1 (5 ounce) can salmon, drained and flaked
½ cup dried breadcrumbs
2 tablespoons minced onion
1 tablespoon Dijon mustard
1 egg, lightly beaten
1 teaspoon lemon juice
sea salt and ground black pepper to taste
1 tablespoon olive oil, or as needed
¼ cup light sour cream
1 teaspoon dill weed
¼ teaspoon garlic powder
sea salt to taste

Steps:

  • Mix salmon, breadcrumbs, onion, Dijon mustard, egg, and lemon juice together in a bowl; form into 2 patties.
  • Heat olive oil in a skillet over medium-high heat. Cook patties in the hot oil until lightly browned and cooked through, 4 minutes per side; season with sea salt and black pepper.
  • Mix sour cream, dill, garlic powder, and sea salt together in a bowl; serve alongside salmon patties.

Leftover or canned salmon made into these crispy salmon cakes creates a whole new meal with tons of flavor made extra delicious thanks to a super simple, creamy roasted red pepper sauce.

4 green onions (, roughly chopped)
1/3 cup Italian parsley (, chopped)
1/4 cup fresh dill (, chopped)
3 cups fine fresh bread crumbs from about 10 ounces of bread (, divided (I prefer french bread))
2 eggs
2 tablespoons butter (, melted)
2 tablespoons mayonnaise
1 tablespoon spicy brown mustard
2 teaspoons lemon juice
2 1/2 cups flaked cooked salmon ((about 15 ounces))
Kosher salt and freshly ground black pepper
1/2 cup vegetable oil (, for sautéeing)
4 red bell peppers ((or two 15-ounce jars of roasted red bell peppers))
2 cups heavy whipping cream
Kosher salt and cayenne pepper

Steps:

  • Add the green onions, parsley and dill to the bowl of a food processor and process until fine.
  • Add 1 1/2 cups bread crumbs, eggs, melted butter, mayonnaise, mustard and lemon juice. Pulse on and off until well mixed.
  • Add the chunks of salmon and season with kosher salt and black pepper and pulse on and off until gently combined and mixture begins to hold together. Be careful not to over process.
  • Cover and refrigerate for at least 30 minutes up to overnight.
  • Shape into patties 3/8' thick. Dip the patties into the remaining bread crumbs, and pat to coat all of the sides completely then set aside.
  • In a large skillet, heat the oil to medium or so that the oil sizzles when a bread crumb is dropped into it. Sauté the patties for 2 minutes or until golden brown on each side turning once. Place the patties on a plate lined with paper towels and cover to keep warm. Serve with egg noodles and red bell pepper cream sauce.
  • For the Red Bell Pepper Cream Sauce
  • Roast the whole peppers over medium high flame, turning often, until charred.
  • Place in a plastic bag, seal and allow to steam in the bag for about 10-15 minutes or until the skin peels off easily. Remove the skin, stem and seeds and coarsely chop the bell peppers.
  • In a medium pot over medium heat, add the bell peppers and the cream and bring almost to a boil.
  • Reduce the heat to a medium and cook until the cream has reduced by half, about 8 minutes.
  • Purée with a hand held blender, in a blender or in food processor (be sure the top is vented to allow steam to escape so it doesn't blow off the lid) until smooth. Season with kosher salt and a few shakes of cayenne pepper to taste. Keep over low heat before serving.

2 -4 tablespoons all-purpose flour
2 -4 teaspoons canola oil or 2 -4 teaspoons olive oil
1 (16 ounce) can salmon, reserve liquid
1 cup instant mashed potatoes
1/4 cup onion, grated or diced
2 teaspoons lemon juice
1/4 teaspoon ground black pepper
2 large eggs
2 tablespoons butter
2 tablespoons all-purpose flour
1/2 teaspoon dried dill weed
1/2 teaspoon seasoning salt
3/4 cup milk (skim, 2% or whole)
1 (8 ounce) package frozen green peas

Steps:

  • PATTIES: Drain liquid from salmon and reserve for sauce.
  • Remove bones and skin, and flake salmon.
  • Mix all patty ingredients together.
  • Form into 4 patties.
  • Dip both sides in flour.
  • In frying pan, heat oil and fry patties over medium heat until lightly browned on both sides- about 10 minutes.
  • SAUCE: While patties are cooking, place peas in colander and rinse with hot water to defrost.
  • Drain In saucepan or skillet, melt butter; with whisk, stir in flour.
  • Gradually whisk in 1/4 cup reserved salmon liquid and milk, whisking to form a creamy sauce.
  • Add dill, salt and pepper, stirring constantly over medium heat until mixture gently boils and thickens.
  • Stir in the pea and cook 30 seconds to warm.
  • Do not cook peas.
  • Place patties on individual plates and spoon the sauce over.
  • ***Note: If you prefer, you can place the salmon mixture in 4 greased muffin cups and bake at 350 degrees for 25-30 minutes.
  • If using this method, omit the first two recipe ingredients (oil and flour).
  • VARIATION: You can substitute lightly steamed fresh asparagus for the peas.
  • If using asparagus, do not put in sauce.
  • Place asparagus over salmon patties and spoon sauce over both.

l large can of boneless pink salmon ( or 3 small cans)
8-10 crushed townhouse crackers (or crackers of your choice)
2 large eggs beaten
2 tbs salad dressing or mayo ( your choice)
3 tbs milk
1 tbs lemon juice
dash or two of dillweed (optional)
dash or two of garlic powder
salt/pepper to taste or diet
sauce: 1 can of condensed cream of mushroom or celery soup with 2/3 can of milk
optional topping: 1/4 cheese slice ( of your choice)

Steps:

  • 1. Begin by adding salmon in large bowl and breaking up with fork until fine . Add all ingredients one by one mixing well.
  • 2. Form 5 patties
  • 3. Add 3 tbs cooking oil to skillet .. once hot .. add patties ... fry until both side are a nice crisp brown .. remove from skillet .. set aside.
  • 4. In separate pan add can of cream of celery or mushroom soup using only 2/3 can of milk .. heat until soup begins to bubble .. turn off heat. Spoon over patties .
  • 5. Optional: lay 1/4 cheese slice over hot patties.

1 small garlic clove, minced
1-1/2 teaspoons lemon juice

4 frozen salmon fillets (4 ounces each), thawed
1/2 teaspoon salt

Steps:

  • In a small bowl, mix the first seven ingredients. Refrigerate until serving., Preheat oven to 350°. Sprinkle salmon with salt and pepper. Bake until fish just begins to flake easily with a fork, 6-8 minutes. Cool slightly; remove skin if necessary. In a small bowl, combine eggs, bread crumbs, green onions, garlic and salt. Flake salmon; add to bread crumb mixture, mixing thoroughly. Shape into twelve 2-1/2-in. patties. Refrigerate, covered, 30 minutes., In a large skillet, heat oil over medium-high heat. 10 -15 saltine crackers
1 egg
2 tablespoons butter
2 tablespoons flour
1/4 teaspoon salt
1 cup milk

Steps:

  • Dump salmon into bowl. Pick out as many hard pieces of round bone as possible.(bone is edible i prefer them gone!) add egg, crackers. Mix well with hands. Heat up fry pan with oil.
