1 tablespoon unsalted butter
Reserved diced 1/2 medium onion from Corn Salsa recipe
Reserved 2 hot dogs from Corn Dogs recipe, sliced into 1/2-inch thick slices
4 large eggs
Kosher salt and freshly ground black pepper
1/2 cup shredded Cheddar

Steps:

  • In a medium skillet over medium heat, add the butter. When it is melted, add the onions and cook until they begin to soften, about 5 minutes. Add the hot dogs and cook to heat them through.
  • Whisk the eggs and season with salt and pepper. Lower the heat in the skillet, pour in the eggs, and sprinkle the cheese on top. Cook, stirring often, until the eggs are cooked to your liking. Serve hot.

I really can't remember the first time I had eggs with hot dogs - I know it was many, many years ago. I think it comes from the days when we use to fry bologna slices. It's good with just the eggs and dogs, but also good with diced green bell peppers and diced onions with cheddar cheese. I serve this with orange slices, English muffins, and sliced tomatoes. Preparation and cooking times are an estimate.

1 egg, beaten
1 tablespoon water
1 hot dog
salt and pepper

Steps:

  • Use 1 egg per 1 hot dog.
  • Beat egg and add 1 tablespoon water.
  • Slice hot dog into about 1/4 in slices and brown in a little vegetable oil.
  • Add beaten egg and stir to scramble together.
  • Add salt and pepper.
  • Just before egg mixture is completely cooked remove skillet to a hot pad. This should keep the egg mixture from getting too dry.

1/2 lb hot dogs, cut into 1/4-inch pieces
1/4 cup chopped onion, if desired
1/2 cup Original Bisquick™ mix
1 cup milk
2 eggs
1 cup shredded Cheddar cheese (4 oz)
Ketchup and mustard, if desired

Steps:

  • Heat oven to 400°F. Spray 9-inch pie plate with cooking spray. Layer hot dog pieces and onion in pie plate.
  • In medium bowl, stir Bisquick mix, milk and eggs with wire whisk or fork until blended. Pour into pie plate. Sprinkle with cheese.
  • Bake 25 to 30 minutes or until knife inserted in center comes out clean. Let stand 5 minutes before serving. Serve with ketchup and mustard.

1 large white onion (chopped)
1/2 cup butter
2 (10 1/2 ounce) cans tomato soup
1 (12 ounce) bag egg noodles
1 1/2 cups milk
salt
pepper
1 cup shredded cheddar cheese

Steps:

  • Melt butter in large pot.
  • Add onions and sauté for about 1 minute on medium heat.
  • Add chopped hot dogs and sauté for 1 minute.
  • Add 2 cans of tomato soup and of milk.
  • Add egg noodles and mix well.
  • Cover and let simmer until egg noodles are tender.
  • Add cheddar cheese and cover and let cheese melt.
  • Salt and pepper to taste.
