pour the heavy cream into the flour mixture and, with your hands or a silicone spatula, stir just until the cream and flour come together to form a dough.
  • Use 2 tablespoons of the melted butter to brush the inside of the Cast-Iron Biscuit Pan (Emeril has his own line, but I think any biscuit pan would work). Carefully spoon mixture into each well being sure to divide the mixture evenly between all wells. This will ensure even baking. Gently smooth each top with the back of a spoon or spatula. Brush the tops with the remaining tablespoon of melted butter.
  • Bake in the oven for 10 or 12 minutes, or until golden brown. Allow to cool briefly before running a thin, sharp, small blade around the edge of the biscuit pan and inverting the pan to release the biscuits.
