VEGETABLE EGG FAJITAS
Wrap up breakfast, lunch or dinner with peppy veggie-egg fajitas.

Steps:
- Beat eggs and milk with fork; set aside.
- In 12-inch skillet, melt margarine over medium-high heat. Cook bell pepper, onion and seasoning mix in margarine about 4 minutes, stirring occasionally, until vegetables are tender. Remove vegetables from skillet; keep warm.
- Reduce heat to medium; pour egg mixture into skillet. As mixture begins to set at bottom and side, gently lift cooked portions with spatula so that thin, uncooked portions can flow to bottom. Avoid constant stirring. Cook 3 to 4 minutes or until eggs are firm but still moist.
- Spoon one-fourth of the egg mixture onto center of each tortilla; top with vegetables. Fold right and left sides of tortilla over mixture, overlapping. Top each fajita with 2 tablespoons salsa.

Steps:
- Place bell pepper, jalapeno pepper, and onion in the bowl of a food processor; puree until smooth. Stir together 4 teaspoons of this puree with the mayonnaise, and vinegar in a small bowl. Season with pepper, garlic powder, and cumin. Cover, and refrigerate for at least 3 hours to allow flavors to develop.

EGGS BAJA
This is a fun breakfast recipe I found in a Sunset cookbook. I like to make this spicier by using pepper-jack cheese.

Steps:
- In a nonstick frying pan over medium-high heat, cook bacon, turning once, until crisp, 4-5 minutes total; drain on paper towels; discard fat and wipe pan clean.
- Set pan over medium heat; break eggs into pan and cook to desired doneness, turning once if you like, 2-5 minutes for soft yolks; sprinkle with salt and pepper.
- Meanwhile, place bread slices on a 12x15-inch baking sheet.
- Broil 6 inches from heat until lightly toasted, 1-2 minutes; turn slices over and top equally with tomato slices, chiles and cheese.
- Broil until cheese is melted, 2-3 minutes.
- Top each sandwich with an egg, then a slice of bacon; sprinkle evenly with cilantro.
