6 medium potatoes, peeled and cut into 1/2-inch cubes
3/4 cup crushed potato chips, divided
1/2 cup chopped onion
2 tablespoons butter, melted
3/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large bowl, combine the potatoes, 1/2 cup of potato chips, onion, butter, salt and pepper; toss to combine. , Transfer to a greased shallow 2-qt. baking dish. Sprinkle with remaining potato chips. Bake, uncovered, at 350° for 40-50 minutes or until potatoes are tender.

7 unpeeled medium potatoes (about 2 pounds)
2 quarts ice water
5 teaspoons salt
2 teaspoons garlic powder
1-1/2 teaspoons celery salt
1-1/2 teaspoons pepper
Oil for deep-fat frying

Steps:

  • Using a vegetable peeler or metal cheese slicer, cut potatoes into very thin slices. Place in a large bowl; add ice water and salt. Soak for 30 minutes., Drain potatoes; place on paper towels and pat dry. In a small bowl, combine the garlic powder, celery salt and pepper; set aside. , In a cast-iron or other heavy skillet, heat 1-1/2 in. oil to 375°. 3 pounds cooked boneless chicken breasts
2 tablespoons finely minced onion
2 tablespoons lemon juice
1 cup chopped celery
1 cup reduced-fat mayonnaise
8 ounces sour cream
1 (8-ounce) can sliced water chestnuts
1 (10.5-ounce) can cream of chicken soup
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
Crushed potato chips, for garnish
1 sprinkle paprika

Steps:

  • Gather the ingredients. Preheat the oven to 350 F.
  • Butter a 2- to 2 1/2-quart casserole dish.
