Steps:
- Cook pasta according to package directions.
- Meanwhile, melt 2 tablespoons Country Crock® Spread in large nonstick skillet over medium heat. Add shallots and cook 3 minutes or until tender. Add garlic and cook 1 minute.
- Add vegetables and cook 3 minutes, stirring occasionally. Stir in broth and simmer 5 minutes or until vegetables are tender. Add remaining tablespoon Country Crock® Spread.
- Toss vegetable mixture with cooked pasta, mint or basil, and lemon zest. Sprinkle with Parmesan cheese, if desired.

- Cook and drain fettuccine as directed on package--except add broccoli and carrot 1 minute before fettuccini is done.
- While fettucine is cooking, heat oil in 10-inch nonstick skillet over medium-high heat. Cook chicken and garlic in oil 2 to 3 minutes, stirring frequently, until chicken is no longer pink in center; remove from heat.
- Stir dressing, cheese and basil into chicken. Toss with fettucine and vegetables.

Steps:
- Heat a large pot of water to boiling and throw in the pasta.
- Meanwhile, heat 1 tbsp of the oil in a small sauce pan and put in the white part of the spring onion.
- Fry for about 30 seconds and then add the tomatoes.
- Bring to a simmer and let cook for about 10 minutes, adding a spoonful of water if the tomatoes get too dry, until you have a sauce.
- While the tomatoes are simmering, you can lightly fry your veggies in the other tbsp of oil.
- When the tomatoes have cooked down, add the ricotta, milk and hot sauce.
- Blend with a hand blender to make the sauce smooth.
- Drain the pasta and toss with the sauce.
- Top with the veggies, green part of the spring onion and parmesan cheese if desired.
- Salt and pepper to taste.

- Cook pasta according to package directions. DO NOT DRAIN WATER. With a slotted spoon, remove pasta and transfer to bowl and set aside. Add broccoli florets to pasta water and bring to a boil. Reduce heat and simmer for 3-4 minutes until broccoli is just tender. Drain and set broccoli aside.
- In a large, deep skillet over medium-high heat olive oil. Add garlic and onion and cook until onions are translucent.
- Add boiled broccoli and sauté for 1 minute. Then add carrots, zucchini, squash, red bell pepper, salt and pepper - sauté until just tender, about 3-4 minutes.
- Add cherry tomatoes and peas and cook for another 1-2 minutes.
- Pour in white wine, add lemon zest and lemon juice. Let simmer for 3-4 minutes.
- Add pasta to the veggies and combine thoroughly. Pour into a large serving bowl.
- Add Parmesan cheese and parsley to the veggies and pasta, stirring gently. Add additional salt and pepper to taste. Serve warm or refrigerate and serve cold.

I dont know where I got this recipe, but this is how I always make my primavera. It is really easy. You can also add veggies and meats, like chicken or ham.
