4 chicken breasts
2 (10 ounce) cans mandarin oranges
2 tablespoons melted honey
1/2 teaspoon garlic powder
cornstarch, to thicken sauce (optional)

Steps:

  • Mix juice from Mandarin oranges, garlic powder and honey.
  • Place chicken breasts in casserole dish.
  • Pour orange/honey mixture over chicken.
  • Top with the mandarin oranges.
  • Bake uncovered at 350 for 40 minutes (turning after the first 20 minutes).
  • If desired: the chicken may be removed (kept warm) and the juices thickened with cornstarch.

1 (11 ounce) can mandarin oranges, drained
1 (8 ounce) can sliced water chestnuts, drained
4 teaspoons brown sugar
2 tablespoons white vinegar
1 tablespoon soy sauce
2 teaspoons cornstarch, dissolved in
1/4 cup water
1 1/2 cups chicken broth or 1 1/2 cups chicken stock
1 1/2 lbs boneless skinless chicken breasts, trimmed and fileted
cooked rice or Asian noodles

Steps:

  • In a small saucepan, combine first 6 ingredients and begin cooking over low heat, stirring occasionally.
  • Meanwhile, in a large skillet, bring the broth to a gentle simmer.
  • Place chicken in the skillet, cover and simmer over medium-low heat for 8-10 minutes or until cooked completely.
  • By now, the sauce should be clear and thickened and ready to spoon over the chicken.
  • Remove chicken from the poaching liquid and serve with sauce spooned over it and some rice or asian noodles on the side.

1 cup diced celery
2 tablespoons lemon juice
1 tablespoon finely chopped onion
3/4 cup mayonnaise
1 can (11 ounces) mandarin oranges, drained
1 cup seedless grapes, halved
1 teaspoon lemon-pepper seasoning
1/2 cup chopped pecans, toasted

Steps:

  • In a medium bowl, combine first eight ingredients; mix well. Cover and chill for 1-2 hours. Fold in pecans just before serving.

I really do understand that! I love fried chicken like the next person and then smothering it in a nice sweet and sour sauce kicks in all the primal brain functions for eating fat and sweet. Let me be brutally honest here, this is essentially deep fried chicken with a sweet and sour dipping sauce melted all over it.

1 1/2 pound(s) boneless, skinless chicken breast, cut into bite sized pieces ( i use about 3 breast)
1/3 cup(s) cornstarch
2 - eggs, beaten
1/4 cup(s) pineapple juice
1 teaspoon(s) soy sauce
1/3 cup(s) vinegar
3/4 cup(s) sugar
3 tablespoon(s) ketchup
1/2 teaspoon(s) salt

Steps:

  • Cut chicken into bite sized pieces. Beat eggs in a shallow bowl with a fork: set aside. Pour cornstarch into a shallow bowl and roll chicken in it. When coated, dip chicken into beaten eggs.
  • Heat just enough oil to cover the bottom of a non stick skillet on medium high heat. Place coated chicken pieces into the pan and heat until brown
  • In a medium sized mixing bowl, mix together the remaining ingredients: pineapple juice, soy sauce, vinegar, sugar, ketchup and salt. Pour on browned chicken. Simmer chicken with the lid covering only half of the pan to let the heat escape.
  • Simmer 20 to 30 minutes, stirring often, until sauce thickens. Serve with rice and ENJOY
