Steps:
- preheat oven 375.
- In a Medium pot heat and mix everything but salsa and cheese. Once heated,Pour salsa over rice mixture,top with cheese.
- bake 375 for 30 minutes.
- Serve with guac and chips,and a salad.
EASY DORITO CRUSTED TACO CHICKEN OVER MEXICAN RICE
Super easy. I used boil in bag rice and Jack's salsa. It was excellent.

Steps:
- Process the doritos in food processor until fine. Add the salt, pepper, garlic powder, chili powder, paprika, and cumin. Mix well. Place in shallow bowl.
- Place flour in another shallow bowl. Place beaten eggs in a third shallow bowl. Dredge each piece of chicken in the flour shaking off extra. Dredge in eggs mixture then press in Doritos mixture. Place on a plate and refrigerate 15 minutes.
- Add oil to frying pan and cook until on both sides until browned then transfer to 350 degree oven to finish the cooking about 10 minutes.
- Mix the cooked rice with 1 cup salsa. Serve the chicken cut into strips on top of rice. Top the chicken with more salsa then cheese and sour cream.
EASY TACO CHICKEN AND RICE SKILLET
This is easy to put together and big on flavor, adding in more corn won't hurt or add in some canned drained beans, if using skin-on chicken then cooking time must be increased before adding in the rice, for some heat add in a minced jalapeno pepper and/or crushed chili flakes

Steps:
- In a large saute pan (large enough to hold the chicken and rice), saute the chicken breasts in oil, about 3 minutes on each side to brown.
- Add in chicken broth, minced garlic (if using), tomato sauce and dry taco seasoning mix. Bring to a boil, and simmer covered for 10 minutes, or until chicken is cooked, stirring occasionally.
- Add in the drained corn and bell pepper; bring to a full boil.
- Stir in rice, cover and remove from heat.
- Let stand 5 minutes, or until the rice is tender.
- Fluff with a fork.
- Sprinkle with grated cheddar cheese (if using), serve.

EASY TACO RICE
Steps:
- Prepare the Spanish Rice according to the package directions. I usually add a little extra seasoning. Cook the ground beef throughly. (I usually use a half pound.) Add Taco Seasoning & water to Beef. Drain the black beans and add them to the beef. Adjust the seasoning to your taste. Crumble Tortilla Chips on plate. Layer the ingredients in the following order: Rice Beef/Bean Mixture Shredded Cheese Lettuce Sour Cream Tomatoes Salsa if desired
