This easy peanut butter cookie will triple your pleasure with peanuts, peanut butter chips and peanut butter cups all together in one cookie cup. Perfect for your holiday cookie exchange.

1 pouch (1 lb 1.5 oz) Betty Crocker™ peanut butter cookie mix
Water, vegetable oil and egg called for on cookie mix package
1/4 cup chopped cocktail peanuts
1/4 cup peanut butter chips
1 1/2 tablespoons coarse sparkling sugar
36 Reese's miniatures peanut butter cups, unwrapped

Steps:

  • Heat oven to 375°F. Place mini paper baking cup in each of 36 mini muffin cups.
  • In large bowl, stir cookie mix, water, oil and egg until soft dough forms. Stir in peanuts and peanut butter chips.
  • Shape dough into 1-inch balls. Dip top half of each ball into sugar. Place one ball, sugar side up, into each muffin cup.
  • Bake 8 to 10 minutes or until edges are light golden brown. Immediately press 1 peanut butter cup into center of each cookie. Cool in pan 5 minutes. Remove to cooling rack to cool completely.

4 ounces white chocolate, chopped
1/2 cup smooth peanut butter
12 ounces semisweet or bittersweet chocolate, chopped
2 tablespoons unsalted roasted peanuts, chopped

Steps:

  • Line two 12-cup mini muffin pans with paper liners; set aside. In a microwave-safe bowl, combine white chocolate and peanut butter. Microwave, until almost melted, 1 to 1 1/2 minutes, stirring halfway through. Set aside to cool slightly.
  • Meanwhile, place semisweet chocolate in another microwave-safe bowl. Microwave, stirring once or twice, until almost melted, 2 to 3 minutes.
  • Dividing evenly, use a spoon to layer semisweet chocolate and peanut-butter mixture into liners, beginning and ending with chocolate; sprinkle with peanuts. Place muffin pans in freezer until peanut butter cups are firm, about 15 minutes. Bring to room temperature before serving.

As a child; my Grandmother Taylor would sit me on a stool or on her work area and let me "help" her make cookies,pies and cakes.. SHE is the one that gave me a LOVE for cooking.. This recipe was one I got from her cookbook, one of her many, and have tried these many times.. My family loves these.. Chocolate and Peanut butter....

11 1/2 oz package milk chocolate chips, divided
3 Tbsp vegetable shortening, divided
1 1/2 c confectioners' sugar
1 c creamy peanut butter
1/4 c (1/2 stick) butter, softened

Steps:

  • 1. Line a 12-cup muffin tin with paper baking cups. In a small saucepan, melt 1-1/4 cups chocolate chips and 2 tablespoons shortening over low heat, stirring just until mixture is smooth. Allow to cool slightly; mixture should still be pourable.
  • 2. Starting halfway up each paper cup, spoon about 2 teaspoons mixture over inside of cups, completely covering bottom half of each cup.
  • 3. Chill cups about 30 minutes, until firm. In a large bowl, combine confectioners' sugar, peanut butter, and butter; mix well. (Mixture will be dry.)
  • 4. Spoon evenly into the chocolate cups and press down firmly. Add remaining 3/4 cup chocolate chips and 1 tablespoon shortening to saucepan and melt over low heat, stirring just until mixture is smooth.
  • 5. Spoon equal amounts into cups, spreading to completely cover peanut butter mixture. Cover and chill at least 2 hours, or until firm.

How to make EASY 4 INGREDIENT HOMEMADE PEANUT BUTTER CUPS

1 cup dark chocolate chips (I use Ghirardelli® 60% Cacao Bittersweet Chocolate Chips)
2 tsp virgin coconut oil
½ cup crunchy natural peanut butter
2 tbsp powdered sugar (I use Trader Joe's Organic)

Steps:

  • Place the chocolate chips in a microwave-safe bowl and add the coconut oil. Microwave on high until melted, about 2 minutes, but be sure to stir it every 30 seconds.
  • Arrange 8 silicone baking cups on a baking sheet. Transfer 1 tablespoon of melted chocolate to each cup. Place the baking sheet in the freezer for 5 minutes.
  • In the bowl of mixer fitted with the paddle attachment, add the peanut butter and powdered sugar. Mix on high until combined, about 45 seconds. It should resemble a firm cookie dough that can be shaped by hand.
  • Form the peanut butter into 8 small flat disks. Place a disk in each cup over the bottom layer of chocolate.
  • Pour 1 tablespoon of the remaining chocolate over the peanut butter disks. Go back with any remaining chocolate and fill the cups so that the chocolate covers all of the peanut butter.
  • Gently tap the baking sheet on the countertop to smooth out the surface of the peanut butter cups and release any air bubbles. Freeze for 15 to 20 minutes, or until firm.
  • Peel away the baking cups and store in an airtight container in the refrigerator until ready to serve.

I saw this easy cookie recipe being made on television and it is basically 2 ingredients. Great if you need a hurry up dessert. What I chose to do with mine was have assorted varieties of the peanut Butter cup, because my daughter does not like dark chocolate, only the white Chocolate It is a quick dessert idea,. Reese's has a large bag at Wal Mart with the milk chocolate, white Chocolate, and Dark Chocolate in one package. The guest usually appreciate all three varieties as well. The recipe is easy, quick & simple.

1 package(s) (18-24) package miniature peanut butter cups
1 - pouch betty crocker peanut butter cookie mix
- mini muffin liners
- mini muffin tins
HOMEMADE VERSION
1 3/4 cup(s) all purpose flour
1/2 teaspoon(s) salt
1 teaspoon(s) baking soda
1 stick(s) butter (1/2 cup)
1/2 cup(s) granulated sugar
1/2 cup(s) peanut butter
1/2 cup(s) packed brown sugar
1 large egg (room temperature) beaten
2 teaspoon(s) vanilla extract
2 tablespoon(s) milk (i use evaporated)
40-44 - reeses peanut butter cups, unwrapped

Steps:

  • PREHEAT OVEN TO 350 DEGREES F. Unwrap the peanut butter cups and set aside in fridge till needed.Using miniature muffin tins, place one mini muffin liner in each muffin tin. Prepare cookie mix according to package directions, and then pinch off enough dough to make one and a half inch ball of dough, and fill each cup. Bake for 6 to 8 minutes.
  • Remove from oven and leave in pans. CAREFULLY press one peanut butter cup into each cookie. Remove from tin when they are almost cool. COOL COMPLETELY ON TRAY IN FRIDGE OR ON WIRE RACKS.
  • HOMEMADE SCRATCH VERSION: Preheat oven to 375 degrees F. Mix flour salt & baking soda in a medium bowl, stir to mix and set aside.Add butter, sugar, peanut butter& brown sugar in a separate bowl and cream together till light and fluffy. Then add in beaten egg, and beat well till mixed.Next add vanilla and milk, and beat again till mixed.
  • Add flour mixture, mix well, until soft and smooth texture. Pinch off enough dough to form into a small ball about the sizr of a tablespoon, & place in ungreased paper lined mini muffin cup. THERE IS NO NEED TO SPRAY PAPER CUPS, THERE IS ENOUGH BUTTER IN COOKIE DOUGH.
  • NOTE: I prefer to use the variety pac of Reeses Peanut Butter cups with the dark chocolate, milk chocolate & white chocolate. Then arrange the 3 varieties in a decorative pattern on platter where you can noticiably distinguish the different varieties. I find the large Variety pac at Wal Mart.
