I got this recipe from another Army wife more than 15 years ago. Everyone who has ever had it loves it. It always comes out moist. The icing is thin so I keep in the frig to firm it up and the cake still stays moist. Also good with whole wheat flour. I like using organic ingredients, and real butter as much as possible, but...

- 1. Mix dry ingredients in a bowl.
- 2. Add slightly beaten eggs, pumpkin and oil. Mix well.
- 3. Bake in a greased jellyroll pan (15.5 x 10.5 x1.5) at 350 degrees for 25 minutes.
- 4. Frosting: Blend cream cheese with butter, milk, vanilla and powdered sugar. Frost cake when cool. Cut into squares as desired.
EASY PUMPKIN PIE BARS
These pumpkin pie bars taste like pumpkin pie, but are so much easier because you don't need to bother with the pie crust. The yellow cake mix does all the work.

- Preheat oven to 350 degrees F (175 degrees C).
- Beat eggs in a large bowl. Whisk sugar, cinnamon, salt, ginger, and cloves together in a separate bowl. Stir sugar mixture and pumpkin into eggs until completely incorporated.
- Gradually stir evaporated milk into pumpkin mixture. Add 1 cup yellow cake mix to the pumpkin mixture and stir to remove any lumps. Pour mixture into a 9x13-inch baking dish. Sprinkle remaining yellow cake mix over the top and drizzle butter over the cake mix.
- Bake in the preheated oven until set, about 1 hour. Cool to room temperature and cut into bars. Top with whipped topping.

QUICK AND EASY PUMPKIN PIE BARS
I generally bake from scratch, but I ran across this recipe that uses a yellow cake mix that is fabulous. It makes a beautiful three-layer bar that is good either with or without the whipped cream.

Steps:
- Combine cake mix from box, melted butter and one of the eggs; beat until combined.
- Set aside one cup of the cake-mix mixture.
- Spread remaining cake mix mixture in an ungreased 13x9-inch baking pan.
- Press to form an even crust.
- In medium mixing bowl, beat together the remaining eggs, the pumpkin, evaporated milk, brown sugar and the 2 1/2 teaspoons pumpkin pie spice.
- Pour the pumpkin mixture over crust in prepared pan.
- Combine the reserved cake-mix mixture, the sugar, the 2 tablespoons softened butter and the cinnamon.
- Dot evenly over the pumpkin mixture.
- Bake in a 350° oven for 45 to 50 minutes or until done when tested with toothpick.
- Cool in pan on wire rack.
- Cut into 16 squares and then into triangles.
- Serve with whipped cream with additional pumpkin pie spice sprinkled on top.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8-inch square baking dish.

- Preheat oven to 350°F.
- In a large mixer bowl on low speed, combine cake mix, 1 egg, margarine and 2 tsp pumpkin pie spice until crumbly.
- Press onto bottom of 15x10 inch baking pan.
- In large mixer bowl, beat cream cheese until fluffy.
- Gradually beat in sweetened condensed milk, 2 eggs, pumpkin, 2 tsp pumpkin pie spice and salt; mix well.

EASY PUMPKIN CHEESECAKE BARS
I am always looking for easy desserts to make for our pot luck dinners at work. I created this recipe from ingredients I had on hand. My co-workers loved them.

- 1. Heat oven to 350. Stir cake mix, 1 tsp. cinnamon, 1/4 tsp. cloves and 1 tsp. ginger together. Melt butter and add to dry mix. Take out about a third of the mixture (set aside) and form a crust with the rest in a 13 X 9" cake pan.
- 2. Follow the pumpkin pie directions on the can of pumpkin using the eggs, evaporated milk, 1 cup of sugar and the remaining spices. Pour the mixture in the cake pan.
- 3. Mix together the cream cheese and 1/2 cup sugar until well blended. Drop chunks of cream cheese and chunks of the reserved cake mix in the pumpkin batter. Sprinkle the mini cinnamon chips over the whole thing. Bake for approximately 90 minutes or until a toothpick comes out clean, Cool and cut into 12-16 bars.
