This kid's classic and favorite leaves time for the family to enjoy summer evenings together. The recipe for the flavorful meat sauce can easily be doubled. Feel free to make a bigbatch of it over the weekend, then freeze it in smaller portions for busy weeknights.

Time 30m

Number Of Ingredients 13

2 tablespoons plus 2 teaspoons olive oil
1 medium onion, diced small (2 cups)
1 large celery stalk, diced small (1/2 cup)
1/2 green bell pepper, diced small (1/2 cup)
Coarse salt and ground pepper
2 teaspoons minced garlic
1 1/2 pounds lean ground beef
3 tablespoons dark-brown sugar
3 tablespoons Worcestershire sauce
2 cups prepared tomato sauce
1 cup homemade beef or chicken stock or low-sodium chicken broth
2 teaspoons hot-pepper sauce (optional)
4 hamburger buns, split

Steps:

  • In a large skillet, heat 2 teaspoons oil over medium-high. Add onion, celery, bell pepper, season with salt and pepper, and cook until vegetables soften, about 2 minutes. Add garlic and cook 1 minute. Add beef, breaking up meat with a wooden spoon, and cook until browned, 2 minutes. Add brown sugar, Worcestershire sauce, tomato sauce, and stock and bring to a boil. Reduce to a simmer and cook, stirring occasionally, 15 minutes. Add hot-pepper sauce (if using) and remove beef mixture from heat.
  • Meanwhile, heat broiler, with rack in top position. Place buns, cut side up, on a baking sheet and lightly brush with 2 tablespoons oil. Broil until buns are golden, about 3 minutes. (Alternatively, toast on a grill pan or in a skillet, oiled side down, over medium-high.)
  • Generously spoon beef mixture over toasted bun bottoms. Sandwich with bun tops and serve.

THE BEST SLOPPY JOES

The Best Sloppy Joes image

This is weeknight comfort food at its finest. We created a homemade sauce that is tangy and flavorful but also quick and easy. We used both ketchup and canned tomato sauce for lots of tomato-y zip and just a touch of brown sugar for a bit of sweetness and slight caramel finish. Green bell pepper is a key addition; it really enhances the other ingredients, elevating the flavor profile into the realm of a true sloppy joe.

Categories     main-dish

Time 30m

Yield 4 to 6 sandwiches

Number Of Ingredients 15

2 tablespoons unsalted butter
1 medium onion, diced
1 green bell pepper, diced
1 clove garlic, minced
1 pound lean ground beef
12 ounces (1 1/3 cup) tomato sauce
3/4 cup ketchup
2 tablespoons brown sugar
2 tablespoons Worcestershire sauce
1 tablespoon yellow mustard
1 tablespoon red wine vinegar
1 teaspoon paprika
Pinch of cayenne pepper
Kosher salt and freshly ground black pepper
6 hamburger buns, toasted

Steps:

  • Melt the butter in a large skillet over medium-high heat. Add the onions and peppers and cook, stirring occasionally, until softened and starting to caramelize in some spots, 6 to 7 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Stir in the beef and cook, breaking up the meat with a wooden spoon or spatula, until it is browned, no longer pink in the middle and cooked through, 7 to 8 minutes.
  • Stir in the tomato sauce, ketchup, brown sugar, Worcestershire sauce, mustard, red wine vinegar, paprika, cayenne pepper, 1 teaspoon salt and a generous amount of black pepper and simmer, stirring occasionally, until thickened and heated through, 5 to 6 minutes. Spoon the meat onto the toasted buns.

HOMEMADE SLOPPY JOES

Homemade Sloppy Joes image

Despite the name of this iconic retro dish, the secret to a great sloppy joe is a thick, rich, almost dry consistency, which allows the sandwich to be eaten with your hands. Serve on hamburger buns.

Time 1h10m

Yield 6

Number Of Ingredients 13

1 ½ pounds extra lean ground beef
½ onion, diced
2 cloves garlic, minced
1 green pepper, diced
1 cup water
¾ cup ketchup
1 dash Worcestershire sauce
2 tablespoons brown sugar
1 teaspoon Dijon mustard
1 ½ teaspoons salt, or to taste
½ teaspoon ground black pepper
1 cup water
1 pinch cayenne pepper to taste

Steps:

  • Place ground beef and onion in a large skillet. Turn heat to medium and cook and stir the mixture constantly until the beef is browned and forms small crumbles, about 10 minutes.
  • Stir in garlic and green bell pepper; cook and stir until softened, 2 to 3 minutes. Add 1 cup water and stir, scraping the pan to dissolve any brown flavor bits from the bottom of the skillet.
  • Mix in ketchup, Worcestershire sauce, brown sugar, Dijon mustard, salt, and black pepper. Add 1 more cup water and return mixture to a simmer. Reduce heat to low and simmer, stirring occasionally, until the liquid has evaporated and the mixture is thick, about 40 minutes.
