I found this recipe in the newspaper twenty years ago. I was impressed by the author's stories about life in the homefront during WWII so I decided to try this recipe. It was very good even without the allspice.

1 1/4 cups flour
3 teaspoons cornstarch
1 teaspoon baking soda
1 1/2 teaspoons cinnamon
1 teaspoon allspice
1/2 teaspoon clove
1/2 teaspoon salt
1 cup brown sugar
1/3 cup oil
1 teaspoon lemon juice
1 teaspoon vanilla
1 cup water (approximately)

Steps:

  • Stir together flour, cornstarch, baking soda, spices and salt.
  • Cream sugar, oil, lemon juice and vanilla.
  • Add flour mixture to sugar mixture, a little at a time, alternating with up to 1 cup of water.
  • Mix briskly with fork until thoroughly blended.
  • Pour into lightly greased and floured 8 or 9 inch square pan and bake at 350 degrees for 30 minutes or until cake tests done.
  • Let cool in pan.

3-4 very ripe bananas
2 Tbsp lemon juice
1 box yellow cake mix
2 tsp cinnamon
1/2 tsp ginger
1/4 tsp nutmeg
1/4 tsp cloves
3 large eggs
5 oz water
1/4 c oil

Steps:

  • 1. Preheat oven to 350°F. Grease and flour a Bundt pan (or spray with baker's coating). Mash bananas very well with lemon juice and set aside.
  • 2. In large mixing bowl, stir together cake mix and spices. Add eggs, water, oil, and mashed bananas. Mix with electric mixer for 2 minutes at high speed, scraping bowl occasionally. Pour batter into prepared pan.
  • 3. Bake approximately 45-50 minutes, until pick inserted near center comes out clean. Cool on wire rack in pan for 10 minutes. Invert and remove from pan and cool completely.
  • 4. Use 1/2 a container of your favorite frosting; microwave until it's pourable. Drizzle it over cooled cake. Some suggestions are: Cream Cheese frosting, Lemon, Caramel, or Vanilla.

This is actually a recipe I got from a vegan site. It was originally a chocolate bundt recipe, but I modified the hell out of it, and it turned out quite well. It's also really low fat, unlike most bundt cake recipes that require 400 sticks of butter and a couple of tubs of sour cream. It's also great for people who are allergic to eggs (it's more common than people think).

3 cups all-purpose flour
2 cups granulated sugar
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ground cloves (the powder)
3/4 cup french vanilla yogurt
2 tablespoons vanilla extract
1 (284 ml) can mandarin oranges
2 tablespoons of grated orange peel
1/2 cup water

Steps:

  • Preheat oven to 350 Fahrenheit.
  • Spray the bundt cake pan with a non- stick spray (preferably a canola spray) for about one second.
  • *NOTE REGARDING 1/2 of WATER: Open the can of Mandarin oranges and drain the juice into a measuring cup. If the juice from the can does not measure up to a cup, shore it up with water until it reaches a cup; it took 1/2 cup of water to shore it up when I made this. The amount may be different considering what brand you purchase.
  • Combine all the dry ingredients into one bowl. In a separate bowl, combine all the wet ingredients (except for the Mandarin orange pieces). Stir both bowls until both sets (wet and dry) are mixed well. Pour the wet ingredients into the dry ingredient bowl. Take electric beaters to the combination until everything is smooth.
  • Add the Mandarin orange pieces and stir slowly.
  • Pour the batter into the bundt pan and bake for 40- 50 minutes. This is a type of cake where it needs to be babysat because the surface area isn't very large, therefore the batter is confined and bakes slowly. At about the 35 minute mark, do the toothpick test, in case for some miraculous reason it is done. It took about 45 minutes in my oven. Don't be tempted to raise the heat because then you'll get a situation where it will be well done on the outside and raw on the inside.

3 cups flour
2 cups sugar
2 tablespoons cinnamon
1 tablespoon cocoa
1 teaspoon nutmeg
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon ground cloves
1 cup chopped walnuts
1 cup raisins
2 cups sour milk

Steps:

  • Cut the butter into the flour and the sugar.
  • Take one cup out and put it aside.
  • To the remaining mixture, blend all the dry ingredients, nuts, and raisins.
  • Make a well in the mixture.
  • Pour in the milk and blend only to moisten the mixture.
  • Stir in remaining cup that was put aside.
  • Pour mixture into a 13" x 9" for 25-30 min.
  • Test with a toothpick to see if done.

3 c all purpose flour
1 c sugar
3 tsp baking power
1/2 tsp salt
1 tsp cinnamon
1/2 tsp allspice, ground
1 tsp mace,or nutmeg can be used.if using nutmeg, use 3/4 tsp.
1 tsp clove, ground
1/2 c liquid fat (oil)
1 1/4 c water
1 Tbsp pure vanilla extract

Steps:

  • 1. 1. Sift together all dry ingredients.
  • 2. 2.Add liquid fat with water and vanilla and stir until well mixed.
  • 3. 3.Bake in layers in a moderately hot oven-375 degrees for 20 minutes.Or in a loaf pan in a moderate oven (350 degrees) for 45 minutes. 9 x 9 inch pan for 30 minutes at 350 degrees.
  • 4. Note: This recipe can be easily doubled, and put in a 9x13 inch cake pan. Bake at 350 degrees for 30 to 40 minutes. Check at 35 minutes using a toothpick.If your toothpick comes out clean, remove from the oven. If not, bake for another 5 to 10 minutes.
  • 5. Frost, but we like it plain. Opt. I have tried this with 3 mashed bananas added, and it's Great! You may add chocolate chips with the bananas as well. This is a heavy moist, wonderful Spice cake. You may need to increase baking time to 45 minutes when adding the bananas.

2 t each baking soda, cinnamon, cloves & ginger
6T melted margarine
1 1/2 C sugar
1/2t salt
1 1/2 C milk
8 oz whole cranberry sauce

Steps:

  • In bowl stir flour, sugar, baking soda, spices, and salt until well blended. Combine milk and margarine. Stir alternately with cranberry sauce into dry ingredients just until well blended. Pour into well-greased 9" sq baking pan. Bake on middle rack in preheated oven. Serve warm or cold, cut into squares
