HAM FRIED RICE
Easy Ham Fried Rice made with leftover rice and thrown together in less than 20 minutes!

Steps:
- Leftover cooked and cooled rice works best, and could be made earlier in the day and refrigerated until cold. Use wet fingers to separate the rice grains.
- Heat 1 Tablespoon of oil in a wok or frying pan. Beat the eggs in a small bowl and add to the pan when the oil is hot.
- Stir gently with a wooden spoon just until cooked. Transfer to a bowl and set aside.
- Add another tablespoon of oil to the pan. Add peas, carrots and ham and saute for several minutes. Remove to the bowl with the eggs.
- Add another tablespoon of oil to the pan over medium high heat. When the oil is hot, add the rice and toss every 30 seconds until it's lightly browned, about 5 minutes.
- Add the chicken stock, soy sauce and green onion and toss to combine. Return eggs and veggies to the pan.
- Add more soy sauce, to taste, if desired. Serve immediately.

HAM AND EGG FRIED RICE
Steps:
- Heat a wok or a small, heavy skillet over high heat. Add 1 1/2 tablespoons oil, swirl to coat the pan. Add eggs and scramble them. As soon as there is no more freely running egg, turn them out into a bowl and break them into small bits. They should be soft and a bit runny -- not brown.
- Heat the wok or a large skillet and add 2 tablespoon oil to coat. Add the rice and toss briskly to coat and separate each grain, about 2 to 3 minutes. Add the ham and peas. Toss to mix in the ingredients and allow the mixture to heat through, about 30 seconds. Return the eggs to the pan and toss to combine. Season with salt, scallions and peanuts, tossing another 5 to 10 seconds to let the eggs get hot.

This is a great recipe that your family will love and is easy to make. Cook the rice a day ahead or buy some from a local Asian restaurant. The quality of the ham used makes a big difference in the recipe results.

- Heat the vegetable oil in a skillet over medium-high heat. Cook the green onions in the oil for 1 minute. Add the ham, eggs, and the peas and carrot blend to the oil. Cook and stir until the egg is completely cooked. Add the rice and bean sprouts to the egg mixture and stir continually until the rice is heated completely through. Remove from heat; season with salt, pepper, and soy sauce.

EASY HAM FRIED RICE
This inst your traditional fried rice, but it is a great recipe, using another recipe that is posted on here for soy sauce, Recipe #111373, which I used for low sodium content. That is probably why it doesn't taste like most fried rice, because soy sauce has A LOT of salt in it. This recipe makes a lot!

Steps:
- Put 3 tbs oil in a large pan and heat up.
- Once heated add in cold rice and let sizzle and brown, stirring occasionally. This usually takes about 10 minutes.
- Once done add in the rest of the oil, onion, garlic, carrot, peas, and ham, mixing it all in together and letting this cook for 5 minutes.
- Then push rice to the side of pan and drop in the eggs and scramble them, making sure the pieces are small.
- Once eggs are done, incorporate them into the rest of the fried rice and add in the soy sauce, mixing well.
- Let cook for another 5 minutes, and serve.
