TEX MEX WON-TONS
These are tasty appetizers. If I'm planning on serving them to company, I make them ahead, freeze them and then re-heat them.

Steps:
- Filling: In a large skillet, cook ground beef, onion and green pepper until meat is browned and vegetables are tender.
- Drain off fat.
- Stir beans, cheese, ketchup, chile powder and cumin into meat mixture and mix well.
- Place a won-ton skin with 1 point towards you, spoon a generous teaspoon of meat mixture onto center of skin, fold bottom point over filling and tuck point under filling.
- Fold side corners over filling, forming an envelope shape.
- Roll up remaining corner, moisten point with water and seal.
- Fry in hot oil (375°) about 1 minute per side.
- Drain, serve warm with salsa.
- These can also be frozen after cooking.
- Re-heat at 350° for 10-12 minutes.

MEXICAN WONTONS
These are crispy, cheese-filled appetizers. They can be prepared ahead of time and reheated in the oven until they sizzle before serving. Serve with salsa.

Steps:
- Place 1 to 2 teaspoons of shredded cheese into the center of each wonton skin. Fold the top and bottom corners in toward each other and roll it up like a little egg roll. You will have to seal the wonton with a little water where the ends meet.
- Heat oil in a deep pot to 365 degrees F (180 degrees C). Fry the wontons two or three at a time. Drain on paper towels. Serve immediately.

Steps:
- Grease 24 miniature muffin cups lightly with oil.
- Press one wonton wrapper into each cup.
- Brush the wontons with oil.
- Bake at 375 degrees for 10 minutes, or until golden brown.
- Remove from muffin cups and arrange on a baking sheet.
- Brown the sausage in a skillet, stirring until crumbly, and then drain.
- Combine the sausage, cheddar cheese, Monterey jack cheese, salad dressing, red pepper and olives in a bowl and mix well.
- Spoon one tablespoon into each wonton.
- Bake at 325 degrees for five minutes, or until bubbly.
EASY WONTONS
I experimented with different wonton recipes, until I came up with this one. These are a favourite in my home & disappear very quickly! You can deep fry these if preferred. I buy my wonton wrappers from Asian supermarkets.

Steps:
- In a bowl mix together pork mince, cabbage, spring onions and chillies.
- Add garlic, ginger, hoisin sauce, oyster sauce and sesame oil; stir until well combined.
- Separate wonton wrappers and lay on a clean surface.
- Place 1- 2 teaspoons of mixture in centre of each wrapper; brush edges with water.
- Bring corners of wrappers together and pinch tightly to seal.
- Bring a saucepan of water to the boil, place a bamboo steamer lined with greaseproof paper on top.
- Place 5- 6 wontons in steamer and steam over simmering water for about 8 minutes, or until cooked.
- Serve with soy sauce or dipping sauce of choice.
