Steps:
- Wash and trim Brussels sprouts.
- With tip of knife, cut an X in base of each.
- Place Brussels sprouts in large saucepan; add just enough water to cover. Add salt. Bring to a boil over high heat.
- Reduce heat; simmer 8 to 10 minutes or until tender.
- Meanwhile, cook bacon until crisp in medium skillet.
- Remove bacon from skillet. Reserve 2 tablespoons bacon drippings in skillet; cool.
- Add flour to cooled drippings; cook and stir over medium-low heat until bubbly. Remove from heat.
- In small bowl, combine brown sugar, water, vinegar and mustard; mix well.
- Gradually stir into bacon drippings mixture.
- Drain Brussels sprouts; place in serving bowl.
- Add hot bacon dressing mixture; toss gently.
- Crumble bacon over Brussels sprouts.
- Sprinkle with pecans.
- If desired, add salt to taste.

- Preheat an oven to 300 degrees F (150 degrees C).
- Beat egg whites until foamy in a large glass or metal mixing bowl until soft peaks form. Lift your beater or whisk straight up: the egg whites will form soft mounds rather than a sharp peak.
- Mix the pecan halves into the egg white.
- Stir the white sugar, brown sugar, and cinnamon together in a bowl; add to the pecan and egg white mixture and stir.
- Coat the bottom of a jelly roll pan with the softened butter.
- Spread the pecan mixture in an even layer in the prepared pan.
- Bake in the preheated oven until crisp, turning occasionally, 45 to 60 minutes.

PECAN BACON
Steps:
- Preheat oven to 375°. Place bacon in a single layer in a foil-lined 15x10x1-in. baking pan. Bake until lightly browned, 16-18 minutes., Remove bacon from pan. Discard drippings from pan, wiping clean if necessary., In a shallow bowl, mix remaining ingredients. Dip both sides of bacon in brown sugar mixture, patting to help coating adhere; return to pan., Bake until caramelized, 8-10 minutes longer. Remove immediately from pan.

My ex-mother-in-law lives in the South and has lots of pecan trees. She sends me bags of shelled pecans every year for Christmas. I found out how they make the roasted pecans at the fair. Even though they use big roasters, these turn out just as great.

- Preheat oven to 225 degrees F (105 degrees C). Lightly grease a rimmed baking pan.
- Combine the egg white and water in a mixing bowl; beat until fluffy. Fold in the pecans to coat evenly. Combine the sugar, salt, and ground cinnamon in a shaker or cup with a lid. Dust the pecans evenly with the sugar mixture. Spread the nuts over the prepared pan.
- Bake in preheated oven until toasted and fragrant, stirring every 15 minutes, about 1 hour. Cool on pan, and store in an airtight container.
