1-1/4 cups sugar
3 large eggs, room temperature
1/2 teaspoon vanilla extract
1/2 teaspoon rum extract
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1 cup eggnog
FROSTING:
1/4 cup all-purpose flour
1/4 teaspoon salt
1-1/2 cups eggnog
1 cup butter, softened
1-1/2 cups confectioners' sugar
1-1/2 teaspoons vanilla extract
Red and green decorating gel, optional

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, one at a time, beating well after each addition. Add extracts. Combine flour, baking powder and salt; gradually add to creamed mixture alternately with eggnog, beating well after each addition. Pour into two greased 9-in. round baking pans. , Bake until a toothpick inserted in the center comes out clean, 25-30 minutes. Cool in pans for 10 minutes before removing to wire racks to cool completely., For frosting, in a small saucepan, combine flour and salt. Gradually stir in eggnog until smooth. Bring to a boil over medium heat whisking constantly; cook and stir until thickened, about 2 minutes. Cool to room temperature., In a large bowl, cream butter and confectioners' sugar until light and fluffy. Gradually beat in eggnog mixture and vanilla until smooth. Spread between layers and over top and sides of cake. If desired, decorate with decorating gel. Store in the refrigerator.

1 ¼ cups white sugar
3 eggs, room temperature
1 teaspoon vanilla extract

2 tablespoons bourbon whiskey
¼ cup all-purpose flour

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9-inch round baking pans.
  • Beat 1/2 cup butter and 1 1/4 cups sugar with an electric mixer in a large bowl until light and fluffy. Mixture should be noticeably lighter in color. Add eggs, one at a time, allowing each egg to blend into butter mixture before adding the next. Stir in 1 teaspoon vanilla extract and 1/4 teaspoon lemon peel, mixing well.
  • Combine 2 cups flour, baking powder, and 1 teaspoon salt in a bowl. Pour flour mixture into the batter alternately with 1 cup eggnog, mixing until just incorporated. Stir in bourbon. Divide batter evenly between prepared pans.

Steps:

2 eggs
2 cups eggnog
¼ cup melted butter

I wanted to start a new tradition with my family. I love mincemeat, and this cake is a way to share that enjoyment with my friends and family. Since I was a working mother, I also wanted to create a dessert that was convenient. I am now asked for the recipe every time I make it.

1 cup mincemeat
1/2 cup finely chopped almonds
1 cup sugar
1/2 cup butter
1/2 cup prepared eggnog
1 teaspoon rum or

Steps:

  • Heat oven to 350 deg. Spray oven-safe 11-inch skillet or a 9 X 13 cake pan with nonstick cooking spray.
  • Prepare cake mix according to package directions, except reduce the water by 1/4 cup. After mixing, fold in the mincemeat and nuts.
  • Bake 35 to 40 min. Cake is done with toothpick inserted in center of cake comes out clean.
  • Let cool 5 min. Run a knife around edge of pan and invert onto serving plate.
  • Sauce: Combine butter, sugar and eggnog in small saucepan. Bring to a boil. Boil for 2 min. Remove from heat stir in rum or rum extract and a dash of nutmeg. Serve warm.

1 (4 ounce) package instant vanilla pudding
3/4 cup eggnog (thicker the better)
3/4 cup vegetable oil
4 eggs
1/2 teaspoon nutmeg (i use cinnamon)
confectioners' sugar

Steps:

  • Preheat oven 350.
  • In large bowl combine cake mix, vanilla pudding mix, eggnog, and oil: beat at low speed into moist.
  • Add eggs and nutmeg mix on high for 4 minutes.
  • Pour into greased and floured fluted, bundt, or miniloaf (best thing to use) pans.

Stir in 2 1/2 cups flour, the baking powder, baking soda and salt. Spread in pan. Sprinkle Streusel Topping over batter. Cover and refrigerate at least 8 hours.
  • Heat oven to 350°F. Uncover pan; bake 35 to 40 minutes or until toothpick inserted in center comes out clean. Cool 20 minutes.
  • In small bowl, mix all Eggnog Glaze ingredients until smooth and thin enough to drizzle. Drizzle over coffee cake. For servings, cut into 5 rows by 3 rows.

1 (18 1/2 ounce) package yellow cake mix
1/8 teaspoon ground nutmeg
2 eggs
1 1/2 cups purchased eggnog
4 tablespoons butter or 4 tablespoons margarine, melted
2 tablespoons rum or 1/4 teaspoon rum flavoring

Steps:

  • Generously grease a 10-inch tube or bundt pan with the softened butter; press almonds on sides and bottom of pan; set aside.
  • In a large bowl, combine cake mix, nutmeg, eggs, eggnog, the melted butter and the rum.
  • Using an electric mixer, beat until smooth and creamy (about 4 minutes at medium speed) or beat about 450 strokes with a wooden spoon; pour batter into prepared pan.
  • Bake in a 350° oven for 45 to 55 minutes or until a wooden pick inserted in center comes out clean.

A wonderful way to cook with eggnog. A little time consuming but well worth it. This was at our family Christmas party and everyone including me asked for the recipe. Edited to add if the cake is coming out dry its being overcooked. Every bundt pan is different. If you have a dark coated or heavy one you should be testing the cake with a cake tester as well as if its a regular bundt pan because every oven is different. I always check all my cakes earlier than the timer goes off. Also bundt cakes and eggnog are a heavy cake its dense like a cofffee cake.

3 cups unsifted flour
1 teaspoon baking powder
1/8 teaspoon baking soda
1 teaspoon salt
3/4 teaspoon freshly grated nutmeg or 1/2 teaspoon ground nutmeg
1 cup unsalted butter, softened
2 1/4 cups superfine sugar
4 large eggs
2 teaspoons pure vanilla extract
3/4 cup prepared eggnog, plus
1 tablespoon prepared eggnog
3 tablespoons dark rum
5 tablespoons unsalted butter, cut into chunks
1/2 cup granulated sugar
1/3 cup dark rum
1/2 teaspoon pure vanilla extract

Steps:

  • Preheat oven to 350 degrees.
  • Grease inside of a 10 inch bundt pan with shortening and dust with flour, or spray lightly with cooking spray.
  • Set aside.
  • To prepare batter: Sift together the flour, baking powder, baking soda, salt and nutmeg onto a sheet of wax paper and set aside.
  • Cream butter in the large bowl of an electric mixer on a moderate speed for 3 to 4 minutes.
  • Add superfine sugar in three additions, beating 1 minute after each portion is added.
  • Add eggs one at a time, beating about 45 seconds after each is added.
  • Blend in vanilla extract.
  • On low speed, alternately add sifted mixture in three additions with the eggnog in two addtions, beginning and ending with sifted mixture.
  • Scrape down the sides of the bowl often.
  • Add rum and beat 30 seconds.
  • (The batter will be medium thick and very creamy.) Spoon into prepared pan and lightly smooth top with a spatula.
  • Bake on center oven rack 55 minutes, or until a wooden pick or cake tester inserted in the center comes out clean.
  • Let cake set in pan on a rack 10 minutes before unmolding onto a rack.
  • To prepare glaze: While cake is cooling in the pan, place butter, granulated sugar and rum in a nonreactive saucepan.
  • Set over low heat and stir until the sugar dissolves.
  • Bring to a boil, reduce heat and simmer 2 minutes.
  • Remove from heat and stir in vanilla.
  • Place rack with warm cake on a sheet of wax paper.
  • Spoon glaze over cake in layers, using all of glaze.
  • Cool completely before wrapping.

1 lime, zest of, only, finely shredded
1/2 lb flour
1/2 cup evaporated milk
1 cup eggnog (Mexican Rompope)
1 cup butter, softened
1/2 cup eggnog (Mexican Rompope)
fresh strawberries

Steps:

  • Preheat oven to 180 degrees. Beat the condensed milk and the butter in a large bowl. Add the eggs, one by one. Add the lime zest and the evaporated milk alternately with the flour. Pour batter into a greased and floured cake pan. Bake for 35 minutes or until toothpick inserted in center comes out clean. Invert after 10 minutes and let cool. Level top of cake and pour rompope evenly.
  • For the frosting, beat both ingredients until well combined. Frost cake and garnish as desired.

Steps:

  • Preheat oven to 325 degrees. Lightly grease the inside of a fluted cake pan.
  • In a medium bowl, cream the butter and sugar, until smooth. Beat in the eggs one at a time. Add the eggnog and vanilla and continue to beat until well combined.
  • In a large bowl, combine the flour, baking powder, baking soda, cinnamon, nutmeg and salt. Gradually stir the flour mixture into the wet ingredients, until just combined. Be careful to not over mix. Pour the batter into the prepared pan.
  • Bake for 50 to 60 minutes in the preheated oven, or until a toothpick inserted in the center of the cake comes out clean. Allow the cake to cool for 15 minutes in the pan before removing.
  • Make the glaze. In a small bowl, combine the confectioners' sugar, eggnog, rum, vanilla and cinnamon. Set aside. Carefully turn the cake over onto a serving platter. Liberally drizzle the glaze over the cake.

1 teaspoon freshly grated nutmeg
1/4 teaspoon ground cloves
1/2 teaspoon salt
1 cup (packed) light brown sugar, sifted
1 cup granulated sugar
1 cup (2 sticks) unsalted butter, softened
3 large eggs
1 teaspoon vanilla extract
3 Golden Delicious apples, peeled, cored, and cut into 1/2-inch dice (about 4 cups)
1 cup (4 ounces) pecans, coarsely chopped
1/3 cup crystallized ginger, finely chopped
Garnish: confectioner's sugar for dusting
Accompaniment: 3 cups eggnog, chilled

10-inch bundt pan (3 1/4 inches deep; 3-qt capacity)

Steps:

  • In small bowl, combine raisins and rum. Let stand until raisins plump, about 1 hour. Drain, discarding rum, and set aside.
  • Position rack in middle of oven and preheat to 350°F. Lightly butter bundt pan, then dust with flour, knocking out excess.
  • In large mixing bowl or bowl of electric mixer, sift together flour, baking powder, baking soda, allspice, cinnamon, nutmeg, cloves, and salt. Add brown and granulated sugars, butter, eggs, and vanilla. Using electric mixer, beat on high speed, scraping down sides of bowl with rubber spatula as needed, until batter is pale and smooth, about 3 minutes for handheld mixer or 2 minutes for standing mixer. Stir in apples, pecans, ginger, and raisins. Spoon into prepared pan and smooth top.
  • Bake until wooden pick or skewer inserted in center of cake comes out clean and cake just shrinks from sides of pan, about 1 hour. Cool cake in pan on rack 10 minutes, then invert and unmold onto rack and cool completely. (Cake can be made up to 3 days ahead and stored at room temperature, wrapped tightly in plastic wrap.)
  • Just before serving, sift confectioner's sugar over cake. Serve accompanied by eggnog.
