CHEESY HAM BREAKFAST SKILLET HASH
Easy peasy, ham and cheesy-what's not to love about this yummy hash brown skillet? Like any great brunch dish, it's hearty and filling, bursting with flavor and oh-so-simple to make. Consider this Cheesy Ham Breakfast Skillet Hash comfort food at its finest!

- In 10-inch nonstick skillet, melt butter over medium-high heat. Add onion and bell pepper; cook 3 to 5 minutes, stirring frequently, until softened.
- Add water, oil, potatoes and seasoning (from kit) to vegetables in skillet; stir well. Heat to boiling, stirring occasionally. Cover; reduce heat to medium-low. Simmer, without stirring, about 12 minutes or until liquid is mostly absorbed.
- Increase heat to medium-high. Stir diced ham into potato mixture; cook uncovered 3 to 5 minutes, stirring occasionally, until liquid is absorbed, and ham is heated through.
- Push potato mixture to one side of pan. Add beaten eggs to bare side of pan; cook 1 to 2 minutes, stirring occasionally, until firm. Gently stir eggs into potato mixture; remove from heat.
- Squeeze topping pouch (from kit) to soften; cut open. Squeeze topping over potato mixture. Top with chives.

EASY/PEASY ESSENTIALS: CHEESY, SPICY HAM SAMMIE
I sliced, vacuum sealed, and stored about 70 pounds of ham the other day, but I left a bit out for an experimental sandwich. It is a combination of good ham, cheeses, and spices, served on a freshly baked ciabatta roll. So Scrummy. So, you ready... Let's get into the kitchen.

- PREP/PREPARE
- You will need a medium size skillet to make this recipe.
- The Bread I like the texture toasted ciabatta bread gives to this sandwich; however, use whatever bread you have on hand, toasted or not... up to you. The Cheese As with the bread, come up with your own combination of cheeses, but about an ounce is all you need. Much more and it becomes a cheese, not a ham, sandwich.
- Gather your ingredients (mise en place).
- Chop up the ham. Chop, Chop, Chop.
- Add the butter to a skillet over medium-low heat, and when it melts stir in the hot sauce. Then add the chopped ham.
- Stir until it is warmed through and begins to crisp a bit, about 5 - 7 minutes. Add the cheese, remove from the heat, and let the cheese melt into the hot ham, about 1 - 2 minutes.
- I usually toast the bread, then add some brown mustard to one side, and some yellow to the other.
- They are optional but some nice tart dill slices go really good on this bad boy. Even some thinly sliced garden tomatoes.
- PLATE/PRESENT
- Serve while nice and warm with some chips, fries, or maybe just a nice side salad. Enjoy.
