5 cups water
1 tablespoon cornstarch
2 tablespoons onion soup mix
1 tablespoon chicken soup powder
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon ketchup
2 slices green peppers, slice so that it is round circles
3 -4 slices green chili peppers, depending on how spicy it is
1 egg, beaten

Steps:

  • Heat water and cornstarch together.
  • stir till cornstarch is dissolved.
  • add all ingredients except for the the last three.
  • bring to a boil and reduce to a simmer.
  • cook about 10 min till onions in soup mix begin to soften.
  • add green pepper and chile.
  • continue to simmer another 5-10 minute.
  • while stirring soup slowly drizzle egg into soup (you may not need to use the whole egg).
  • continue to simmer until egg is no longer raw.
  • ENJOY!

140g dried wholewheat noodle
1 tbsp groundnut oil
2 tbsp grated ginger
1 medium red chilli , deseeded and finely chopped
4 skinless, boneless chicken thighs , chopped into small chunks
1 tbsp Shaohsing rice wine
700ml hot vegetable stock
4 chestnut mushrooms , sliced
1 tsp dark soy sauce
2 tbsp light soy sauce
2 tbsp rice vinegar
1 tbsp cornflour mixed with 2 tbsp cold water to make a paste
1 handful beansprouts
2 spring onions , sliced

Steps:

  • Bring a small pan of water to the boil and cook the noodles following pack instructions. Drain, rinse under cold running water to stop them cooking further, then drizzle over a little oil to prevent them sticking together. Divide between 2 deep bowls.
  • Heat a wok over high heat and add the rest of the oil. When it starts to smoke, add the ginger and chilli, then stir-fry for a few secs. Add the chicken and stir-fry for 2 mins. As the meat starts to turn brown, add the rice wine and cook for 3 mins more. Add the vegetable stock, bring to a simmer, then add the mushrooms. Season with the dark soy, light soy and rice vinegar.
  • Bring back to a simmer, then add the cornflour paste. Simmer and stir until thickened. Stir in the beansprouts and most of the spring onions, then ladle the soup over the noodles. Serve immediately, scattered with the remaining spring onions.

4 cups chicken broth
1 1/4 cups tomato juice
2 tablespoons soya sauce
1 (8 ounce) can bamboo shoots
1/2 cup chopped mushroom
1/4 cup straw mushroom (optional)
1/2 cup red pepper, slivered
1/2 teaspoon hot red pepper sauce
1/4 teaspoon red pepper flakes
1/4 cup green onion, sliced diagonally
1/2 cup cooked chicken, diced
3 tablespoons rice wine vinegar
1 1/2 tablespoons cornstarch
1/4 cup water
1 egg, beaten

Steps:

  • Combine broth, tomato juice, soya sauce, bamboo shoots, mushrooms, red pepper, hot pepper sauce and pepper flakes.
  • Bring to boil, reduce heat and simmer uncovered for 10 minutes.
  • Add vinegar, green onion and chicken.
  • Simmer for 1 minute longer.
  • Combine cornstarch with 1/4 cup water; mix well and stir into soup.
  • Simmer until mixture is slightly thickened.
  • Slowly add beaten egg in a continuous stream while soup is boiling.
  • Continue stirring until egg is cooked and looks like threads throughout the soup.
  • Serve.

4 c chicken stock
3 Tbsp soy sauce, dark
3/4 c coarsely chopped mushrooms
3/4 Tbsp chili garlic sauce (in the big red squeeze bottle)
1/4 c white vinegar
1/4 tsp white pepper
1/3 c bamboo shoots (canned, julienned)
3 oz tofu, firm (diced)
2 Tbsp cornstarch
2 Tbsp cold water
1 egg, beaten
2 green onions, chopped to the tops
1/2 tsp sesame oil

Steps:

  • 1. Bring the chicken stock to a simmer in a medium saucepan.
  • 2. Stir in soy sauce. Allow to simmer for 5 minutes.
  • 3. Add the mushrooms and chili sauce. Bring back to a gentle simmer.
  • 4. Add the white vinegar, pepper and bamboo shoots. Stir well and bring back to simmer.
  • 5. Gently stir in the diced tofu. Don't worry if it gets a little cloudy. Tofu can just behave a little differently every time.
  • 6. In a separate dish, stir the cornstarch into the cold water until smooth. Once smooth, add it to the soup and all to simmer for about 5 minutes, until thickened.
  • 7. To save dishes, rinse out the dish you used to mix the cornstarch, and use it to beat the egg until smooth. Slowly drizzle the egg mixture into the soup in streams. Once all egg is in soup, gently stir. All to heat for about 3 minutes.
  • 8. Add the green onions and sesame oil. Gently stir.
  • 9. Serve hot. If desired, add a couple of drops of chili sauce to top of soup, just prior to serving.

After scouring most of the well known food web sites for an 'easy' hot and sour soup, I found this one. It also got over 50 great reviews. I'm posting it here for safe-keeping. For the purists out there, this hot and sour soup may not be 'authentic', but 'french fries' aren't French either.

3 tablespoons soy sauce
1/4 cup cooked chicken, shredded or
1/4 cup cooked pork, shredded
1/2 cup mushroom, thinly sliced
1/2 tablespoon red chili paste
1/4 teaspoon white pepper
1/4 cup white vinegar
1/3 cup bamboo shoot, julienned
3 ounces firm tofu, cubed
2 tablespoons cornstarch
2 tablespoons water
1 egg, beaten
1/4 teaspoon sesame oil
2 green onions, sliced

Steps:

  • Bring chicken broth to a simmer in a 2 qt saucepan. Add soy sauce, chili paste, shredded meat and mushrooms. Simmer for 5 minutes.
  • Add white pepper, vinegar, bamboo shoots and Tofu. Simmer 5 minutes.
  • Combine cornstarch and water, mix well. Add to soup, stirring continuously until thickened. Simmer for 5 minutes.
  • Beat egg in a cup and gradually stir into soup mixture while using a fork to 'thread' the egg.
  • After 30 seconds add green onion and sesame oil, stir well and remove from heat. Serve hot.
  • Note: Chili paste, vinegar and sesame oil can be adjusted to taste. Can also use mushrooms of choice, or whatever is available. The original recipe calls for 'garlic chili paste', but 'Food's' computer would not recognize that.

Easy and delicious recipe for Chinese hot and sour soup. It can easily be made vegetarian by leaving off the chicken and substituting vegetable broth.

4 -6 dried Chinese mushrooms, soaked
4 ounces chicken
1 package firm tofu
2 ounces sliced bamboo shoots, drained
2 1/2 cups chicken stock
1 tablespoon rice wine or 1 tablespoon sherry wine
1 tablespoon light soy sauce
1 tablespoon rice vinegar
1/2 teaspoon white pepper
1 tablespoon cornstarch, mixed with water
salt (to taste)
hot pepper sauce (to taste)

Steps:

  • Squeeze all excess water from mushrooms and discard hard stalks.
  • Thinly shred the mushrooms, chicken, tofu and bamboo.
  • Bring the stock to a boil in a wok and add the shredded ingredients.
  • Bring back to a boil and simmer for about 1 minute.
  • Add seasonings to taste and bring back to the boil once more.
  • Thicken with cornstarch paste.
