1 envelope reduced-sodium taco seasoning
3/4 cup water
1 medium head iceberg lettuce, torn (about 8 cups)
2 cups shredded cheddar cheese
2 cups broken nacho-flavored tortilla chips
1/4 cup Catalina salad dressing

Steps:

  • In a large skillet, cook beef over medium heat 6-8 minutes or until no longer pink, breaking into crumbles; drain. Stir in taco seasoning and water; bring to a boil. Reduce heat; simmer, uncovered, 4-6 minutes or until thickened, stirring occasionally. Cool slightly., In a large bowl, toss lettuce with cheese. Top with beef mixture and chips; drizzle with dressing and toss to combine. Serve immediately.

2 skinless, boneless chicken breasts, 16-ounce total
1 tablespoon reduced sodium taco seasoning
1/2 teaspoon cumin
1 cup canned black beans, rinsed
1 cup chunky salsa

1/4 cup reduced fat Mexican cheese blend, shredded

  • Place the chicken in the slow cooker and season with taco seasoning and cumin. Pour the beans over the chicken and top with salsa. 1 (1 1/4 ounce) pkt. taco seasoning

Steps:

  • Remove the lid and plastic portion contol top of your dressing bottle.
  • Pour 1/2-3/4 cup of dressing into a pyrex bowl with spout and set aside.
  • Using a funnel, add the entire seasoning pkt. to your ranch bottle.
  • Put the lid on and shake to completely mix together.
  • Tap bottom of bottle on counter to free up extra space at the top.
  • Add what you can of the remaining dressing to the bottle. (it won't all fit).
  • Chill.

You can add whatever you like for toppings: tomatoes, avocado, black olives, jalepinos. Whatever really. Depending on what you put on them, they have the potential to be pretty healthy. 1 (15 ounce) can black beans, drained and rinsed
1 (10 ounce) can diced tomatoes with green chilies
1 (1 1/4 ounce) packet taco seasoning
4 cups tortilla chips
4 cups iceberg lettuce

Steps:

  • Drain and rinse the black beans and put them in a large skillet. Mash them slightly with a spoon.
  • Add the diced tomatoes with green chilies. For spicier salad use the liquid from the can, for milder drain the can and use 1/3 of the can of water.
  • Add the taco seasoning. Mix well.
  • Simmer until it reaches the thickness you'd like, I like it about chili consistency. Don't turn the heat too high or it'll burn.
  • Cover a plate with tortilla chips, I like to crunch them slightly so that they are bite size.
  • Top with lettuce, and bean mixture.
  • Add toppings as you like them: cheese, salsa, sour cream, avocado, tomato, onion, jalapeno, peppers, ect.

1 pound of Turkey burger
1 packet of taco seasoning
3/4 cup of water
1 can of light red kidney beans (drained)
half of onion chopped up
1 bottle of light catalina honey dressing
1 package of shredded lettuce
box of grape tomatoes chopped
1 package of shredded monterey jack cheese
1 large bag of doritoes
Sour cream

Steps:

  • in a fairly large skillet fry up the turkey burger until well done. add the kidney beans, the taco seasoning, water and onion. Bring to a simmer. When done put meat mixture in freezer for quick cooling time. Next we start the salad, In a Large bowl add the lettuce, chopped up tomatoes, cheese, some crushed up doritoes (not the whole bag, save some for your plate) set aside until the meat mixture is cool. Once the meat mixture is cool add it to your salad mixture...add the doritoes and the dressing. Stir up really good. Let your guests plate their own. We put doritoes on bottom, then salad, then a dollop of sour cream to top it all off!! ENJOY!!
