Sausage Stroganoff - An Easy Weeknight Dinner image

Sausage Stroganoff is an easy weeknight dinner that won't break the bank. Sausages, mushrooms, tomato paste and bacon in a rich sour cream sauce.

500 g beef sausages
1 tbsp olive oil
100 g bacon (roughly chopped)
1 medium brown onion (sliced)
500 g button mushrooms (sliced)
2 garlic cloves (crushed)
2 tbsp tomato paste
1 tsp sweet paprika
2 tsp fresh thyme leaves
2 tbsp dijon mustard
¾ cup beef stock
½ cup sour cream
salt & pepper to taste

Steps:

  • Fry the sausages (500g) in olive oil until they are cooked through, then remove them to a plate.
  • Add bacon (100g - roughly chopped) and onion (1 medium onion - sliced) to the same pan, and cook over medium heat until onion starts to soften. Then add mushrooms (500g - sliced) to the pan, continuing to fry until the mushrooms are browned.
  • Then add tomato paste (2 tbsp) and garlic (2 cloves - crushed) to the mushroom mixture and mix well. Stir over medium-high heat for 1 minute.
  • Add beef stock (¾ cup), dijon mustard (2 tbsp), sweet paprika (1 tsp) and thyme leaves (2 tsp) to the mushroom mixture and mix well to incorporate, then bring to a simmer.
  • Add back the sausages (whole or sliced) and continue to simmer until they are heated through. Stir through sour cream (½ cup) and serve.

20g unsalted butter
olive oil, for drizzling
6 pork sausages
350g chestnut mushrooms, sliced
1 tsp sweet smoked paprika
300ml soured cream
½ tbsp wholegrain mustard
150ml beef stock
400g dried tagliatelle
small bunch parsley, chopped

Steps:

  • Heat the butter and oil in a frying pan over a medium-high heat until foaming. Squeeze large chunks of the sausagemeat out of the skins and into the pan. Cook for 5-8 mins or until golden brown. Add the mushrooms and cook for a further 5 mins until starting to turn brown. Stir through the paprika and cook for 1 min before stirring in the soured cream, mustard and stock. Bring to a simmer and season to taste.
  • Meanwhile, cook the pasta in a large pan of salted water according to pack instructions, then add to the sauce with half the parsley. Serve in deep bowls with the remaining parsley sprinkled on top.

Valentine's Day is special for us because it is our wedding anniversary as well! Though this isn't a standard 'romantic' recipe, every time I prepare this dish the love flows freely! It is a way to show my husband I love him -- it is his favorite, but not mine. Every time I serve it my husband showers me with compliments, affection, and love because he knows it's my way of saying I love you any day of the week, not just Valentine's Day.

1 (16 ounce) package wide egg noodles
1 pound lean ground beef
1 tablespoon Worcestershire sauce
1 teaspoon seasoned salt
1 teaspoon minced garlic
1 (8 ounce) can sliced mushrooms
2 (10.75 ounce) cans condensed cream of mushroom soup
10 ¾ fluid ounces milk
1 cup sour cream

Steps:

  • In a large, heavy skillet, brown ground beef with Worcestershire sauce, seasoning salt, and garlic. Drain well, set aside.
  • Cook noodles in a large pot of boiling water until done. Drain.

1 package (12 ounces) medium egg noodles
1 pound fully cooked smoked sausage, cut into 1/2-inch pieces
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 cup sour cream
2 tablespoons grated Parmesan cheese
1/4 teaspoon seasoned salt
1/8 teaspoon pepper
2 tablespoons butter, melted

Steps:

  • Cook noodles according to package directions. Meanwhile, in a large skillet, cook sausage until heated through; drain. Remove with a slotted spoon and keep warm.
