1 (15 ounce) container ricotta cheese
1 cup cheese (mozzarella, cheddar, swiss, your choice)
1/4 teaspoon oregano
3 cloves garlic, minced
1 lb pizza dough, prepared fresh or tube of purchased
bell peppers or olive (etc)

Steps:

  • Line large colander with coffee filters or cheesecloth and place in large bowl.
  • Add ricotta cheese, drain 30 minutes.
  • This step can be skipped although it may cause your calzone to be a bit moist and watery in the middle.
  • Mix ricotta in bowl with other cheese (s), organo, garlic, and season with salt and pepper.
  • Place dough onto lightly floured surface.
  • Divide into 2 or 4 pieces depending on how big you want your calzones.
  • Shape each into ball into a circle.
  • Divide and spread cheese mixture on the dough.
  • Divide other fillings and place on top of cheeses.
  • Fold circles in half and press edges with tines of a fork.
  • Arrange calzones on pizza stone or pan.
  • Prick top with fork.
  • Bake 18-20 minutes or until lightly browned.
  • Serve with side of pizza sauce.

One of my favorite foods is Calzones. These Mini Calzones are so versatile. You can stuff them with anything that your family might like. This is my first time trying them. 1 can(s) (16.3 oz) pillsbury® grands!® refrigerated biscuits
1/2 c pizza sauce (marinara sauce)
1 c turkey pepperoni or sausage
1 c shredded cheese (mozzarella)
1 Tbsp parmesan cheese
1 tsp garlic salt
any other ingrediants that you would like
1 egg, mixed with 1 tbsp water for eggwash

Steps:

  • 1. Preheat oven 375°F. If you are going to use sausage instead of pepperoni, be sure to brown up the sausage first.
  • 2. Roll out the biscuits on a lightly floured surface using a rolling pin until they are twice the size
  • 3. Put about 1/2 teaspoon of Pizza Sauce on one half, Add 2 tablespoons of Cheese and a couple pieces of pepperoni or 2 tablespoons of Sausage. Keep everything away from the edges.
  • 4. Using your finger or pastry brush edge with egg wash, fold biscuit over and lightly pressed the tines of the fork into the edges to seal
  • 5. Put on a baking sheet covered in Parchment paper. Brush egg wash on the top and sprinkle with parmesan cheese and garlic salt.** ** I didn't do this part this time, but plan to next time**
  • 6. Bake for 12-15 minutes until golden brown. Let sit for a few minutes. Then serve with remainder of warmed marinara sauce.
