SOFT AND EASY WHITE BREAD (BREAD MACHINE)
Another of my "go to" easy bread machine recipes. This promises to be fail proof and turns out a soft bread w/ a flaky crust. Perfect for all uses; my favorite is a big slice popped in the micro for 10 seconds and then slathered w/ butter for that "hot out the oven" goodness!

Steps:
- 1. Place water, sugar, and yeast in bread pan. Allow yeast to dissolve and foam for 10 minutes.
- 2. Add oil, flour, and salt (ending w/ salt on top of flour) to yeast mixture in bread pan. Select basic or white bread setting.
EASY SOFT FRENCH BREAD
My aunt has been making this bread forever. This is easy to make and requires ingredients that are often on hand. It is incredibly delicious!!!

Steps:
- Add sugar, warm water, then yeast into mixing bowl. Let yeast prove.
- Add rest of ingredients, kneading while adding flour one or two cups at a time.
- Knead for 5 minutes.
- Let the dough rise for 1 hour, until doubled.
- Knead the dough down.
- Split into two sections.
- Using rolling pin, one at a time flatten each section into a large rectangle (about 17"x 9").
- Roll the dough up to make a long loaf. Pinch the seam closed and turn the ends under.
- Place the two loaves on separate large cookie sheets, seams down (I lay it diagonally), cover with a light dishtowel, and let rise another hour.
- Bake at 350 degrees for 30 minutes.

- in a bowl put the warm water, yeast, sugar, gently stir..cover and set aside about 5 mins until frothy film forms on top...which means the yeast is activated.
- add the flour, salt, and shortening...mix well, until dough form...if too sticky add in more flour, little at a time...when you form a ball and the sides of the bowl is clean from flour, take the dough out and place the tablespoon of oil on the bottom of the bowl and put back the formed ball of dough.
- cover with a damp kitchen towel and place in a warm, dark place..I put in oven ( of course with oven not on)..wait an hour till it doubles in size.
- now you are ready to "punch" down the dough...on a floured surface knead the dough good 5 mins...
- divide the dough into 2 balls...shape any way you like, I made loaves...you can shape into breadsticks, rolls etc.
- put on a cookie sheet and cover again for another 30 mins....easy trick= take a clean shoe lace and run under water and place in the middle of loaf before putting in oven...this will create the dent on the bread.
- damp the top of the bread with water using brush, bake at 350 degrees for 30 mins....then brush the top with an egg wash and bake another 30 mins or until golden brown on top.
