Steps:
- Drain pineapple, reserving juice. Set pineapple aside. Add enough water to juice if needed to measure 1 cup. In a large skillet over medium heat, cook the meatballs, green pepper and juice mixture until heated through., In a small bowl, combine the cornstarch, cold water, vinegar and soy sauce until smooth. Add brown sugar and reserved pineapple to the pan; stir in cornstarch mixture. Bring to a boil; cook and stir until thickened, about 2 minutes. If desired, serve with rice and top with green onions.

I think this is a Mr. Food recipe but I saw it made on a news broadcast. It's awesome served with rice and oh so easy!! They used one of those new crock pot liners and so did I and it does make for super quick cleanup.

Steps:
- If using liner, place it in a slow cooker bowl, fitting it snugly against the bottom and sides of the bowl; pull top of liner over the bowl rim.
- Place all ingredients in the slow cooker; stir gently then cover with the lid.
- Cook on low setting for 7 to 8 hours, or on high setting for 4 to 5 hours, until done.
- Carefully remove the lid to allow steam to escape.
- Serve directly from the slow cooker over rice.

EASY BAKED SWEET AND SOUR MEATBALLS
A super quick 'home-made' sweet and sour sauce with tasty meatballs that are baked in the oven. Serve with rice or over warm noodles as a main meal. Alternatively serve them as a party food with cocktail forks or toothpicks. It may seem there are a lot of ingredients, but the sauce and meatballs take very little time to prepare. A budget friendly family meal or a great recipe to make for a potluck. Steps:
- For the sauce - mix the cornstarch with ¼ cup water in a small bowl. Set aside.
- Add all of the remaining sauce ingredients to a small saucepan and stir over a medium heat for approximately one minute.
- Add the cornstarch mixture and stir to combine.
- Continue stirring until the mixture becomes thick and glossy- about 5 minutes. Set the sauce aside to cool.
- For the meatballs - Preheat oven to 350°F (175°C ).
- Use a food processor to make fresh breadcrumbs ( I used 4 slices of bread with crusts removed).
- Add all meatball ingredients to a medium sized mixing bowl and thoroughly mix together.
- Roll into small meatballs with your hands, using about a tablespoon of mix at a time.
- Place meatballs in a 9 x 13 baking dish and, if using as a main meal, add the optional cup of pineapple chunks if desired - Just spread them evenly around the meatballs.
- Pour the sweet and sour sauce over the meatballs , ensuring that they are all covered.
- Bake for 30 minutes and stir. Continue to bake for another 15 minutes and stir again. Check for doneness and bake longer if needed.
- Serve over rice or noodles for a main meal. Lightly sprinkle each meal with toasted sesame seeds or finely sliced green onions for presentation if desired.
- Can be served as cocktail meatballs in a single large bowl with cocktail forks or toothpicks.

- Combine the sausage, bread crumbs and egg with your hands until well mixed and sticking together.
- Form meatballs by hand and brown in a large skillet over Medium/High heat.
- Pour sauce over meatballs and simmer over Medium/Low heat for about 30 minutes.
- Note: You will need to add a little water to the sauce as it cooks to avoid it getting too dry.

KITTENCAL'S EASY SWEET AND SOUR PINEAPPLE MEATBALLS
You won't find this recipe anywhere else, it's my own creation! I have even made this recipe using left over cooked beef or cooked cubed chicken breast, it is delicious! Steps:
- Prepare the ground beef into meatballs using your favorite recipe for meatballs, and shape into about 1-inch balls.
- Heat oil in a skillet, and brown the meatballs until no longer pink (you can also bake them in the oven) set aside.
- Drain the 2 cans of pineapple tidbits; set pineapple tidbits aside.
- If needed, add water to the juice to measure 2 cups, and place in a large saucepan (if the juice from the cans measures more than 2 cups add in all the juice with no water).
- To the juice/water mixture, stir in vinegar, brown sugar and soy sauce, garlic, salad dressing, sweet and sour sauce, salt and pepper; bring to a simmer (adding more brown sugar (or white sugar) to taste if desired.
- When the sauce is to desired taste, add in the cooked meatballs and carrots.
- Simmer for about 25-30 minutes, or until carrots are crisp-tender.
- Stir in green pepper, and reserved pineapple tidbits; cover and simmer for about 10-15 minutes longer, or until green pepper is crisp-tender (do not over cook the peppers!).
- This step is only optional if you prefer a thicker sauce, in a small bowl combine cornstarch and water until smooth, and stir into the meatball mixture.
- Bring to a boil; cook, stirring for about 2 minutes, or until sauce has thickened.
- Serve over rice.
