8 large potatoes, peeled and sliced
14 slices Cheddar cheese
½ cup all-purpose flour
1 pinch salt and pepper to taste
1 cup skim milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a casserole dish.
  • Layer the bottom the casserole dish with potatoes. Cover the potatoes with a layer of cheese, followed by a light dusting of flour, salt and pepper. Repeat the layering process until all of the ingredients are used up. Pour milk over the entire casserole. Cover with aluminum foil.
  • Bake in the preheated oven until the potatoes are tender, about 45 minutes. Remove foil and return to oven; bake until cheese is bubbly and beginning to brown.

1 medium onion (optional)
4 tablespoons flour
3 tablespoons butter

1 cup milk (low fat or fat free is fine)

Steps:

  • Start by slicing the potatoes about 1/8-1/4 inch thick.
  • You may peel them first if you like.
  • In a casserole dish, lay down a single layer of potatoes.
  • Put some onion of top if you like.
  • Sprinkle lightly with flour, salt, and peper.
  • (If you like it really creamy, add more flour) Place 2-3 tabs of butter on top Repeat the layers to the top of the casserole dish.
  • Pour the milk over the top of the potatoes until the dish is about 2/3 full.
  • Bake at 375F for 1 hour.

6 -8 peeled potatoes
milk
1/2 cup butter or 1/2 cup margarine
flour
1 1/2 cups cubed ham
salt and pepper

Steps:

  • Preheat oven to 400°F.
  • Wash and peel potatoes, and slice into thin slices no 1/8 of an inch thick.
  • Butter a casserole dish, and place an even layer of potatoes in the bottom of dish.
  • Using a tablespoon sprinkle 2 tablespoons of flour over potatoes. Salt and pepper, Sprinkle with 1/4 of the ham.
  • Cut butter into small bits and sprinkle over the ham. leaving enough for 3 more layers.
  • Repeat layering, potatoes, salt and pepper, flour, ham and butter, until potatoes are all gone.
  • Pour enough milk over the whole casserole until it comes up to the top layer of potatoes.
  • Cover with foil and bake for 35 minutes.
  • Remove foil and back an additional 10 minutes until top is lightly browned and potatoes are tender. It should appear very bubbly and yummy.

I grew up with the traditional 'layered potato and onion' version of scalloped potatoes. My husband doesn't care for onions, so I had to find another way to enjoy this dish. I'm not willing to give up the flavour you get by using onions, so I finely chop them before cooking. That way they disappear from site but not from taste. This has become our standard recipe that has received lots of compliments, and is always requested when the kids come to visit. Especially good with meatloaf. You can vary the taste by adding different spices. I've even added peas to the assembly. Also, feel free to increase the amount of cheese. NOTE: Your sauce will thicken much quicker if you use warmed milk. Microwave it for 1-1/2 minutes on High.

Great for weeknights when time is at a premium, or if you have no room in the oven. (Note, I noticed other recipes for scalloped potatoes call for cheese or other ingredients - this is scalloped potatoes like my mom used to make, basically just white sauce and potatoes. We always eat ours with lots of ketchup on top!)

4 large idaho potatoes, sliced thinly
1 1/2 Tbsp butter
3/4 - 1 can(s) evaporated milk
1/2 can(s) water

  • 1. Preheat oven to 375 degrees F.

  • 1. Preheat oven to 375 degrees. Spray a small casserole dish with cooking spray and set aside.
  • 2. Fill a large sauce pan about 1/2 full of water and bring to a boil. While water is heating, peel potatoes and onion and slice into about 1/4" slices. Add potatoes and onion to water and return to boil. When water is boiling, cover and reduce heat to medium. Cook 7 to 8 minutes or until potatoes are just tender.
  • 3. Drain off all but about1/4 cup of water. Mix flour and evaporated milk with a fork until smooth. Pour into potatoes. Add salt, onion powder and garlic powder and return to heat. Gently fold being careful not to break up potatoes until sauce begins to thicken. Remove from heat and gently fold in 1/2 of the cheese until melted.
  • 4. Pour potatoes into casserole dish and top with remaining cheese. Bake for about 20 minutes or until bubbly.

While the pork braises away in the slow cooker, use the oven to make creamy scalloped potatoes and the microwave to make lightening-fast steamed broccoli.

1 tablespoon fine sea salt
½ teaspoon ground black pepper
1 (3- to 4-pound) pork loin roast
¼ cup balsamic vinegar
1 pound Yukon Gold potatoes, thinly sliced
2 tablespoons salted butter, melted
1 teaspoon garlic powder
1 teaspoon fine sea salt
½ teaspoon dried thyme
½ teaspoon dried sage
½ teaspoon ground black pepper
½ cup heavy cream
1 cup shredded mozzarella cheese
16 ounces broccoli florets (from about 3 small heads)
1 tablespoon salted butter
½ teaspoon fine sea salt
¼ teaspoon ground black pepper

Steps:

  • Cook the pork: Rub the salt and pepper over the pork. Place the pork in a slow cooker and pour the vinegar over the top. Cover and cook on high for 4 hours.
  • About an hour before the pork is done, make the scalloped potatoes: Preheat the oven to 375°F.
  • In a 2-quart square baking dish, toss the potatoes with the melted butter, garlic powder, salt, thyme, sage, and pepper. Arrange the potato slices in even layers in the baking dish, overlapping the potatoes in each layer slightly, then pour the cream over the top. Cover with a lid or aluminum foil and bake for 30 minutes. Uncover the baking dish, top the potatoes evenly with the cheese, and bake, uncovered, for 15 minutes more, or until the cheese is bubbling.
  • Just before serving, steam the broccoli: Place the broccoli in a large glass bowl and add about ¼ cup water. Cover with a microwave-safe lid or plastic wrap and microwave on high for 5 minutes, or until the broccoli is tender. (Alternatively, place the broccoli in a medium pot and add ¼ cup water. Bring the water to a simmer over medium heat, then cover and cook the broccoli for 10 minutes, or until tender.) Drain the broccoli and transfer to a serving dish. Add the butter, salt, and pepper and gently toss to combine. Cover and keep hot until serving time.
  • When the pork is done cooking, baste it with the vinegar mixture in the slow cooker. Transfer the pork to a cutting board and cut it in half. Slice one portion and set it aside. Shred the remaining pork either with two forks or using a stand mixer, then transfer it to an airtight container (you should have about 3 cups), and refrigerate for another use.
  • Serve the sliced pork with the scalloped potatoes and broccoli alongside.

4 -5 medium potatoes
1 lb hamburger (cooked untill crumbly)
1/2 cup cheese (shredded)
salt and pepper
garlic salt, if desired

Steps:

  • Slice potatoes in rounds (like potato chips), then boil about 15 min or until slightly tender.
  • While potatoes boil, cook hamburger in skillet, and heat up soup (reason to heat soup is that its less lumpy when mixed).
  • In 9x13 pan pour small amount of soup, then all of the potatoes and hamburger, top with remaining soup.
  • Bake 15 min @ 375, top with shredded cheese, serve and enjoy!
  • Very good with a side salad or french-style green beans.

2 lbs potatoes, thinly sliced
2 small onions, thinly sliced
3 tablespoons butter or 3 tablespoons margarine
2 tablespoons flour
1 teaspoon salt
1/2 teaspoon black pepper
1/8 teaspoon cayenne pepper (or to taste)
1 1/2 cups milk
1 1/2 cups shredded old cheese

Steps:

  • Pre heat oven to 375 degrees.
  • Boil potatoes and onions in saucepot until tender.
  • In separate saucepot, melt butter. Add flour, salt, black pepper and cayenne pepper. Mix Well.
  • Cook on medium heat one minute while stirring.
  • Gradually add milk, stirring until well blended.
  • Add cheese.
  • Cook until chesse is melted, stirring constantly.
  • Lay potatoes and onions in 9 x 13 inch baking dish.
  • Cover with cheese sauce.
  • Cover with foil.
  • Bake for 45 - 50 minutes, removing foil after 25-35 minutes.
