2 cups all-purpose flour, or more if needed
1 envelope Fleischmann's® RapidRise Yeast
2 tablespoons sugar
½ teaspoon salt
½ cup milk
¼ cup water
2 tablespoons butter OR margarine

Steps:

  • Combine 3/4 cup flour, undissolved yeast, sugar and salt in a large bowl. Heat milk, water and butter until very warm (120 degrees to 130 degrees F). Add to flour mixture. Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Add 1/4 cup flour; beat 2 minutes at high speed. Stir in enough remaining flour to make soft dough. Knead on lightly floured surface until smooth and elastic, about 8 to 10 minutes. Cover; let rest 10 minutes.
  • Divide dough into 12 equal pieces; shape into balls. Place in greased 8-inch round pan. Cover; let rise in warm, draft-free place until doubled in size, about 30 minutes.
  • Bake in preheated 375 degrees F oven for 20 minutes or until done. Remove from pan; brush with additional melted butter, if desired. Serve warm.

This is a Cook's recipe, and is simply the best dinner roll I've ever eaten. They are both crusty and flavorful yet the inside is soft. A bit of work, but so well worth it. I make up a batch, and freeze the excess when they have cooled completely.

Number Of Ingredients 6

12 1/2 oz water, tepid
1 1/2 tsp yeast
2 tsp honey
16 1/2 oz bread flour (about 3 cups)
3 Tbsp whole wheat flour
1 tsp salt

Steps:

  • 1. Mix water, yeast and honey until combined in a heavy duty mixer (I have a KitchenAid). Add the flours and mix just until combined. Cover mixing bowl with Saran wrap and let sit for 30 minutes. (Don't skip this part--it develops the gluten)
  • 2. Knead at medium speed for 5 minutes. Add salt (don't add before!), return to kneading for an additional minute.
  • 3. Turn into a greased bowl, cover and place in a warm place until dough has doubled.
  • 4. Turning the bowl a quarter turn at a time, use a rubber spatula to slide under the dough edge and turn it inward, like if you were folding. Do this 4-5 times until you have turned it all. Cover and return to a warm place for 30 minutes.
  • 5. Repeat step 4.
  • 6. Remove dough to flour dusted counter and gently push out the dough until into a general rectangle and cut into roll size pieces.Shape into balls. About a dozen or so.
  • 7. Use cake pans which have been lightly greased with shortening. Place the rolls in the pans, not touching.
  • 8. Let rise for 30 minutes. Preheat oven to 500 degrees. Spray the rolls with water and place in the oven for 10 minutes.
  • 9. Remove and invert pans, gently pulling out the rolls. Reduce oven to 400. Pull the rolls apart and place on their sides on a cookie sheet.
  • 10. Return to oven and bake for an additional 10-15 minutes until nicely browned.
  • 11. Cool on wire racks.

1 package (1/4 ounce) active dry yeast
1-1/4 teaspoons salt
4-1/2 to 5 cups all-purpose flour
1 cup 2% milk
1/2 cup water
2 tablespoons butter
2 large eggs, room temperature
1 large egg, lightly beaten
FOR EVERYTHING DINNER ROLLS:
1 teaspoon kosher salt
1 teaspoon dried minced garlic
1 teaspoon dried minced onion
1 teaspoon poppy seeds
1 teaspoon sesame seeds
FOR PARMESAN-GARLIC DINNER ROLLS:
2 tablespoons grated Parmesan cheese
1/2 teaspoon dried minced garlic
FOR ALMOND-HERB DINNER ROLLS:
2 tablespoons chopped sliced almonds
1/2 teaspoon kosher salt
1/2 teaspoon dried basil

Steps:

  • In a large bowl, mix sugar, yeast, salt and 2 cups flour. In a small saucepan, heat milk, water and butter to 120°-130°. Add to dry ingredients; beat on medium speed 3 minutes. Add 2 eggs; beat on high 2 minutes. Stir in enough remaining flour to form a soft dough (dough will be sticky)., Turn dough onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch down dough. Turn onto a lightly floured surface; divide and shape dough into 24 balls. Place in 2 greased 13x9-in. baking pans. I made these one time to go with soup that we were having for dinner. I made the dough balls too big and/or let them rise too much and they ended up being huge, but they were good and they were easy to make.

1 cup very warm water
2 tablespoons very warm water
1/3 cup oil
1/4 cup sugar
2 tablespoons yeast
1 teaspoon salt
1 egg, beaten
3 -4 cups flour

Steps:

  • Mix warm water, oil, sugar and yeast; let rest for 10 minutes until yeast activates.
  • Add salt and beaten egg; blend well.
  • Add flour, one cup at a time until soft dough if formed.
  • Knead on a floured surface 5-10 minutes or until dough is smooth and elastic.

1 tablespoon olive oil, plus
1 teaspoon olive oil, divided
1/4 teaspoon minced garlic
1/4 teaspoon red pepper flakes
1 cup packaged coleslaw mix
1 (3 ounce) can sliced mushrooms, drained and chopped
2 teaspoons salt, divided
1 teaspoon pepper
3/4 cup diced peeled, cored, seeded tomatoes
1/4 teaspoon cumin
1 (8 count) can refrigerated crescent dinner rolls
fresh cilantro stem (optional)

Steps:

  • Sauté 1 tablespoons oil, garlic and red pepper flakes over high heat 1 minute, stirring constantly. Add cole slaw mix and mushrooms and sauté 3 more minutes. Season with 1 1/2 teaspoons salt and pepper.
  • Separate dough into 4 rectangles. Firmly press perforations to seal. Place 1/4 of vegetable filling on short side of rectangle. Fold up long sides to cover mixture and then roll like and egg roll. Place on a baking sheet, folded side down. Bake at 400 for 13-18 minutes, or until golden.
  • Meanwhile, sauté 1 teaspoons oil, tomatoes, cumin and 1/2 teaspoons salt 3 minutes, or until tomatoes are soft. Puree mixture in food processor or blender until smooth. Set aside.
  • When rolls are removed from oven, spoon 1/4 of sauce onto 4 plates. Cut veggie rolls in half on diagonal and place 2 halves standing upright on plate. Garnish with cilantro.
