This is a great recipe for those who love a great family fun meal . People that don't like quiche will like this . The potatoes are the crust so it tastes like a breakfast or meal in 1 slice *yum* a must try for anyone , I usually have this for dinner with salad. with this wonderful recipe you can make this vegetarian or whatever you want the filling is your choice. The cheeses are a must though the rest is your own choice for filling

Number Of Ingredients 12

3 cups hash browns, shredded
1/2 teaspoon garlic powder
1/4 teaspoon salt
1 cup butter, melted
1/2 cup monterey jack pepper cheese, shredded
1/2 cup swiss cheese, shredded
1 cup ham, cooked, diced
1/2 cup green onion, Chopped
2 eggs
1/2 cup whipping cream
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Press hash browns between paper towels to remove moisture.
  • Add seasoning to hash browns.
  • Grease a 9 inch pie plate with 2 tbsp butter.
  • Press hash browns onto the bottom and up the sides of the dish.
  • Drizzle with remaining butter.
  • Bake uncovered at 425°F for 20 to 25 minutes or until edges are brown.
  • Combine cheese and ham; spoon into crust.
  • Beat eggs with cream and seasoning pour over ham and cheese.
  • Reduce heat to 350°F and bake uncovered for 20 to 25 minutes or until knife inserted comes out clean.
  • Let stand for 10 minutes before cutting.
  • Makes 4 to 6 servings.

Ever feel like quiche but don't want to make the crust? Let potatoes do the work instead. I doubled this recipe for a brunch, and it's heavenly. Instead of hash browns I used potato rounds. Recipe courtesy of Beyond Burlap, Idaho's Famous Potato Recipes Junior League of Boise.

3 cups hash brown potatoes (country style, thawed)
1/4 cup butter, melted
1 cup ham, finely chopped
1 cup cheddar cheese, shredded
1/4 cup green bell pepper, chopped
1/4 cup green onion, chopped
3 eggs
1/2 cup milk
salt, to taste
pepper, to taste

Steps:

  • Form the potatoes into a shell in a quiche pan or pie plate.
  • Drizzle with the butter.
  • Bake at 425 for 25 minutes.
  • Remove from the oven. Decrease the oven temperature to 350 degrees.
  • Mix the ham, cheese, green pepper, and green onions in a bowl.
  • Spread over the potatoes.
  • Beat the eggs, milk, salt, and pepper in a bowl.
  • Pour over the ham mixture.
  • Bake for 30 minutes or until a knife inserted near the center comes out clean.
  • Let stand for 10 minutes before cutting.
