EGGPLANT PARMESAN SLIDERS

Skip the forks in favor of your fingers with this quick and easy recipe for crowd-friendly Eggplant Parmesan Sliders.

2 eggplants (2 1/2 lbs)
1 cup all-purpose flour
3 eggs, beaten
2 cups Italian-style breadcrumbs
1 lb. fresh mozzarella cheese, sliced into rounds
Vegetable oil, for frying
2 cups tomato sauce, store-bought or homemade
2 dozen brioche slider rolls
3 inch round cookie cutter

Steps:

  • Slice the eggplants lengthwise into ½-inch thick slices, then use the cookie cutter to cut out two rounds from each of the slices.
  • Place the eggplant rounds in a colander and toss them with 1½ teaspoons salt. Let them drain in the colander over a bowl in the sink for 45 minutes to remove excess moisture.
  • Bread the eggplant rounds in batches by coating them in the flour, then the eggs and then the breadcrumbs.
  • Heat a large skillet over medium heat and add enough oil to liberally coat the bottom of the pan. Pan-fry the breaded eggplant rounds in batches for 2 to 3 minutes, flipping them once until both sides are golden brown. Remove the cooked eggplant rounds and immediately transfer them to a paper towel-lined plate. Continue the pan-frying process, changing the oil as necessary, until all of the rounds are cooked.
  • Halve the brioche slider rolls and add 1 tablespoon of tomato sauce to the bottoms of the rolls. Stack an eggplant round atop the sauce, top it with another tablespoon of sauce and a piece of sliced mozzarella. Repeat the assembling process with all of the buns, transferring them to a cookie sheet lined with parchment paper.
  • Turn your broiler to high and carefully slide the cookie sheet under the broiler just long enough until the cheese melts. Immediately cap off the sliders with the tops of the buns and serve.

1.8kg / 2.6lb large eggplants (aubergines) - about 5 (, sliced lengthways 8mm (1/3")-thick (skin on, Note 1))
1/4 cup olive oil ((for brushing))
1 2/3 cups parmesan (, finely grated)
2 cups basil leaves ((loosely packed), stalks reserved)
1 1/2 cups mozzarella (, shredded (for topping) (Note 2))
2 tbsp extra virgin olive oil
1 onion (, finely diced)
5 garlic cloves (, finely minced)
600ml / 20oz tomato passata ((Note 3))
400g/ 14oz canned tomatoes (, crushed or finely chopped (Note 4))
1 1/2 tsp white sugar
1 1/2 tbsp fresh oregano (, finely chopped (or 1/2 tsp dried oregano, or 1 sprig fresh basil))
1 cup water
3/4 tsp salt
1/4 tsp black pepper

Steps:

  • Preheat oven to 220°C / 430°F (200°C fan).
  • Line three trays: Line three large trays with baking / parchment paper.
  • Brush eggplant with oil: Brush eggplant slices on each side with oil.
  • Bake 35 minutes: Arrange eggplant in a single layer on the trays and bake for about 35 - 45 mins or until browning and tender, turning the eggplant halfway. I put the trays on the top shelf, in the middle, then I put one tray on the floor of the oven. As each tray finishes, I remove the tray and move the others up.
  • Cool: Remove from oven, leave on trays to cool.
  • Sauté onions and garlic: Heat olive oil in a large skillet over medium-high heat. Sauté onions and garlic for 3 minutes until softened and just about to colour on the edges.
  • Add remaining ingredients: Pour in the passata , canned tomatoes, water, oregano and sugar. Stir and bring to a simmer.
  • Simmer 30 minutes: Simmer uncovered for about 30 - 40 minutes, stirring occasionally, until thickened, adding the basil stalks halfway through cooking (so they don't lose their flavour).
  • The final consistency should be slightly thicker than a pasta sauce so it's spreadable and not leaching liquid, but not too pasty either. Add extra water a little at a time if required during cooking if it gets too thick. Remove the basil stalks and discard.
  • Season: Stir in salt and pepper. (Remember, we get salt from the parmesan too, so no need to go overboard here)
  • Reduce oven to 180°C / 350°F (160°C fan).
  • Smear a little tomato sauce in the bottom of baking dish, 23 x 33cm / 9 x 13" (or thereabouts).
  • Layer 1: Lay one third of the eggplant so it covers the base (some overlap is OK when layering eggplant). Spread 1/3 of the remaining sugo over eggplant. Drizzle with a little olive oil. Sprinkle with 1/3 of the parmesan, and 1/3 of basil leaves.
  • Layer 2: Repeat another 1/3 each of eggplant, tomato sauce, olive oil, basil and parmesan.
  • Layer 3 (top layer): Repeat again with remaining eggplant, tomato sauce and some olive oil. Do not put basil on top layer (we will garnish after baking). Scatter with remaining parmesan, then all the mozzarella.
  • Bake for 25 mins until bubbling and golden.
  • Rest: Let it rest for 5 to 10 minutes (easier to slice neatly). Scatter over remaining fresh basil leaves. Cut like lasagna and serve! (Optional: sprinkle with extra parmesan).

One 28-ounce can whole peeled tomatoes, cut in half
Olive oil, for drizzling
Kosher salt and freshly cracked black pepper
Nonstick cooking spray, for the bundt pan
Two 11-ounce tubes refrigerated French bread dough
1/2 cup all-purpose flour
2 large eggs, beaten
1 1/2 cups panko breadcrumbs
1/2 cup grated Parmesan
1 teaspoon dried oregano
2 small eggplants, about 1 1/2 pounds, peeled and sliced into 1/2-inch rounds
Vegetable oil, for frying
8 ounces fresh mozzarella, sliced into 1/4-inch-thick slices
8 ounces deli sliced pepperoni
One 12-ounce jar roasted red peppers, cut into quarters
1/2 cup pickled banana peppers

Steps:

  • Preheat the oven to 300 degrees F.
  • Line a rimmed baking sheet with parchment paper and arrange the tomatoes in a single layer on it. Drizzle with oil and season with salt and pepper. Bake until the tomatoes have decreased in size and look slightly dry, 1 to 1 1/2 hours.
  • Raise the oven temperature to 350 degrees F. Grease a bundt pan with cooking spray.
  • Arrange the dough in the prepared pan so the ends touch each other, then pinch the ends together so the dough makes one large ring. Using a knife, make a few slices in the top of the dough. Bake until the bread is golden brown and the internal temperature reaches 200 degrees F, 25 to 30 minutes. Let cool 5 minutes, then remove the bread to a wire rack to cool completely.
  • To set up the 3-step breading process, gather 3 medium shallow bowls or plates. In the first, add the flour, 1/2 teaspoon salt and 1/4 teaspoon pepper. In the second, add the eggs and 2 tablespoons of water and whisk well. In the third, add the breadcrumbs, Parmesan and oregano and stir to combine.
  • Pat the eggplant dry with paper towels. Dredge one round in the flour, shaking off any excess. Now, using your other hand (keeping one hand dry and one hand wet), dip into the egg mixture to coat completely. Finally, dredge in the breadcrumb mixture and coat completely. Set on a parchment-lined baking sheet and repeat the process with the remaining eggplant.
  • Add 1/2 inch of vegetable oil to a 12-inch heavy-bottomed skillet, set over medium-high heat and heat to 375 degrees F. In batches, fry the eggplant until golden brown, 1 to 2 minutes per side. Transfer to paper towels to dry.
  • Slice the bread ring horizontally to build your giant sandwich. Layer on the mozzarella, pepperoni, eggplant, roasted red pepper, oven-roasted tomatoes and banana peppers. Carefully slice the sandwich into 8 pieces and enjoy! Or wrap in foil and bring to tailgate.

2 medium eggplant, peeled and cut into 1/4-inch slices
1/2 cup olive oil
1 container (15 ounces) whole-milk ricotta cheese
1/3 cup plus 1/4 cup grated Parmesan cheese, divided
2 tablespoons lemon juice
2 teaspoons dried parsley flakes, divided
1 teaspoon grated lemon zest
1/2 teaspoon kosher salt
2 packages (18 ounces each) Hawaiian sweet rolls
1-1/2 cups marinara sauce
24 slices fresh mozzarella cheese
1/2 cup butter, melted

Steps:

  • Preheat oven to 350°. Place eggs and bread crumbs in separate shallow bowls. Dip eggplant slices in eggs; coat with crumbs. In a large skillet, cook eggplant in oil in batches until golden brown on both sides; drain on paper towels., In a small bowl, mix ricotta, 1/3 cup Parmesan, lemon juice, 1 teaspoon parsley flakes, lemon zest and kosher salt. Spread over roll bottoms. Place in 2 greased 13x9-in. baking dishes. Top with eggplant, marinara and mozzarella. Replace roll tops. Brush with melted butter; sprinkle with remaining 1/4 cup Parmesan cheese and 1 teaspoon parsley., Bake, uncovered, until golden brown and cheese is melted, 15-20 minutes. 2 eggs, beaten
4 cups Italian seasoned bread crumbs
6 cups spaghetti sauce, divided
1 (16 ounce) package mozzarella cheese, shredded and divided
½ cup grated Parmesan cheese, divided
½ teaspoon dried basil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Dip eggplant slices in egg, then in bread crumbs. Place in a single layer on a baking sheet. Bake in preheated oven for 5 minutes on each side.
  • In a 9x13 inch baking dish spread spaghetti sauce to cover the bottom. Place a layer of eggplant slices in the sauce. Sprinkle with mozzarella and Parmesan cheeses. Repeat with remaining ingredients, ending with the cheeses. Sprinkle basil on top.

1 large unpeeled purple eggplant, trimmed and cut into 1/8-inch thick slices
1 teaspoon fine sea salt, or as needed
2 eggs
1 tablespoon whole milk
1 cup Italian-seasoned bread crumbs, or more as needed
¾ cup extra-virgin olive oil, or as needed
1 (24 ounce) jar prepared marinara sauce (such as De Cecco®)
1 bunch fresh basil, coarsely chopped
1 (8 ounce) package smoked mozzarella cheese, very thinly sliced
½ cup freshly grated Parmesan cheese

Steps:

  • Line a plate with a paper towel; place a layer of 2 or 3 slices of eggplant onto the towel. Sprinkle eggplant with sea salt. Repeat layers of eggplant sprinkled with salt until all eggplant slices are stacked. Place 2 paper towels onto the stack and place a plate on top of the towels. Lay a heavy book or can of food onto the plate to squeeze out moisture. Allow to drip for 20 minutes to 2 hours. Rinse and pat dry.
  • Beat eggs with milk in a shallow bowl. Place bread crumbs into a separate bowl. Dip eggplant slices in the egg mixture and gently press into the crumbs to coat; set aside.
  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8-inch baking dish.
  • Heat olive oil in a large skillet over medium-high heat; fry eggplant slices in the hot oil in small batches until golden brown, about 1 to 2 minutes per side. Drain on paper towels.
  • Pour about 1/4 cup of marinara sauce into the bottom of the prepared baking dish and arrange a layer of eggplant slices to cover the sauce. Scatter basil and a few slices of smoked mozzarella cheese over eggplant; repeat layers, ending with a layer of sauce on top. Sprinkle Parmesan cheese over the top.
  • Bake in the preheated oven until heated through and the cheese has melted, about 15 minutes. Serve immediately.
