"EGG NOT" (EGGLESS EGGNOG)



I developed this recipe because of my love for eggnog and my dislike of the thought of drinking raw eggs. I spent quite a long time and much trial and error before being confident enough to finalize this recipe. Tastes just like the real thing! Enjoy!

5 cups milk, divided
½ cup white sugar
1 (3.4 ounce) package instant vanilla pudding mix
1 ½ teaspoons rum-flavored extract
¼ teaspoon ground nutmeg
¼ teaspoon ground allspice
¼ teaspoon ground ginger

Steps:

  • Blend 2 cups milk, sugar, pudding mix, rum-flavored extract, nutmeg, allspice, and ginger in a blender on medium-high speed until smooth; pour into a pitcher. Stir remaining 3 cups milk into mixture. Refrigerate eggnog until thickened, at least 1 hour. Stir well before serving.

1 (3 ounce) package jello instant vanilla pudding
1/2 cup sugar
2 teaspoons vanilla
1/2 teaspoon nutmeg

Steps:

  • In large bowl, mix pudding with 1 cup milk.
  • When pudding is thick, add remaining ingredients, mix very well.
  • Chill.
  • For Vegetarian use a Vegetarian Instant Vanilla Pudding Mix.

4 cups skim milk, divided
1 (1 ounce) package instant sugar-free vanilla pudding mix
1 cup egg substitute
1 teaspoon vanilla extract
¼ teaspoon salt
¼ teaspoon ground nutmeg

Steps:

  • In a medium bowl combine 2 cups milk and pudding mixture; stir well until thickened.
  • To the pudding add remaining 2 cups milk and egg substitute; mix well. Stir in vanilla extract, salt and nutmeg until well blended and coats a spoon.
  • Refrigerate overnight.

1 ½ quarts milk
2 ½ teaspoons rum flavored extract
½ teaspoon nutmeg

Steps:

  • In a large bowl, combine the pudding mix with 2 cups of milk, following package directions; allow to chill for 5 minutes.
  • To the pudding stir in the rum flavoring and nutmeg, then slowly mix in the remaining 4 cups of milk until the mixture is a thick but drinkable consistency. Chill until ready to serve.

This tastes just like the real thing! I found this online few years ago while looking for recipes for family members that were allergic to eggs. I make this in a large glass gallon jar with lid. Just give it a shake or stir before serving.
