TEXAS TOAST BREAKFAST CASSEROLE
This is our special occasion recipe - we use it for Thanksgiving and Christmas morning as it is easy to prepare the night before, my daughter is having her in-laws over this week and requested it for them. So maybe it is impress the MIL too. :) there are many variations of this recipe this one seems to work best for us.

Steps:
- Brown sausage and drain.
- Place Texas toast in greased 9x12 casserole dish.
- In a medium bowl mix eggs with salt and half and half.
- Pour mixture evenly over bread.
- Top with browned sausage and shredded cheese.
- Cover and refrigerate overnight.
- Take out of refrigerator in the morning while you are preheating your oven to 350 F bake for 45 minutes or until browning on the top.
- note: cooking time does not include overnight refrigeration.

BREAKFAST CASSEROLE
Steps:
- In a small bowl, beat the eggs until they loosen up. Add the half and half, and green onions. Mix well, highly season with salt and pepper and set aside.
- Butter a 12 by 10-inch baking pan. Line the pan with the bread, cutting and rearranging, if needed. Sprinkle the bread with the cooked sausage and cheese. Pour the egg mixture over the entire pan. Cover and refrigerate overnight.
- Preheat oven to 350 degrees. Cook covered for 25 to 30 minutes or until the egg mixture is set.

- In a medium bowl, sift together flour, 1 teaspoon salt, and 1/4 teaspoon pepper. Make a well in center of flour mixture; whisk egg yolks and 1/4 cup milk into flour mixture, then gradually add 1 cup milk to form a smooth batter. Let rest at least 30 minutes (or refrigerate in an airtight container overnight).
- Preheat oven to 425 degrees. Butter six 4-ounce ramekins. In a medium skillet, melt butter over medium. Add onion and cook until translucent, 8 minutes; let cool 10 minutes. Divide onion, ham, and Gruyere among ramekins.
- Whisk egg whites until soft peaks form. Gently fold into batter with a rubber spatula. Spoon over onion mixture and sprinkle with chives. Place ramekins on a rimmed baking sheet and bake until golden and puffed, 18 to 20 minutes. Serve warm.

- Butter a 3-quart baking dish with 1 tablespoon butter. In a large skillet, melt 2 tablespoons butter over medium-high. Add bacon, onion, and garlic and cook until onion is softened, about 2 minutes. Gradually add spinach to skillet and cook, stirring occasionally, until just wilted, about 2 minutes. Season with salt and pepper.
- In a medium bowl, whisk together eggs, milk, and nutmeg. Season with salt and pepper.
- Scatter half the bread in dish and top with half the spinach mixture and half the cheese. Top with remaining bread, spinach mixture, and cheese. Pour egg mixture into dish and gently press bread to submerge. Cover and refrigerate at least 2 hours (or up to overnight).
- Preheat oven to 400 degrees. Uncover dish and bake until bread is golden brown and custard is just set, 45 to 50 minutes (cover with foil if browning too quickly). Let cool 5 minutes before serving.
