This was good and filling - the original recipe (Weight Watchers Magazine January 2009) used ham - I used some leftover chicken instead. This is about 3 WW points/serving.

1 cup egg substitute (Egg Beaters)
1 1/2 cups spinach, chopped
1/2 cup part-skim ricotta cheese
1 cup cooked chicken (I used 1 chicken breast, see note in description)

Steps:

  • Whisk together ingredients in a bowl.
  • Spray skillet with Pam and heat of medium.
  • Pour egg mixture into skillet and cook, stirring until done.
  • Note: I also think this will work as an omelet, cooking until done and folding in half.

2 tablespoons canola oil
12 drops yellow food coloring

Steps:

  • Combine all the ingredients.
  • Blend until smooth.
  • Store in fridge up to one week; you can also freeze.
  • Equivalent: 1/4 cup equals one egg.
  • To scramble: Fry slowly over low in a non-stick pan; spray with Pam if desired.
  • For baking, use 1/4 cup to equal one egg.

1/2 cup Splenda granular, sugar substitute (or more to taste)

Steps:

Steps:

  • In a small bowl, combine egg mixture ingredients.
  • Spray a medium size skillet with cooking spray, then heat to medium. Pour egg mixture into skillet, cook, turning mixture occasionally until mixture is set but not dry, about 3 minutes.
  • Split and toast english muffins.
  • Combine softened butter with drops of cayenne pepper sauce to taste. Lightly spread on muffin halves. Spoon egg mixture onto muffin halves; top with cheese slices.

1 1/2 cups Egg Beaters egg substitute (1-1/2 cups = 12 oz)
1/2 cup shredded reduced-fat swiss cheese (1/2 cup = 2 oz)
1/4 cup nonfat milk
cooking spray
10 asparagus spears, cut into 1-inch lengths
1 small onion, thinly sliced
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1 medium tomatoes, coarsely chopped

Steps:

  • Preheat broiler.
  • Mix Egg Beaters, cheese and milk in medium bowl until well blended; set aside.
  • Spray medium skillet with ovenproof handle with cooking spray; heat over medium heat.
  • Add asparagus, onions, salt and pepper; cook and stir 3 minutes, or until vegetables are crisp-tender.
  • Add tomatoes; cook 1 minute, stirring occasionally.
  • Add Egg Beaters mixture.
  • Reduce heat to low; cover skillet with lid. Cook 12 minutes, or until bottom of frittata is set but top is still slightly moist. Remove lid from skillet.
  • Place skillet under broiler. Broil 2 minutes, or until top is set but not browned.

This is a little different than some of the ones on this site as it uses canola oil for a little extra boost in flavor. I have noticed that some of the egg substitutes are calculated wrong on the nutritional breakdown. (I think they calculated the egg whites as whole eggs). These work out to be about 30 calories per 1/4 c. and less than 1 gram of fat. 1/4 c. equals 1 egg; 1/2 c. equals 2 eggs and so on. This freezes well as long as there are no yolks! Old ice cube trays work well for this.

2 egg whites, from large eggs
4 drops yellow food coloring

Steps:

  • Sprinkle powdered milk over egg whites, then beat them with fork until smooth. Add food color, and beat until blended. This makes 1/4 cup, which is equal to 1 large egg. If you use this homemade substitute for scrambled eggs, cook it in vegetable oil or margarine so the eggs won't be too dry.

Steps:

  • Omelet with toppings:.
  • In 10 or 12 inch skillet add olive oil and heat on medium setting.
  • Soak dried cilantro with 4 tblsp cold water or used fresh chopped cilantro.
  • Mix milk with Egg beaters.
  • Pour in Egg Beaters mixture in skillet.
  • Turn heat down to low setting.
  • Sprinkle with salt.or salt substitute.
  • Sprinkle with cumin.
  • Sprinkle with diced green onion.
  • Sprinkle with dried soaked cilantro, drained and squeezed.
  • When the edges start to cook, tip the skillet so the remaining uncooked.
  • mixture can flow under the omelet on all sides.
  • When the middle of the omelet is set, slide out on a serving platter.
  • Top with green chilies, optional black beans, salsa and olives.
  • Sprinkle with shredded cheese.
  • Note: You can keep warm in a 250* oven before the shredded cheese is
  • used.
  • Omelet Tortilla Wraps:.
  • Warm the tortillas in a microwave and place in a basket with a towel covering to keep warm.
  • Follow the steps and place the omelet on a platter.
  • Cut the omelet into 4 sections.
  • Place each omelet section in a warmed tortilla.
  • Add the green chilies, optional black beans, salsa, cheese and olives.

3 tablespoons water
1 tablespoon soy sauce
1 cup bean sprouts
2 green onions, thinly sliced
2 teaspoons cornstarch
1/2 cup beef broth
1 tablespoon soy sauce

Steps:

  • Beat eggs with water and soy sauce.
  • Stir in bean sprouts and green onions; mix well.
  • Spray an 8-inch (20 cm) non-stick skillet with cooking spray.
  • Heat skillet over medium heat.
  • Pour in one third of egg mixture.
  • As mixture sets at the edges, with spatula, gently lift cooked portion to allow uncooked egg to flow underneath.
  • Cook until bottom is set and top is almost set.
  • Slide onto a plate.

2 cups all-purpose flour, unsifted
3 teaspoons baking powder
2 teaspoons sugar or 2 teaspoons Splenda sugar substitute, if you have it
1 teaspoon salt
1 3/4 cups skim milk
1/2 cup Egg Beaters egg substitute
1/4 cup corn oil

Steps:

  • In a mixing bowl, blend together flour, baking powder, sugar and salt.
  • In another bowl combine milk, egg beaters and corn oil.
  • Add to dry ingredients.
  • Beat with rotary beater just until mixture is well blended and only a few small lumps remain.
  • For each pancake pour 1/4 cup of batter onto a hot griddle.
  • If you don't have a non stick griddle you should lightly oil it first.
  • Bake until pancakes are bubbly and edges look dry Turn and bake until browned on underside.
  • Serve with your favorite low fat topping.

1 pkg jimmy dean sage sausage crumbled
6 medium russet potatoes cubed
1 large onion diced
1/.2 c diced red, green and yellow or orange peppers
1/2 qt better-n=eggs southwestern style eggs
optional tomatoes, cut up drained-jalapeno for those who like it hot
optional sprinkle plate servings with shredded cheddar cheese before serving

Steps:

  • 1. Veggies may be cut up ahead and refrigerated to save prep time when making except for potatoes and tomatoes Tomatoes need to drain and will be added to cooked food last. Potatoes will turn black if left too long in the air once peeled. Note: if using jalapeno peppers, I would keep seperate until ready to add veggies to pan. You could also buy the onions and peppers already cut up in your freezer area of your stores to save even more of your time.
  • 2. Spray large chicken fryer pan with tall sides with pan soray. Peel/or not..well washed and dried potatoes. . Then drizzle small amount of oil in pan. Add about two tablespoons butter. Mix well until melted Add cubed potatoes and start on high heat until they start browning nicely. Turn heat to low and cover. Cook until ready to add veggies. Remove cover and leave heat on low. You want to keep them warm only while adding other veggies.
  • 3. Add cut up veggies. Mix well. Continue cooking uncovered until veggies are tender. Turn often to evenly cook all veggies. While veggies are cooking on low heat take a small fry pan and spray with pan spray and cook sausage. Crumble as it cooks. When no longer pink anywhere, remove from heat and add all (yes even the grease) to potatoes and veggies. mix well. Using same pan as sausage, Re-spray pan and pour Better-n-Eggs into pan and scramble until all are done. Add this to Potato pan. Mixing gently so you don't mash the potatoes. If using tomatoes, now would be the time to add them. Continue to heat until all is heated through and veggies are all cooked and tender. NOTE: i ADD SHREDDED CHEDDAR CHEESE ON TOP JUST BEFORE SERVING.

This is my breakfast every morning at work. High in protein, low in fat and calories, high in taste. This is a FANTASTIC and FILLING breakfast for those on the go. I use crumbled goat cheese, but feta or even shredded cheddar or whatever type you like will work great. You will need a microwave. You can also substitute the egg whites (in a carton) as well). As for the hamsteaks - I use the farmland hamsteaks - thicker than regular ham lunch meat and only 70 cals per slice! (I find these at wally world in the middle of the grocery section where the full hams are located). As far as storage to work - I just use the small ziplock containers in my lunch bag!

Steps:

  • In a microwavable bowl, place egg beaters and microwave for 2 minutes. Remove and fluff up with fork - there will be liquid at the bottom.
  • Place back in microwave and microwave for 1 more minute or until all the liquid has been cooked.
  • Slice up the ham how you prefer (I cut it into strips and cut those down). Microwave the ham for 30 seconds.
  • Place in the bowl with the eggs and top with the cheese.
