4 medium vine-ripened tomatoes, diced
1 (3 ounce) package crumbled feta cheese
¼ cup balsamic vinegar
1 (1 pound) fillet salmon
cooking spray
2 tablespoons lemon juice
salt and ground black pepper to taste
1 (12 ounce) package mixed salad greens

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Combine tomatoes, feta, and balsamic vinegar in a bowl. Refrigerate salad until ready to use.
  • Place salmon onto a sheet of aluminum foil that has been coated with cooking spray. Pour lemon juice onto fish and season with salt and pepper. Fold foil up to make a packet.
  • Cook salmon on the preheated grill until it flakes easily with a fork, about 25 minutes.
  • Place salmon on top of salad mix and top with tomato-feta mixture. Serve.

3 tablespoons packed dark brown sugar
4 teaspoons prepared chinese-style hot mustard or 4 teaspoons Dijon mustard
1 tablespoon soy sauce
1 teaspoon rice vinegar
2 (8 ounce) salmon steaks (about 3/4-inch thick)

Steps:

  • Whisk together first three ingredients.
  • Transfer 1 tablespoon glaze to small bowl; mix in rice vinegar and set aside.
  • Brush 1 side of salmon steaks generously with half of glaze in medium bowl and place salmon steaks, glazed side down, onto barbecue.
  • Grill until glaze is slightly charred, about 4 minutes.
  • Brush top side of salmon steaks with remaining glaze in medium bowl.
  • Turn salmon over and grill until second side is slightly charred and salmon is just opaque in center, about 5 minutes longer.
  • Transfer salmon to plates and drizzle reserved glaze in small bowl over salmon and serve.

3 tablespoons brown sugar
1 tablespoon mustard powder

Steps:

  • In a bowl mix/whisk together soy sauce, brown sugar and mustard powder.
  • Place the salmon steaks in a glass dish (I use an 8x8-inch glass baking dish).
  • Pour the marinade over the salmon.
  • Cover with plastic wrap, and refrigerate for minimum 1-1/2 hours, turning the steaks occasionally.

4 medium salmon fillets or steaks (preferably fresh wild caught)
MARINADE:
4 Tbsp thai sweet chili sauce (bottled or homemade)
1 Tbsp freshly squeezed lime juice and zest
1 Tbsp fish sauce (or substitute 1 extra tablespoon soy sauce)
3 Tbsp soy sauce
1/4 c fresh cilantro, chopped
1/4 tsp freshly ground black pepper
4 clove garlic, minced
COCONUT SAMBAL SAUCE:
1 c good-quality un-sweetened coconut milk
2 small fresh red chilies, minced or 3/4 teaspoon dried chili flakes
1 small thumb-size piece galangal or ginger, grated
1-1/2 tsp fresh lime juice
1 Tbsp asian fish sauce or 1-1/2 tablespoons soy sauce
1 Tbsp brown sugar (or to taste)

Steps:

  • 1. MAKE MARINADE: Combine all marinade ingredients in a bowl.
  • 2. Rinse and pat dry the salmon fillets or steaks. Leave the skin on. Place them in a long flat-bottomed dish and pour the marinade over. Turn the salmon several times in the marinade. Allow to marinate in the refrigerator for 10 to 15 minutes.
  • 3. HEAT UP THE GRILL: Prepare the grill by brushing with a little vegetable oil to prevent sticking.
  • 4. MAKE COCONUT SAMBAL: Stir all the sauce ingredients together in a bowl until the sugar has dissolved. Taste-test for salt and sweetness. Add more fish or soy sauce if not salty enough, more sugar if too sour, add more chili if not spicy enough. If too spicy, add more coconut milk. Set aside.
  • 5. GRILL THE SALMON: Allow it to cook at least 2 minutes before turning. Baste with some of the left-over marinade. Salmon is cooked when light pink in color. Do not overcook !
  • 6. Serve the grilled salmon with plain white rice and Coconut Sambal on the side.

¼ cup diced onion
½ cup chopped yellow bell pepper
1 tablespoon reduced-fat cream cheese
6 ounces cooked salmon, flaked into bite-sized pieces
6 tablespoons skim milk
1 teaspoon chopped fresh dill, or to taste
½ lemon, sliced

Steps:

  • Bring a large pot of lightly salted water to a boil; cook linguine at a boil until tender yet firm to the bite, about 11 minutes; drain and transfer linguine to a serving bowl.
  • Heat butter and olive oil in a saucepan over medium-low heat until bubbling; cook and stir onion and yellow bell pepper in the bubbling butter mixture until softened, 5 to 10 minutes. 6 orange slices
6 ounces salmon fillets, with skin
12 tablespoons extra virgin olive oil, divided
salt (to taste)
ground black pepper
1 cup chopped fresh basil
1 cup chopped of fresh mint

Steps:

  • Prepare medium fire in grill.
  • Brush both sides of orange slices and salmon with 2 Tbsp oil. Season salmon with salt and pepper to taste.

A delicious dish that is perfect cooked on the griddle or the barbecue. Our easy grilled salmon recipe uses salty anchovies, citrussy lemon and garlic lentils

4 lemons
16 salted anchovies , rinsed, filleted and dried
extra-virgin olive oil , for drizzling
8 tbsp capers , well rinsed
6 tbsp finely chopped fresh flat leaf parsley
1 side of wild salmon , from a 3.5kg/7lb 8oz fish, cut into 8, 175/6oz portions
300g small brown lentils , such as Castelluccio or Puy
2 garlic cloves , peeled
2 sprigs of sage (8-10 leaves)
6 tbsp extra-virgin olive oil

Steps:

  • Get the lentils ready first. Tip them into a small saucepan, cover with water and add the garlic and sage. Simmer gently for 15-20 minutes until tender. Drain, discard garlic and sage, season with salt and pepper. Stir in olive oil and set aside.
  • Squeeze the juice of one lemon over anchovies in a bowl, add freshly ground black pepper and drizzle with olive oil. Mix capers with the parsley in another bowl. You can get to here several hours in advance.
  • Preheat griddle pan until very hot. Season salmon on both sides, then sear, skin-side down (if pan is very hot the skin won't stick - this goes for grilling on a barbecue, too). Turn fish over when you see it change colour halfway, then sear the other side. This will take 2-3 minutes on each side for rare salmon, but cooking time may vary if pieces of fish are very thick.
  • To serve, reheat the lentils and put a large spoonful in the centre of warmed plates. Top with the salmon, skin-side up, then scatter the anchovies, capers and parsley on top. Serve with the remaining lemons.
