This impressive dessert has become so popular that I have to make three every year-one for my husband to take to work, one for our family on Christmas Eve and one for his family Christmas Day! Any flavor of Pirouette cookies can be used, and vanilla can be substituted for the rum flavoring. -Lisa Scanio, Tampa, Florida

Number Of Ingredients 10

1 can (13-1/2 ounces) Pirouette cookies
1/2 cup graham cracker crumbs
1/4 cup butter, melted
2 packages (8 ounces each) cream cheese, softened
2 cups cold eggnog
1-1/3 cups cold whole milk
2 packages (3.4 ounces each) instant vanilla pudding mix
1/2 teaspoon rum extract
1/8 teaspoon ground nutmeg
1 cup heavy whipping cream

Steps:

  • Cut each cookie into two 2-1/2-in. sections; set aside. Crush remaining 1-inch pieces. In a small bowl, combine the cookie crumbs, cracker crumbs and butter; press onto the bottom of a greased 9-in. springform pan., In a large bowl, beat the cream cheese until smooth. Beat in the eggnog, milk, dry pudding mixes, extract and nutmeg until smooth. Whip cream until stiff peaks form. Fold whipped cream into pudding mixture. Spoon over crust. Cover and refrigerate for 6 hours or overnight. , Just before serving, remove sides of pan. Arrange reserved cookies around dessert and press gently into sides. Refrigerate leftovers.

Wow, this is one of my favorite recipes that I have found so far. It is so beautiful and yet super easy to make too. What a wonderful dessert to take to a holiday party at Christmas time or even at Thanksgiving. ----- A cross between a cream pie and cheesecake. Even those that are not a fan of eggnog will enjoy this one! I hope...

1 can (13 1/2 oz.) pirouette cookies
1/2 c graham cracker crumbs
1/4 c butter, melted
2 pkg (8 oz. each) cream cheese, softened
2 c cold eggnog
1 1/3 c whole milk
2 pkg (3.4 oz. each) instant vanilla pudding mix
1 1/2 tsp rum extract
3/4 tsp ground nutmeg
1 c heavy whipping cream

Steps:

  • 1. (SET OUT THE CREAM CHEESE TO ROOM TEMP) Cut each cookie into two 2-1/2 or 3 inch sections; set aside. Crush remaining 1-inch pieces. In a small bowl, combine the cookie crumbs, cracker crumbs and butter.
  • 2. Press onto the bottom of a greased 9-in. spring-form pan.
  • 3. In a large bowl, beat the cream cheese until smooth. Beat in the eggnog, milk, dry pudding mixes, extract and nutmeg until smooth. Whip cream until stiff peaks form. Fold whipped cream into pudding mixture. Spoon over crust. (Make sure you use a VERY LARGE bowl.)
  • 4. Cover and refrigerate for 4-6 hours or overnight. Just before serving, remove sides of pan. Arrange reserved cookies around dessert and press gently into sides. --- (Can do this 1/2 to 1 hr before serving.)
  • 5. Refrigerate leftovers. Yield: 12 servings. ----Do not use reduced fat eggnog in this recipe.

I found this recipe in the Dec/Jan 08 edition of Taste of Home magazine. I haven't made it yet but it looks really good. I'm storing it here for safe-keeping. The cook time is actually chilling time.

1 (13 1/2 ounce) can pirouette cookies, divided
1/2 cup graham cracker crumbs
1/4 cup butter, melted
2 (8 ounce) packages cream cheese, softened
2 cups eggnog, cold
2 cups milk, cold
2 (3 1/2 ounce) packages vanilla instant pudding mix
1/2 teaspoon rum extract
1/8 teaspoon ground nutmeg
1 cup heavy whipping cream, whipped

Steps:

  • Cut 20 cookies into three (3) 2" sections and set aside. Crush remaining cookies.
  • In a small bowl, combine the cookie crumbs with the graham cracker crumbs and melted butter.
  • Press onto the bottom of a 9" springform pan.
  • In large mixing bowl, beat the cream cheese until smooth.
  • Beat in the eggnog, milk, pudding mixes, rum extract and nutmeg until smooth.
  • Fold in the whipping cream (be sure to whip first).
  • Pour over crust, cover and refrigerate at least 4 hours, or overnight.
  • Just before serving, remove sides of pan.
  • Arrange reserved cookes around dessert (standing up) and gently press into sides.
  • Refrigerate leftovers.
  • Cooking time is actually chilling time.

Requesting sugar-free eggnog?...well here is a wonderful recipe for a sugar and alcohol free eggnog and is made with Splenda. I am sure you could use any brand of sweetener that you like. So, it is a win, win recipe overall with less sugar, fat and calories. Hope you enjoy the healthier version of Eggnog.

Number Of Ingredients 8

3/4 c splenda® no calorie sweetener, granulated
1 Tbsp arrowroot or cornstarch
1 1/2 tsp fresh ground nutmeg
7 egg yolks
4 c 2 % milk
2 c fat-free half n half
2 Tbsp vanilla extract
1 tsp rum extract

Steps:

  • 1. Mix together first 3 ingredients in a large heavy saucepan. Set aside. Whisk egg yolks. Add to SPLENDA Granulated Sweetener mixture whisking until blended. Gradually whisk in milk.
  • 2. Cook over low heat, whisking constantly until the temperature reaches 175 degrees approximately; after about 8 minutes I turned up the heat some to get it to the temp. I needed. (12 to 15 minutes). Remove from heat and whisk in half and half; cool.
  • 3. Cover and chill 3 hours or up to 3 days. Stir in vanilla & rum extract just before serving.
