"WE'RE GOING BANANAS" BREAD



Another all time household favorite from "the Best of Bridge" series. Going Bananas is an excellent bread, and our fmaily has enjoyed it for years. 12 minutes to mix, and 60 minutes to bake and the rest is history.

Number Of Ingredients 10

1 1/2 cups sugar
3 eggs
3/4 cup vegetable oil
2 cups flour
2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1 teaspoon allspice
2 cups bananas, mashed
1/2 cup raisins

Steps:

  • Grease and flour a bundt pan or 2 large loaf pans (8"X4"X3").
  • Beat the sugar and eggs until creamy.
  • Mix in the oil.
  • Sift the dry ingredients togethr and add to the creamed mixture.
  • Beat in the bananas (if they are very ripe) or mash them and mix in if the are on the less ripe side. (2 cups is approximately 4 small bananas).
  • Mix in the raisins. (I like to soak the raisins for about 30 minutes in warm water then dredge in flour so they won't sink during baking).
  • Pour this mixture into a bundt pan, and spread out evenly.
  • Bake in a 350 degree oven for 60 minutes or until done (test with a toothpick, if it comes out dry the cake is done).
  • TURN OUT OF THE PAN WHEN THE CAKE IS COOL.

I don't remember where I found this recipe, but I'm 300% in love with it! It makes a little more than 2 loaves (maybe 2 loaves and about a dozen small muffins?) This is my go-to recipe anytime I have bananas getting too ripe, or need something quick to take somewhere! It's really moist, and you can add extras too!

3 1/2 cups flour
3 cups sugar
1 1/2 teaspoons baking soda
1 1/2 teaspoons salt
1 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon vanilla
4 eggs
2/3 cup water
1 cup vegetable oil
2 cups mashed bananas
1 cup walnuts (optional)
1 cup chocolate chips (optional)

Steps:

  • Heat oven to 350 degrees F.
  • Mix sugar, vanilla, eggs, water, vegetable oil, and mashed bananas together.
  • Add dry ingredients to wet mixture and mix well.
  • Add your extras, if you want.
  • Pour into 2 greased, or parchment lined, bread pans approximately 2/3 full.
  • Bake for approximately 1 hour, until toothpick comes out clean when inserted in the center.
  • (For extra batter, pour into lined muffin pan and bake for approximately 20 minutes, or until done.).

Another family classic, easy and yummy! The riper the bananas the better. I quite often throw in a handful of chocolate chips. In a pinch, you can use ordinary vegetable oil (not olive oil) instead of the melted butter.

Number Of Ingredients 6

3 bananas, mashed
1 cup sugar
2 eggs
1 1/2 cups flour
1 teaspoon baking soda
1/4 cup melted butter

Steps:

  • Pre-heat oven to 350 degrees F or 180°C.
  • Grease and flour one loaf pan.
  • Mix ingredients in the order given.
  • Pour into loaf pan and bake for one hour or until the loaf tests clean.
  • If the top starts to brown too much, cover with aluminium foil and continue cooking until bread is done.

5 bananas, very ripe and mashed with fork
1/2 cup margarine, softened (1 stick)
1/2 cup corn oil
2 cups light brown sugar, firmly packed
4 large eggs
2 teaspoons banana flavoring (or vanilla extract)
3 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon iodized salt
1 cup semi-sweet chocolate chips

Steps:

  • Pam spray 3 or 4 (4 x 8) store-bought aluminum foil pans; set aside. Preheat oven to 350°F Measure flour, baking soda and salt in a small mixing bowl and whisk to aerate; set aside.
  • In the bowl of an electric mixer, beat together the margarine, oil and brown sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Add the mashed bananas and flavoring. Add flour mixture to the bananas mixture and mix until just blended; the batter should be slightly lumpy. Fold in chocolate chops.
  • Divide the batter into the prepared pans. Bake for about 1 hour or until toothpick inserted in center comes out clean. Cool before slicing and cut into thick slices to serve. Enjoy!
