EASY HOMEMADE TOMATO SOUP
This quick, easy tomato soup is made using canned tomatoes, chicken broth, onion, garlic and seasoned with Italian seasoning.

Steps:
- Melt butter in a stock pot or large saucepan over medium heat.
- Add onion and cook for 5-6 minutes, stirring occasionally.
- Add minced garlic and cook for 1-2 more minutes, stirring constantly to avoid burning.
- Add crushed tomatoes, chicken broth, salt, pepper and Italian Seasoning.
- Stir and bring to a simmer.
- Cover, reduce heat to low and cook for 30 minutes.
- Remove soup from heat and use an immersion blender (or pour into a regular blender, if desired) and blend until smooth and creamy.
- Serve warm.

- One can (15 ounces) diced or crushed tomatoes in a pot.
- Fill the tomato can with milk and add to the pot.
- 1 teaspoons baking soda.
- 2 TBS. sugar, or to taste.
- 1/2 teaspoons salt.
- 2 TBS. butter.
- Heat, eat and enjoy!
- DO NOT BOIL.

Steps:
- In a large pot, heat the olive oil over medium heat. Add the onions; sprinkle with a little salt and pepper, reduce heat to medium-low and cook onions for about 10 minutes or until golden, stirring frequently. Stir in the chicken broth, water, tomatoes, garlic, salt, pepper, and paprika. Increase heat to bring back to a boil; then reduce heat to medium-low and simmer for 15 minutes. In the meantime, fill a medium pot with water and 1 teaspoon salt; bring to a boil then add the orzo. Cook for exactly 6 minutes. (It will finish cooking in the soup.) Drain orzo in a strainer. Whisk the heavy cream into the soup until combined. Add the orzo and bring back to a simmer for 5-10 minutes. Serve hot with homemade croutons or a grilled cheese sandwich.
